Evelina (Nina) Cross received her PhD from Texas Woman’s University and then joined the faculty at Louisiana State University. While at LSU, she taught and directed the dietetic internship. Her research and many of her publications were in the area of school food service. In addition, she served three years as the first National Food Service Management Institute Scholar. During this time she worked with the research arm of the Institute to develop a financial model for school food service. Does Household Food Insecurity Affect Parental Characteristics And Child Behavior?: Evidence From The Panel Study Of Income Dynamics (Psid), Jin Huang, Karen M. Matta Oshima, Youngmi Kim

This study examines the link between household food insecurity and child behavior problems mediated through parental characteristics (parenting stress, parental warmth, psychological distress, and parent’s self-esteem) using two waves of data from the Child Development Supplement in the Panel Study of Income Dynamics. Analyses of fixedeffects models are conducted on a low-income sample of 416 children from 249 households. This study finds that the effects of food insecurity on child behavior problems are mediated by parenting stress. However, two robustness tests show different results from those of the fixed-effects models. This inconsistency suggests that the complicated relationship between household food …

The Effect Of Heavy Handrail Support On Blood Pressure Response In Normotensive Adults During Treadmill Walking, Kevin Brian Reid

Physiological and hemodynamic responses to handrail support during treadmill walking have shown a blunted response when compared to non-handrail support. The effects of treadmill walking, with the inclusion of “heavy” upper limb and torso activation through handrail support is yet unreported. The effect of “heavy” support through side handrail support (SHRS) and front console support (C) versus no handrail support (NHRS) treadmill walking was studied utilizing both slow/low (2.5 mph & 3% elevation) and high/fast (3.5 mph & 11% elevation) energy expenditure levels. This purpose of this paper is to explore the physical, emotional and societal issues women face as they transition to motherhood and the accompanying redefinition of self. Themes of acceptance of new roles and responsibilities, resolution of losses, adjusting marriage/partnership, renegotiation of relationships and professional standing are discussed. Women experiencing postpartum depression and anxiety appear to have difficulty navigating or adapting to the new maternal identity. This background paper describes important characteristics of the National School Lunch Program and the School Breakfast Program, reviews U.S. Department of Agriculture rules regarding the nutritional content of school meals, and examines compliance with current nutrition standards. A wide variety of food and beverage items are available in schools in addition to the school meals provided through the National School Lunch Program and School Breakfast Program. A long-standing source of controversy, the need for stronger federal restrictions on foods that compete with school meals is again under debate. This issue brief examines the availability and consumption of competitive foods, explores the regulation of these foods at the federal level, considers trends in state and local restrictions, and summarizes perceived barriers to improving the nutritional quality of competitive food options.

Purpose: The substantial impact of indoor air quality and environmental hazards in the home on one’s health has long been recognized in the field of public health. This cross-sectional study investigates the risk between home based hazards, specifically lead, and respiratory health in children. The objective of this study is to examine the extent to which children testing positive for blood lead exposure are at an increased risk for having poor respiratory health. These recent events of H1N1 flu outbreak illustrate the potential ramifications of infectious diseases on modern society and how society responds to these threats. This thesis addresses the specific case of avian influenza in U.S. poultry production. By building an expected utility maximization model for integrators contracting with growers of varying bio-secure levels, one can investigate the relationship between the bio-secure choice of the poultry industry and their production performance. The model is empiricized using the Phoon, Quek, and Huang (PQH) simulation technique to conduct numerical analysis. Grain sorghum provides energy-rich seeds for waterfowl. I conducted experiments in 22 sorghum fields in Arkansas, Mississippi, and Louisiana during falls 2006 – 2007 to evaluate abundance of ratoon grain (i.e., second crop after harvest), waste grain, and natural seeds. I also conducted surveys of wintering waterfowl in flooded croplands and moist-soil wetlands to evaluate if ducks and geese differentially used habitats. Fertilized plots in 2007 produced >4 times more ratoon grain (x = 219.57 ± 39.65 [SE] kg/ha) than other treatments. This thesis assesses climate change during the Hypsithermal Climatic Interval through the analysis of freshwater mussel remains from archaeological sites in Eastern North America. Modern climate data was used as a model to test the mosaic consequences of climate change. Freshwater mussels: can be used as indicators of precipitation by examining changes in overall size through time: larger mussels are found in larger streams, while smaller mussels are found in smaller streams. This study combines morphometric and isotopic data from archaeological freshwater mussels at Modoc Rock Shelter, Watson Brake, Plum Creek, Owens site, and Landerneau mounds to assess past climatic …

