Food Science and Nutrition

Eat Smart. Play Hard™. San Luis Obispo!, a multi-component primary prevention program targeting low-income, Hispanic children 6-8 years, focuses on promoting healthy dietary and physical activity behaviors using an innovative child-adult buddy system approach. The child-adult buddies participate in multiple activities to increase their consumption of fruits and vegetables, and level of physical activity and decrease their consumption of sweetened beverages. The results of the pilot program show high program satisfaction and improvements in dietary and physical activity behaviors. Such programs provide an opportunity to establish and promote healthy behaviors among young children and ultimately prevent overweight development.

Mineral nutrition of beef cattle is one component of ruminant nutrition that most producers address by simply purchasing a commercial supplement for their herd. However, this practice, while generally effective, can be wasteful. In many cases, commercial mineral supplements are formulated to provide in excess of 100% of the nutrient requirements for many different minerals. However, at least a portion of the minerals required by beef cows are provided by the feeds the cows are consuming. The formulation of supplements to supply only what the animal needs may provide an opportunity for cost savings. This paper will describe the process …

The prescription of anaerobic exercise has recently been advocated for the management of diabetes; however exercise-induced signaling in diabetic muscle remains largely unexplored. Evidence from exercise studies in nondiabetics suggests that the extracellular-signal-regulated kinases (Erk1/2), p38, and c-JUN NH2-terminal kinase (Jnk) mitogen-activated protein kinases (MAPKs) are important regulators of muscle adaptation. Here, we compare the basal and the in situ contraction-induced phosphorylation of Erk1/2- p38- and Jnk-MAPK and their downstream targets (p90rsk and MAPKAP-K2) in the plantaris and soleus muscles of normal and obese (fa/fa) Zucker rats. Nutritional Quality Of Organic, Conventional, And Seasonally Grown Broccoli Using Vitamin C As A Marker, Shahla M. Wunderlich, Charles Feldman, Shannon Kane, Taraneh Hazhin

Department of Nutrition and Food Studies Scholarship and Creative Works

Organically labeled vegetables are considered by many consumers to be healthier than non-organic or 'conventional' varieties. However, whether the organic-labeled vegetables contain more nutrients is not clear. The purpose of this study is to examine the nutritional quality of broccoli using vitamin C, a fragile and abundant nutrient, in broccoli as a biomarker. The vitamin C content was assayed (2,6-dichlorophenolindophenol method) in broccoli samples obtained from supermarkets that are considered the point of consumer consumption. These samples were obtained during different seasons when the broccoli could be either harvested locally or shipped far distances. The findings indicate that vitamin C …

Changing Corporate Practices To Reduce Cancer Disparities, Nicholas Freudenberg, Sandro Galea, Marianne Fahs

Publications and Research

While reducing racial/ethnic and socioeconomic disparities in cancer mortality has been identified as a national goal, current policies are unlikely to achieve it. In order to advance the development of policies for the primary prevention of cancer and cancer disparities, we propose that the practices of the tobacco, alcohol, and food industries be considered as modifiable social determinants of health. We review evidence that the practices of these industries in product design, marketing, retail distribution, and pricing contribute to cancer risk behavior, incidence, and disparities, then examine public health strategies designed to reduce health-damaging practices of these industries and encourage …
