Mercury and other contaminants in coastal and open-ocean ecosystems are an issue of great concern globally and in the United States, where consumption of marine fish and shellfish is a major route of human exposure to methylmercury (MeHg). Farm to School programs promote partnerships between local farmers and school districts in which farmers can provide fresh organic produce for school meals and education about sustainable agriculture. A focus on local and organic foods has a variety of benefits that affect the environmental, health, and community. This study explores opportunities for Farm to School programs in Bloomington-Normal public schools, and concludes that a this type of program would be feasible in Normal, although there are quite a few barriers to overcome before implementation would be possible.

This is an inquiry that explores the cross-generational lived affects of educational, political, and public policies on my paternal family from 1899 to the present in Northern Mississippi and West Tennessee. It is an exploration of my family's history and my lived experience as the first person in the family to obtain an undergraduate degree, a graduate degree, and a doctorate, who has attempted to use education in a substantive way to break the cycle of generational poverty. Members of six generations of my family are the main characters in the stories collected. Using oral history, I document their experiences. …

Identifying the initial sugar sensing and response activating mechanisms in plants has been difficult due to the dual functions of sugars as nutrients and as signaling molecules. In this study, we have examined transcript expression and promoter features of different genes encoding proteins for actin remodeling that have been implicated as targets of plant glucose signaling. Using Reverse Transcription PCR analysis, we confirmed that expression of two actin-associated genes, actin depolymerizing factor 9 (ADF9) and actin related protein 8 (ARP8), are repressed following a short-term glucose treatment of Arabidopsis thaliana seedlings. The goal of any reproductive management system in cattle is to ensure that cows breed at the earliest opportune time and maintain their pregnancy to term. However, delayed resumption of postpartum ovarian cyclic activity in primiparous beef cows and pregnancy losses in dairy cows continue to impede progress in obtaining sound reproductive efficiency in these species. Grain sorghum (Sorghum bicolor L. Moench) is the fifth world leading cereal after maize, wheat, rice and barley. The crop can yield reasonably well under adverse conditions of low soil water and high temperature. A three year field study was conducted in a transect across Nebraska where annual mean precipitation ranges from 300 to 900 mm yr-1 to evaluate management practices to optimize yield potential under water limiting conditions. Loss in grain yield due to planting configurations ranged from 20 to 30% with skip-row configurations compared to conventional planting configuration (s0) at the site with greatest precipitation. The Difference Between Physical Activity And Nutrition Attitudes And Behaviors Among Maine High School Students, Alfred M. Sheehy, Jigna Dharod

A study was conducted to estimate physical activity and fruits and vegetable behaviors, perceptions, and attitude among Maine high school students (n = 765). Over half (57%) reported participating in physical activity for >40 minutes per day. Only 6% reported eating five or more servings of fruits and vegetables per day. However, nearly half of the students (49%) reported eating enough fruits and vegetables "Always/Most of the time." A significant positive relationship was found between environmental indicators and daily intake of fruits and vegetables. Results highlight the need to promote fruits and vegetables consumption among high school students.

Results are presented from a longitudinal study conducted during the Missouri Chestnut Roast Festival in 2003, 2004, and 2006 assessing participants' familiarity with and essential knowledge about chestnuts. Familiarity with chestnuts increased over time. Compared to first-time visitors, repeat visitors revealed an increase in frequency of consumption, familiarity with roasting chestnuts, and an increase in knowledge. The likelihood people would buy chestnuts more often and eat them roasted or in recipes also increased. Results demonstrate the positive impact of the event on participants' knowledge of, familiarity with, and interest in chestnuts. Thus, Extension professionals can use community festivals as an …

Detoxification and homeostatic acquisition of metal ions are vital for all living organisms. Non-physiological heavy metals are toxic at low concentrations and represent major environmental hazards to human health. In particular, cadmium is a toxic environmental pollutant linked to a number of ailments including cancer, kidney and bone disease and reproductive disorders. The biological effects of cadmium toxicity which lead to human disease and the cellular mechanisms for cadmium defense are ill defined. This research will focus on multiple isolates of Stachybotrys species from culture collection companies which will be studied in an attempt to determine the presence of the Trichodiene synthase 5 (Tri5) gene, an enzyme involved in the early stages of the biosynthesis of trichothecenes. Using general primers, the Tri5 gene will be amplified by customized PCR technique. The amplicons will be sequenced using a new multiple sequence technique personally designed. Stachybotrys is a genus of filamentous fungi belonging to the class of anamorphic ascomycetes (Kirk et al, 2001). The genus has a single well-known species, Stachybotrys chartarum. The repeatability and resolution of the clinical gold standard of vascular assessment, the ankle-brachial index (ABI), was compared to that of a new device that dynamically assesses tissue perfusion during external loading utilizing laser Doppler flowmetry. Eight subjects of varying levels of vascular impairment were tested in successive weeks using two different sites on the subject's posterior calf. These new measures included the perfusion decrease as well as the unloading delay during cyclic loading. Some new dynamic tissue perfusion measures demonstrated comparable levels of reproducibility with the ABI (e.g., 10%-20%). Only the unloading delay showed potentially enhanced resolution over ABI …

