Lou Simoneaux spent twenty years traveling the world with her military family before returning to her home state of Louisiana and beginning a new career in school food service. She spent several years in the Panama Canal Zone and then moved to France. When her husband finally retired they returned to Lou’s hometown of Napoleonville, Louisiana, where she spent the next twenty-nine years providing healthy, nutritious meals to the children of Assumption Parish.

Background: The use of omega-3 fatty acids is a currently proven strategy for secondary prevention of heart disease. The prescription practices for this important nutraceutical is not currently known. It is imperative to assess the knowledge of cardiologists regarding the benefits of omega-3 fatty acids and to determine the frequency of its prescription. The aim of the study was to determine the practices and associations of dietary fish prescribing among cardiologists of Karachi and to assess their knowledge of fish oil supplementation and attitudes toward dietary practices. Social development refers to the integration of improvements in human welfare with economic development and widespread participation in the process and benefits of development. While the notion of social development provides a useful complement to economic-oriented development, it has been criticized as utopian, wide-ranging, and theoretically underdeveloped. After summarizing major conceptualizations of social development, this paper focuses on a particular social development issue -- investment in human development. Specifically, investment in human development refers to investments in basic needs such as nutrition, primary health care, and basic housing; and investments in human capital in the form of primary education and …

Mercury From Chlor-Alkali Plants: Measured Concentrations In Food Product Sugar, Renee Dufault, Blaise Leblanc, Roseanne Schnoll, Charles Cornett, Laura Schweitzer, David Wallinga, Jane Hightower, Lyn Patrick, Walter J. Lukiw

Mercury cell chlor-alkali products are used to produce thousands of other products including food ingredients such as citric acid, sodium benzoate, and high fructose corn syrup. High fructose corn syrup is used in food products to enhance shelf life. A pilot study was conducted to determine if high fructose corn syrup contains mercury, a toxic metal historically used as an anti-microbial. High fructose corn syrup samples were collected from three different manufacturers and analyzed for total mercury. The samples were found to contain levels of mercury ranging from below a detection limit of 0.005 to 0.570 micrograms mercury per gram …

"I Feel Fat" : How Do Therapists Help Recovering Female Anorectic Clients Overcome Body Image Issues?, Holly G. Light

This study was undertaken to explore how therapists help their adult, female anorectic clients (who are post-medical stabilization and have committed to some therapeutic level of treatment and recovery) overcome body image issues related to the pursuit of thinness prescribed by Western culture and the media. Through interviews with ten therapists who had extensive experience working with anorectic women in recovery, this exploratory study examined clinicians' experiences with clients' body image issues and chief complaints, their strategies for treating the body image disturbance in their clients, their perceptions of what factors help someone to fully recover and what the most …
