Using Concepts From Freire’S Pedagogy Of The Oppressed To Promote Colorectal Cancer Screening In An Urban Minority Population, Corey H. Brouse, Charles E. Basch, Randi L. Wolf

Journal of Health Disparities Research and Practice

This paper briefly introduces Freire’s philosophy of education, as well as examples of how this philosophy can be used in health education. Concepts from Freire’s work are highlighted along with how they are applicable to educating adults about colorectal cancer (CRC) screening, a health behavior that is less prevalent among poor and minority populations. Concepts highlighted in Freire’s writing can be directly applied to reducing disparities in health.

A Communication Strategy To Address Health Inequities In Municipal Settings, Christine Unson, Ben Tyson, Angela Funaiole, Comfort Agaba Apr 2012

A Communication Strategy To Address Health Inequities In Municipal Settings, Christine Unson, Ben Tyson, Angela Funaiole, Comfort Agaba

Journal of Health Disparities Research and Practice

This study assessed knowledge of health inequities, importance and benefits/barriers of addressing inequities, and ways of communicating information about inequities among municipal officials. Five focus groups (N=47) were conducted with officials from economic development, land use and housing, public safety, education, and environment departments. Discussions were recorded, transcribed and analyzed for key themes. Findings show that participants had an uneven understanding of the symptoms and causes of health inequities and identified limitations to participating in health equity initiatives and collaborating with local health departments. Recommendations are that a communication strategy to reduce health inequities should aim to increase awareness of …

Obesity And Food Insecurity Are Both Florida Public Health Issues – A Commentary, Judy E. Perkin

Florida Public Health Review

Florida faces an epidemic of overweight and obesity primarily due to an imbalance of caloric intake and physical activity modulated by multiple physiologic and cultural factors. The overweight and obesity issue notwithstand- ing, Florida’s public health efforts must also continue to address problems related to food insecurity and hunger. Although much of the focus concerning food insecurity has been at the individual or household level, there is also discussion among policymakers, food experts, and community members about the need to focus on food security at the community-level as well. This commentary examines Florida’s current food security issues.

Infectious Syphilis In Non-Hispanic Blacks And Hispanics In An Urban Std Clinic, Tai Hunte, Maria L. Alcaide, Ricardo Franco, Khaled Deeb, Jose G. Castro

Florida Public Health Review

Syphilis is a complex infectious disease caused by Treponema pallidum and acquired through sexual contact or vertical transmission. The natural history of syphilis is divided in primary, secondary, latent and tertiary stages. The syphilis epidemic has evolved over the years. National rates of syphilis infection dropped to the lowest in 2000 and have since increased in certain populations. Men who have sex with men (MSM) account for 60% of new infections and high rates occur in individuals with human immune deficiency virus co-infection. This study describes and compares the demographic characteristics, risk factors, and clinical presentation ofinfectious syphilis cases diagnosed …

Impact Of Hispanic Ethnic Concentration And Socioeconomic Status On Obesity Prevalence In Texas Counties, Jennifer J. Salinas, Elizabeth Rocha, Bassent Abdelbary, Jennifer L. Gay, Ken Sexton Apr 2012

Impact Of Hispanic Ethnic Concentration And Socioeconomic Status On Obesity Prevalence In Texas Counties, Jennifer J. Salinas, Elizabeth Rocha, Bassent Abdelbary, Jennifer L. Gay, Ken Sexton

Physician Assistant Studies Faculty Publications

The purpose of this study is to determine whether Hispanic ethnic concentration is associated with a higher prevalence of obesity and, if this relationship exists, whether it is affected by the socioeconomic environment. The study uses the Texas Behavioral Risk Factor Surveillance System (BRFSS) linked to 2000 census data to access the relationship between prevalence of obesity, Hispanic ethnic concentration, poverty and level of education at a county-level. The findings suggest that the association of Hispanic ethnic concentration and obesity varies by socioeconomic environment. Although little influence was observed for % poverty, the relationship between Hispanic ethnic concentration and obesity …

Response Surface Methodology Approach For The Optimization Of Lab Fermentation Using Vegetable Based Substrate, Amit Jaiswal, Nissreen Abu-Ghannam, Juan Valverde Apr 2012

Response Surface Methodology Approach For The Optimization Of Lab Fermentation Using Vegetable Based Substrate, Amit Jaiswal, Nissreen Abu-Ghannam, Juan Valverde

Conference papers

In the present studies, an attempt was made to optimize the conditions for the lactic acid bacteria (LAB) fermentation using Irish York cabbage (Brassica oleracea var. capitata alba subvar. conica) as a substrate. Prior to fermentation with Lactobacillus plantarum, York cabbage was blanched at 95°C for 12 min to inactivate surface microflora. To achieve an optimal fermentation condition which would result in higher release of phytochemicals and antioxidant capacity in the broth, Box-Behnken design integrating a desirability approach was used. The optimized factors (fermentation time 36h, solid/liquid ratio 0.25 g/ml and agitation rate 100 rpm) were used for …

Effect Of Solvents On The Extractability Of Phenolic Constituents And Their Antioxidant Capacity From Irish Seaweed, Gaurav Rajauria, Amit Jaiswal, Nissreen Abu-Ghannam Apr 2012

Effect Of Solvents On The Extractability Of Phenolic Constituents And Their Antioxidant Capacity From Irish Seaweed, Gaurav Rajauria, Amit Jaiswal, Nissreen Abu-Ghannam

Conference papers

Seaweeds are being used for human consumption in the Orient and help them live longer with low levels of hypertension, cancer and other ailments. The study aimed at extraction of principle constituents using a wide range of solvents and their mixtures on the basis of polarity, from Irish brown seaweeds namely Himanthalia elongata, Laminaria saccharina and Laminaria digitata. All the extracts were screened for total phenolic content (TPC) and their potential antioxidant capacity, using 2, 2´-diphenyl-1-picrylhydrazyl (DPPH) radical and ferric reducing antioxidant power (FRAP) assay. Among all the solvents tested, 60% methanolic extract and equi-volume mixture of chloroform, …

Bioactive Potential Of Marine And Terrestrial Vegetables: A Comparative Study, Amit Jaiswal, Gaurav Rajauria, Nissreen Abu-Ghannam Apr 2012

Bioactive Potential Of Marine And Terrestrial Vegetables: A Comparative Study, Amit Jaiswal, Gaurav Rajauria, Nissreen Abu-Ghannam

Conference papers

Polyphenols are extensively used in food, beverage, pharmaceuticals and nutraceutical industry for their positive effects on human health. Present study was designed to estimate the differences in polyphenols level and antioxidant capacity between marine and terrestrial vegetables. Considerable variations in the total phenolic content (TPC) and total flavonoid content (TFC) were observed, which ranges from 20.4 to 140.2 mg GAE/g of extracts (dw) for TPC and 15.4 to 50.4 mg QE/g of extracts (dw) for TFC. Furthermore, antioxidant capacity was confirmed by all the extracts. Results showed that marine vegetables had significantly higher polyphenols content and antioxidant property compared to …
