Minnesota Extension's Regional And County Delivery System: Myths And Reality, George W. Morse

In January 2004, the University of Minnesota Extension Service adopted an innovative regional and county delivery system to handle major cuts in state funding. This article addresses eight misconceptions that have arisen regarding the new system and concludes that Extension is having far greater impacts than it would have had without this reorganization.

Strengthening Community Engagement Toward Sustainable Local Food Systems, Joan S. Thomson, Rama B. Radhakrishna, Audrey N. Maretzki, Liberty O. Inciong
Journal of Extension
Perspectives of Extension educators relative to local food system (LFS) issues are examined. These educators perceived consumer food safety, viable ag-related businesses, land use planning, farm land preservation, loss of family-owned farms, and access to quality foods as important issues. Extension educators viewed county Extension directors, regional directors, and program advisory boards as the strongest supporters for the local LFS. Lack of program resources to support and carry out LFS programming was identified as a barrier. Significant differences were also found between Extension educators' demographic and program characteristics and important LFS issues.

To address the increasing Hispanic population in Illinois and to follow the mission of the University of Illinois Extension, educators must find ways to reach this population. To serve the Hispanic population with non-bilingual staff, it is necessary to address how to plan and deliver a camp, what support is need for non-bilingual Extension personnel, and whether Extension can meet the needs of this population. An evaluation of a summer camp for Spanish-speaking children was conducted. The results of this evaluation demonstrated that Extension programs could be effectively carried out in Hispanic communities with little modification.

Cooking With A Chef, Marge Condrasky

Cooking with a Chef was created to promote healthy eating behaviors among caregivers by teaching basic nutrition and food preparation skills. A chef/dietitian team collaborated on lively, interactive cooking lessons emphasizing culinary skills and hands-on learning. Lessons were conducted in 2-hour weekly sessions for 6 consecutive weeks. Data were collected pre and post intervention using a 24-hour Food Recall, Food Behavior Checklist, and program evaluation. Cooking with A Chef had a positive effect on food-related behaviors of caregivers, suggesting that this model program is an opportunity to reach low-income families. A long-term follow-up evaluation is needed.

Agricultural Environmental Programming In Pennsylvania: Increasing Visibility And Relevancy Of Extension, Virginia Ishler, Alyssa Dodd, Charles Abdalla, Gerald Martin

Penn State Cooperative Extension Dairy and Livestock Nutrient and Environmental Education Days (NEEDs) is a multi-disciplinary collaborative educational program for government conservation professionals working with producers. The objective of this program is to provide participants with an understanding of the links among community concerns, agricultural air and water quality impacts, changing policy, and farm-level environmental management tools. This article describes the development of the NEEDs program, evaluation results, and future program plans. As Extension's role evolves to address the educational needs of conservation professionals, evaluation results indicate the use of a multi-disciplinary approach can serve as an effective educational method.

Environmental factors greatly influence what species of lichens may occur in a particular region. Among these factors is nitrogen deposition in the form of ammonia as a result of feedlot operations, which may be manifested by an increase in bark pH. Epiphytic lichens on trees located in close proximity to medium and large-scale feedlot operations in Eastern Nebraska were analyzed for bark pH levels, species composition and species abundance, then compared to trees located at a greater distance from feedlot operations. Estimating Willingness To Pay Using A Polychotomous Choice Function: An Application To Pork Products With Environmental Attributes, Sean P. Hurley, Douglas J. Miller, James B. Kliebenstein

Bid data from a Vickrey auction for pork chops with embedded environmental attributes were analyzed. It was found that approximately 62% of the participants had a positive WTP for the most "environmentally friendly" package of pork. Thirty percent of the participants had no WTP, and 8% had a negative WTP. A polychotomous choice model was used to accommodate data having an anchoring point within the distribution of the data. Standard variables found in the WTP literature coupled with this model were used to predict participants who were premium payers and non-premium payers using an estimated ordered probit equation.