Breast and prostate cancer incidence and mortality have been steadily decreasing. Reasons for these reductions may be related to increased rates of cancer screening and other factors such as improvements in diet, including consumption of fruits and vegetables. We wanted to determine if individuals who get screened for breast and prostate cancer are more or less likely to consume adequate servings of fruit and vegetables. A cross-sectional study using the BRFSS survey was conducted. Individuals included in this study (n=26,222), were asked about their breast or prostate cancer screening history. Effects Of Various Fumigants And Alternative Processing Methods On The Safety, Volatile Composition, And Sensory Quality Of Dry Cured Ham, Ramandeep Kaur Sekhon

Randomized complete block designs with three replications were utilized to evaluate the effects of fumigation with sulfuryl fluoride (SF) (0, 12, 24, 36 and 72 mg/L), phosphine (PH3) (0, 200 and 1000 ppm at 48 hr), methyl bromide (MB) (0, 4, 8, 16, and 32 mg/L for 48 hr), carbon dioxide (CO2) (0, 60% at 48 hr and 60% at 96 hr) and ozone (O3) (0 ppm and 175 ppm for 48 hr) on the volatile flavor compound concentrations in dry cured ham. Fluoride and SF concentrations increased (P < 0.05) in dry cured hams as SF fumigation concentration increased, but all samples contained fluoride and SF concentrations below the legal limits of 20 and 0.01 ppm, respectively. Also, as phosphine fumigation concentration increased, the residual concentration of phosphine also increased in the hams (P < 0.05), but all samples contained levels that were lower than the legal limit of phosphine in stored food products (0.01 ppm). Minimal differences existed in the presence and concentration of aroma active compounds in fumigated hams when compared to the control. Triangle tests indicated that consumers could not discern (P > 0.75) between the control hams and the fumigated hams. This study …

Preservation of giant pandas, Ailuropoda melanoleuca, is a worldwide concern. This study was designed to examine dietary and reproductive challenges associated with panda management. Phytoestrogens are natural plant compounds that mimic estrogen and often negatively impact mammalian reproduction. Phytoestrogens in bamboo, the panda’s primary food source, is unknown. Here, estrogen radioimmuno- and receptor-binding assays revealed estrogenic activity in three species of Phyllostachys bamboo. These results present indirect evidence of phytoestrogenic mimics in bamboo, but their relevance is still unknown. The objective of this study was to evaluate the lighter fraction of DDGS as a possible feedstuff for cattle. To accomplish this, a digestion trial was performed to determine nutrient digestibility and crude protein retention by steers consuming the lighter fraction of DDGS. Steers received L, a diet containing the lighter fraction of DDGS, D, a diet containing whole DDGS, or C, a control diet. Steers receiving L consumed less DM than steers receiving D and C. This study addressed obesity of youth in a predominantly African-American school and was concerned with the implementation of a CVD intervention program, Project Health Curriculum, for high school students, focusing on early health promotion and support to children at risk of developing adult diseases. A health promotion program was implemented at a high school in Canton, Mississippi, to equip students with information to help reduce risk behaviors that could lead to health problems. An in vitro continuous culture rumen fermentation experiment was conducted to evaluate digestibility of annual ryegrass either fed alone or annual ryegrass supplemented with hay, corn, or soybean hulls. Nutrient disappearance of feedstuffs offered were not different (P > 0.05) as a percentage of the diet however there were differences (P < 0.05) in amounts of individual nutrients digested for each treatment. Ammonia-N concentrations of culture samples were less (P < 0.05) for vessels fed corn as a supplement however there was no difference (P > 0.05) among vessels fed either ryegrass alone or supplemented with hay or soybean hulls. This may indicate a more efficient use of available nutrients from annual ryegrass when corn was supplemented.

To better understand the facets of nutrient utilization, a series of in vivo and in vitro studies were undertaken to elucidate the effect of supplementation on utilization of moderate-quality bermudagrass hay and to identify mechanisms to evaluate the role of rumen bacterial populations on feedstuff utilization. A digestion trial was conducted using 6 ruminally cannulated steers receiving bermudagrass hay supplemented with soybean hulls (HULLS), cracked corn (CORN), or soybean hulls and cracked corn (MIX; 75% and 25%, respectively) in a 3x3 Latin Rectangle arrangement. Approximately 63 percent of the U.S. adults are overweight or obese, however all groups are not affected equally. Little research has observed the obese compared to the overweight. This study aims to examine how measures associated with health differentially influence overweight and obesity. Data from the 2007 BRFSS were analyzed using logistic regression to assess variations due to socioeconomic, demographic, and health risk measures on overweight and obesity. Variations were assessed by age groups and sex. Differences across the subgroups were tested.
