Low-Sugar Bread Formulations Using Alice, A Hard White Winter Wheat, Jessica Saunders, Sarah Stauffer
The Journal of Undergraduate Research
Alice white wheat is a new cultivar of white wheat that has many desirable attributes for the baking industry. Its main appeal is the reduction in bittering compounds and pigments. White wheat is in demand in the booming Asian noodle market. The purpose of this study was to analyze rheological properties of white wheat flours using the Mixolab, a state of the art dough rheology instrument. Additional objectives included sensory testing of various reduced-sugar bread formulations and the determination of physico-chemical properties of flours and of bread made with them. Objective: To evaluate the performance of the body mass index (BMI), waist circumference, waist-to-hip ratio (WHR), and waist-to-height ratio (WHTR) in predicting incident diabetes in Jamaica. Research Methods and Procedures: A cohort of 728 non-diabetic adults (290 men and 438 women), ages 25 to 74 years and residents of Spanish Town, Jamaica, were followed for a mean of 4 years. Participants had fasting and 2-hour postchallenge glucose concentrations measured at baseline and follow-up. Results: There were 51 cases of incident diabetes (17 men and 34 women). All indices were independent predictors of diabetes, and none was clearly superior. The area …

Background: The prevalence of obesity is higher among populations in industrialized than in developing countries. Objective: We sought to compare the relations of activity energy expenditure (AEE) with adiposity and weight change in 2 black populations with different levels of obesity. Design: Total daily energy expenditure (TDEE) and resting energy expenditure (REE) were measured and AEE was calculated in 58 Nigerian and 34 US black women and men. Weight was remeasured after ≥1 y in a subset of participants. AEE adjusted for body size and TDEE adjusted for REE were calculated with the use of the residual regression method. The …

The objective was to determine the effect of a peptide sweetener, Aspartame, compared to a carbohydrate sweetener, sucrose, on the microstructure of yogurt. Microstructure was determined by transmission and scanning electron microscopy. Without the sweeteners, casein micelles, that make up the yogurt matrix, were observed in single longitudinal polymers. When Aspartame was used, casein micelles formed double longitudinal polymers. In comparison sugar caused casein micelles to form clusters. Data show that type of sweetener impacts state of association of casein micelles and thus effects microstructure.

In order to study the influence of the vacuum evaporation (VE) process on the functionality of whey protein concentrates (WPC's), Cheddar WPC's were produced with and without VE, viz. by i) ultrafiltration (UF) and spray drying (SD) (UFSD), and by ii) UF, VE and SD (UFVESD). Geling properties and interfacial microstructure around residual fat were studied by transmission electron microscopy. Both WPC's were hydrated with 0.1 M NaCl at pH 7.0 (10% protein w/v) and gels were made in glass tubes by heating for 15 min at 90°C. A longitudinal study was conducted on the differential faecal egg counts, haematocrits and body condition scores of sheep belonging to resource-poor farmers at Rust de Winter, Gauteng province, and Kraaipan, North West Province, South Africa. The animals were scored for level of anaemia using the FAMACHA© method, an assay for the clinical evaluation of anaemia caused by Haemonchus spp. Periods of higher Haemonchus egg counts occurred from October to March for sheep at Rust de Winter and from September/October to February or April for sheep at Kraaipan. Lower haematocrit values were registered during these periods as was a higher incidence …

The Import Drugs Act has been relatively ignored by the academic community, and is most often relegated to a passing reference in a footnote. Yet the Act represents an important step in our nation's creation of a safe supply of drugs, and thus deserves some attention. In this paper, I give the Act that attention, and seek to place it in an historical context. In Chapter 1, I describe how Congressional action was prompted by medical conditions during the Mexican War and the belief that American soldiers were being given adulterated drugs. The project provides secondary health teachers who work with marginalized youth with a handbook of service-learning ideas in six units to incorporate into the curriculum. The handbook allows students to utilize the skills they have learned in the classroom by participating in service-learning activities in their community. Students involved in all stages of the service-learning process gain confidence to take ownership of the program allowing for success. By connecting the community and schools through learning, students are given the opportunity to explore their talents, get to know their communities, strengthen developmental assets and learn from one another.

This project was developed to achieve those items at the middle school level. A student will be responsible to fill out a personal profile, record yearly goals, daily activities, health grades, and the physical fitness test data all in the health and fitness portfolio. The portfolio will allow students to take ownership in the program and motivate them to improve on health and fitness activities every year.

This project was created to supply the middle school level with a health and fitness curriculum. It has three separate chapters, with each chapter containing four lessons. The chapters cover basic health, nutrition, and physical fitness. This curriculum is intended to accompany a physical education class.

The use of literature and content-based readings in the secondary ESL classroom was researched. The research suggests that providing second language learners with meaningful readings that provide for comprehensible input will build schema and background knowledge that will help them to be successful in their content area classes. A handbook for educators was created to supplement the existing curriculum, as well as to show readers that this type of supplemental reading handbook can be created by anyone to be used with any type of ESL curriculum. The adoption of the Open Court reading program in conjunction with the Washington Read's Grant was the initial idea for this project. The integration of science and social studies themes was researched, and found to be beneficial in the teaching of those content areas. Absorbent recycled paper products were tested and compared with a sodium polyacrylate gelling agent, Aquatain, for solidifying larval diets of the screwworm, Cochliomyia hominivorax (Coquerel). A recycled newsprint product, Terra-Mulch, when mixed with water and dietary ingredients produced a diet medium of homogeneous texture that supported larval growth and development comparable to the standard diet prepared with the gelling agent. Biological yields as calculated from number of pupae per tray from both the diets were similar. Three other types of recycled paper products were tested. Although less homogeneous in texture, these diets were as good as the diet with Terra-Mulch. …

With an increase in the number of pregnant women exercising, there is an increased need for patient education and the distribution of updated guidelines to promote appropriate exercise activities.
PURPOSE: The purpose of this study was to determine the level of knowledge in English-speaking, college women in their childbearing years attending the University of North Dakota regarding the risks, precautionary measures and recommended modes of exercise during pregnancy.

Rheumatoid arthritis is a progressive, destructive and chronic, inflammatory disease of the joint synovium. Signs and symptoms include pain, limited range of motion, swelling, and tenderness, which may progress to deformity. These manifestations may limit dexterity, independent living, and the overall well being of an individual. Living with daily restrictions proves to be a psychologically distressing experience.

People have developed an obsession with flattening their stomachs and slimming down their waistlines. The so called "ab machines" have become the most popularly purchased home exercise tools. Although numerous electromyographic (EMG) analysis studies have been done on various forms of equipment-free abdominal exercise, little research has been done to evaluate the effectiveness of equipment-aided exercise. The purpose of this study was to analyze and evaluate any differences in EMG activity between three abdominal exercises: the traditional crunch, the crunch on a ball, and utilization of a prone rolling machine (AbSlide®).

The purpose of this study was to add to the body of existing knowledge regarding the relationship between academic achievement and discipline problems found in schools today. The study undertook to determine if there is a correlation between the behavior of African-American male students and their academic achievement. Specifically, it examines their achievement in reading and whether or not these students have experienced serious discipline problems at school. The sample was limited to African-American male students who are in the eighth grade during the 2001-2002 school year.