The metabolic syndrome (MS) has been linked to a significantly higher risk of heart disease and diabetes. It affects approximately 25% of Americans today with its prevalence continuing to increase as the population becomes heavier and more sedentary. With Pender’s Health Promotion model as a theoretical base, this study examined the prevalence of the risk factors, preventative and treatment measures for the metabolic syndrome among a Midwestern North American population. In this qualitative study, interviews were conducted with seven Black male school administrators in the Michigan school district who held the position of assistant principal or principal. The purpose of this study was to investigate the perceptions of Black male school administrators in Michigan school districts. The interviews were recorded and transcribed. Using a phenomenological approach the participant responses were codified, grouped, and analyzed for emergent themes. Five themes emerged as a result of the data analysis: (1) Colleague support is a key mechanism in the success of Black male school administrators. Nuts are rich sources of polyphenolic compounds and nutrients, which have antioxidant capacity. To assess the acute effect of treatment diet (75% of energy from nuts (walnut or almond) and control diet (habitual diet with no nut consumption) in healthy subjects on plasma total phenol content, antioxidant capacity and plasma lipid peroxidation. Thirteen subjects participated in the crossover design study. After an overnight fast, walnut, almond and a control diet, in form of smoothies, were consumed by the study subjects. Unfortunately, research data document a shortage of FACS teachers across the nation. Without an increasing supply of teachers, many programs may be weakened and some may be eliminated.

OBJECTIVE: To investigate the respiratory symptoms and atopic sensitization to fungi and its relation with the building type where school children were attending. We also compared the prevalence of sensitization to different fungi and respiratory symptoms in 2 different school buildings in a particular area of Turkey. The purpose of this pilot study was to test the validity and reliability of a quantitative n-3 fatty acid food frequency questionnaire (FFQ) for later use with larger groups of individuals. A convenience sample of heart patients provided dietary data via three 24-hour food recalls and FFQs. Participants were women (n = 17) and men (n = 11), 43 to 77 years of age. The association of mean daily intake of n-3 fatty acids obtained using food recalls and the FFQ was assessed by Pearson correlation. The reliability of the FFQ was assessed using coefficient α. Agonists of the liver X receptor (LXR) prevent and decrease arterial plaque formation in experimental models of atherosclerosis. The anti-atherosclerotic effects of LXR agonists are mediated by an increase in expression of genes involved in cholesterol export. Currently, the therapeutic utility of LXR agonists is limited by the fact that these agents increase triglyceride levels in the blood and liver. These undesired effects are caused by an increase in transcription of genes controlling triglyceride synthesis, such as acetyl CoA carboxylasealpha (ACCalpha). We have demonstrated that a synthetic LXR agonist, T0-901317 increases ACCalpha via both a direct mechanism involving the activation …

There is substantial demand for fishing packages in West Virginia. Fee-fishing businesses in West Virginia are often characterized as small businesses, and they could benefit from connecting with larger travel packages that are more likely to attract out-of-state anglers. The objectives are: (1) identify mini-market segments based on fee-fishing experiences; (2) examine how fee-fishing mini-markets can better connect with the larger outdoor recreation markets; and (3) to use this information to identify gaps in recreational offerings and develop tourism packages in a West Virginia test market. Aluminum (Al) in acidic soils is toxic to plants, affecting growth, water uptake, and nutrient assimilation. Aluminum resistance of plants has been ascribed to organic acid exudation from roots and changes in plant physiology resulting from the arbuscular mycorrhizal (AM) fungal symbiosis. This dissertation describes four studies that address questions regarding Al resistance of mycorrhizal plants.;In chapter 2, Liriodendron tulipifera, a common tree species in northeastern U.S. forests, was inoculated with several species of AM fungi and exposed to Al. The concept of health disparities have moved to the forefront of the nation’s healthcare agenda in the 2T* century due to the overwhelming disproportionate numbers of health care problems noted in African American populations as opposed to their counter parts. Despite the advances that have been made in biotechnology, improvement in medical procedures, and the eradication o f certain infectious diseases, African Americans continue to have poorer health status than other Americans.