The gaseous plant hormone ethylene is a small molecule that regulates developmental change. Research was conducted in three areas: sensitivity, synthesis, and alterations to synthesis. Vegetative pea plants were more sensitive than radish plants to atmospheric ethylene. Light intensity did not affect ethylene sensitivity. Ethylene synthesis rates were measured for unstressed cotton, corn, soybean, and tomato plants. The per-plant ethylene synthesis rate ranged from 0.1-80 pmol plant-1 s-1. However, when normalized to net photosynthetic rate, this range was 1-4 µmol of ethylene synthesis per mol of CO2 uptake. Diurnal cycles in ethylene synthesis were present in …

Crested wheatgrass arrived in North America at the turn of the twentieth century through the foreign plant exploration missions sponsored by the United States Department of Agriculture. During the first two decades of the new century, scientists tested the grass at agricultural experiment stations. They determined it was useful for grazing and particularly valuable because it could grow in drought conditions with little or no care and would continue to produce high quality feed even after several years of heavy use. Whitebark pine (Pinus albicaulis Engelmann) is a treeline species in the central Rocky Mountains. Its occupation of high elevations previously protected whitebark pine from long-term mountain pine beetle outbreaks. The mountain pine beetle, however, is currently reaching outbreaks of record magnitude in high-elevation whitebark pine. We used a factorial laboratory experiment to compare mountain pine beetle (Dendroctonus ponderosae Hopkins) life history characteristics between a typical host, lodgepole pine (Pinus contorta Engelmann), and whitebark pine. Parenting and family life educators should be part of the multi-disciplinary solution to childhood overweight. Their ability to work in a preventative capacity to facilitate healthy family practices around eating and activity can help alter one of the key social contexts in which children develop. This article shares the results from a survey of parenting and family life educators that explored their current efforts and understanding regarding childhood overweight, willingness to increase future involvement with the issue, barriers to addressing the issue, and need for Extension support.

This study was designed to present descriptive data from a survey of 201 school psychologists. Psychologists completed a survey addressing current practices for determining placement for students with ADHD including the role of school psychologists in determining placement, how often and who monitors services, where students are served, and what services are provided in each setting. Findings indicated that psychologists were involved less frequently in placement decisions and evaluation for Section 504 than in Special Education. Students with 504 plans received less frequent follow-up than students in Special Education. Results indicated that schools were generally following federal guidelines and recommendations …

In order to evaluate the short-term educational and behavioral impact of the American Heart Association's "Face the Fats" web application had upon college students, a study involving 116 Utah State University undergraduate students was conducted. A one-group pre-posttest design was utilized to answer eight research questions focusing on: health risks associated with trans fat, general trans fat knowledge, ability to identify foods containing trans and saturated fats, food label information, healthy alternatives to trans fat, and readiness to change trans fat intake. Diet selection and self-medication are fundamental to the survival of all species. The abilities to choose healthy foods in response to past consequences are basic elements of evolution. This study explores self-medication regarding tannins both as a medication and as a dietary challenge. In the first study, sheep with natural parasite infections were offered a low quality supplement containing a dose of tannins considered to be therapeutic (medicine), while the control infected lambs received the same supplement without tannins (placebo). My objectives were to determine if nutritional benefits occur when animals are offered foods with compounds -- alkaloids, saponins, and tannins - that are potentially complementary. I hypothesized that food intake and digestibility increase when lambs consume plants such as alfalfa ALF that contain saponins or birdsfoot trefoil (BFT) that contain tannins when the basal diet is endophyte-infected tall fescue (TF) or reed canarygrass (RCG) both of which contain alkaloids. I predicted that the nutritional status of lambs would be enhanced if basal diets of alkaloid-containing grasses were supplemented with ALF or BFT.

The influence of increasing hydrolyzed protein content on the microstructure and hardness of high protein nutrition bars was investigated to determine the mechanism of hardening during storage. Bars with various hydrolyzed protein levels were manufactured using differing ratios of 0, 25, 50, 75, 100% (wt. /wt.) of partially hydrolyzed whey protein isolate (HWPI) to an intact (non-hydrolyzed) whey protein isolate (WPI) which made up approximately 38% of the total bar composition. Overweight and obesity trends are on the rise, and young people are no exception. The popular phrase "Freshman 15" suggests that freshmen in college tend to gain weight faster than other populations. There is a growing body of literature that supports evidence of increased weight gain during the transition from high school to college. This study sought to examine not only weight changes among freshmen, but body composition, body mass index (BMI), and waist circumference (WC) changes as well.
