Nutritional Properties Of The Invasive Lionfish: A Delicious And Nutritious Approach For Controlling The Invasion, James A. Morris, Jr., Amber Thomas, Andrew L. Rhyne, Nancy Breen E. Breen, Lad Akins, Barry Nash

Lionfish, Pterois volitans and P. miles, are native to the Indo-Pacific and have recently invaded the Western Atlantic Ocean. Strategies for control of this invasion have included limited removal programs and promotion of lionfish consumption at both local and commercial scales. We demonstrate that lionfish meat contains higher levels of healthy n-3 fatty acids than some frequently consumed native marine fish species. Mean lionfish fillet yield was 30.5% of the total body wet weight, a value that is similar to that of some grouper and porgy species. A sensory evaluation indicated that lionfish meet the acceptability threshold of most consumers.

Using a comparative framework and based on interviews with the primary actors involved in the debate for and against humane farm animal standards in Ohio, this thesis examines the roles of special and public interest groups, bureaucrats, technocrats, and the public in the rulemaking process of the Ohio Livestock Care Standards Board. This study finds that the creation of the board as a policy solution was likely impossible without the efforts of a policy entrepreneur and a "fixer;" that the board's relevance relies on a problem-setting approach to developing standards that includes a multitude of interests; and that continued public …

The purpose of this study was to examine the magnitude of sex and racial differences in faking behavior, specifically socially desirable responding, in a large (N = 295,517), applied sample. Results indicated that females are engaging in more intentional socially desirable responding, whereas males are engaging in more inadvertent socially desirable responding. However, these differences are not likely to influence selection. Caucasians are displaying more intentional socially desirable responding than African Americans (d = 0.55), Hispanics (d = 0.57), and Asian Americans (d = 0.29). The human-associated microbiota has been the focus of much current research, with the microbiota inhabiting the gastrointestinal tract of particular interest. These organisms play many roles in human health and well-being. However, shifts in the composition of the intestinal microbiota have been associated with diseases such as irritable bowel syndrome, inflammatory bowel disease, and colon cancer. Several recent studies have reported on the distal gut microbiota composition of healthy adults and those with IBS, while there is a lack of studies devoted to adolescents. Protein kinase inhibition by staurosporine causes apoptotic volume decrease involving potassium (K) channels in immortalized human B3 lens epithelial cells (LECs). Here, the effect of two pro-apoptotic protein kinase C (PKC) inhibitors [12-O-tetradecanoyl-phorbol-13-acetate (TPA) and chelerythrine (CET)] were studied on membrane K transport in a fetal human LEC line (FHL124) by western blotting, immunofluorescence, ion flux, ATP, apoptosis, and biotinylation assays. Long term TPA exposure (0-6 h) inhibited 75% of Na-K-2Cl cotransport (NKCC). In contrast, short term (0-20 min) exposure to 50 μM CET reduced Na/K pump and NKCC by >90% and >70%, respectively, without retrieval from the membrane into …

Emissions from coal-fired utilities are the major anthropogenic source of mercury (Hg) to the atmosphere. Because emitted Hg may be deposited near the source, there are concerns on levels of toxic monomethylmercury (MeHg) in local biota. We investigated the potential impact of a large Hg-emitting (> 500 kg Hg y-1) coal-fired power station on MeHg levels in mosquitoes near the Conesville power station in central Ohio. Mosquitoes were sampled with CO2-baited traps at 23 locations within a 60 km radius of the utility and at three reference sites distant from Hg combustion sources. We describe a methodology that combines urinary metabolomics with a tissue-specific stressor administration to enhance assessment of tissue function. Kidney function in rats was mildly compromised with a sub-acute dose of D-serine and stressed with furosemide. NMR-based metabolomics analyses showed no detectable effects due to D-serine alone; but furosemide or D-serine + furosemide groups, classified separately from each other, and from control. Furosemide alone caused a ca. 2-fold increase in glucose, lactate, choline, and a 30% decrease in TCA intermediates (p≤0.05). D-serine suppressed these effects and produced a 1.7-fold increase in a p-phenolic acid-derivative of tyrosine (PAdY) relative to control …

One factor used to determine wetland mitigation success is the establishment of native wetland plant species. Although mycorrhizal associations are known to be present in 70 to 95% of all plant species and have been linked to seedling establishment as well as nutrient and carbon flux within plant communities, the presence or absence of mycorrhizal fungi are not assessed or addressed during wetland mitigation work. Three experiments were devised to examine the effects of mycorrhizal fungi on the germination and growth of native wetland plant species in soils and field sites from natural, restored, and created wetlands.

The present study examined the lived experience of adult female cancer survivors to discover common protective resilience factors that enabled them to cope with their cancer experience and to identify potential barriers to resilience. Nine female cancer survivors, age 18 years and older whose cancer was in remission or currently active, who were members of a cancer support group and who volunteered to participate in this study were interviewed. They were asked open-ended questions regarding the biological, social, psychological and spiritual factors that helped them to cope with, heal and thrive with their cancer experience. Available research has shown a relationship between emotional intelligence (EI) and health behaviors. However, the link between EI and eating behaviors has not been well explained. Thus, the purpose of this study was to investigate the correlations among EI, eating behaviors, as measured by the Dutch Eating Behavior Questionnaire (DEBQ), and body mass index (BMI) in college students. One hundred and eighty four students (118 (64%) female, 66 (36%) male, average BMI = 23.8kg/m2) were recruited to complete an online survey. Practice and knowledge of upper‐level human nutrition and dietetics students (juniors and seniors, n=96) attending a midwestern university were compared to their comprehension and application of the Scope of Dietetics Practice. The sample consisted of 96 students, primarily (72%) in the 21 – 23 age category; females made up 83% and males comprised the remaining 17% of the sample. In this sample, 70% of the participants reported dietetics as their current major, and 30% stated that their major was human nutrition. This pilot study explored the potential role of food on young people’s mental health. Specifically, the aim was to determine if a relationship exists between extra food intake and depressive symptoms in adolescents’ age 12-17 years. It has been documented that mental health problems in young people result from a complex interaction of risk and protective factors. Eating behaviours and food intake has been investigated in early adolescence (age 10-14), however the specific contribution of extra food on depressive symptoms in mid adolescence has not been determined.

Defatted meal of hybrid hazelnuts may have potential food and value-added industrial applications. The proximate composition, mineral elements, amino acid profile and anti-nutritional factors (total phenolics, tannins, condensed tannins and phytates) of defatted meals of ten Nebraska hybrid hazelnut genotypes were investigated. Excluding the amino acid profile, the nutritional and anti-nutritional compositions of the meals differed significantly, with high protein, carbohydrate, neutral and acid detergent fibre concentrations and energy value. Mineral concentrations were higher than those previously reported. K was the most abundant mineral element, followed by P, Ca and Mg. Background: Streptococcus thermophilus represents the only species among the streptococci that has “Generally Regarded As Safe” status and that plays an economically important role in the fermentation of yogurt and cheeses. We conducted comparative genome analysis of S. thermophilus LMD-9 to identify unique gene features as well as features that contribute to its adaptation to the dairy environment. In addition, we investigated the transcriptome response of LMD-9 during growth in milk in the presence of Lactobacillus delbrueckii ssp. bulgaricus, a companion culture in yogurt fermentation, and during lytic bacteriophage infection.

Grain processors would benefi t from information about the production environment and the infl uences of the sorghum [Sorghum bicolor (L.) Moench] hybrid on food-grade fl our properties. The objective of this study was to determine the effects of environment and hybrid on rapid-visco-analysis (RVA) fl our properties of commercially available food-grade sorghum. A randomized complete block experiment was planted in 12 environments, which included the 2004 and 2005 growing seasons and irrigated and dryland water regimes in eastern, central, and west central Nebraska, and a dryland, low-N environment in eastern Nebraska. Hybrid hazelnuts are a potential oilseed crop for food and value-added industrial applications, but they are vulnerable to mold contamination. Mold and mycotoxin contamination were investigated in three forms (whole nut, kernel, and ground meal) of Nebraska hybrid hazelnuts. The nut was the most contaminated form, followed by ground meal and kernel. Penicillium was the predominant genus isolated from all three forms, and Alternaria and Cladosporium also were prevalent. In spite of presence of several toxigenic molds, all tested samples were mycotoxin free.

Prebiotics are selectively fermented ingredients that allow specific changes in the gastrointestinal microbiota that confer health benefits to the host. However, the effects of prebiotics on the human gut microbiota are incomplete as most studies have relied on methods that fail to cover the breadth of the bacterial community. The goal of this research was to use high throughput multiplex community sequencing of 16S rDNA tags to gain a community wide perspective of the impact of prebiotic galactooligosaccharide (GOS) on the fecal microbiota of healthy human subjects. Buckwheat (Fagopyrum esculentum) is a commonly allergenic food especially in Asia where buckwheat is more commonly consumed. Wild buckwheat (Polygonum convolvulus, recently changed to Fallopia convolvulus) is an annual weed prevalent in grain-growing areas of the United States. Wild buckwheat is not closely related to edible buckwheat although the seeds do have some physical resemblance. A large shipment of wheat into Japan was halted by the discovery of the adventitious presence of wild buckwheat seeds over possible concerns for buckwheat-allergic consumers.
