Correlates Of Vigorous Physical Activity For Children In Grades 1 Through 12: Comparing Parent-Reported And Objectively Measured Physical Activity, James F. Sallis, Wendell C. Taylor, Marsha Dowda, Patty S. Freedson, Russell R. Pate
Faculty Publications
Correlates of physical activity were examined in young people in grades 1 through 12, and analyses were conducted separately for eight age/grade and sex subgroups. Twenty-one explanatory variables were assessed by parental report. Physical activity was assessed in 781 young people via parent report, and 200 wore an accelerometer for seven days. Between 11% and 36% of parent-reported child vigorous physical activity was explained. The most consistent correlates were peer support and use of afternoon time for active rather than sedentary recreation. Peer support was the only significant correlate of objectively monitored activity in multiple subgroups.

Elders, Values, And Peppermint Candies, Sarah A. Klein, Andrea C. Bostrom
Peer Reviewed Articles
The demographics of the population of the United States are inexorably changing: The baby boomers, who have defined much of the culture of the past half century, will continue to do so over the next 50 years. Just as the population is aging, so are the members of the nursing profession. Working with elders as our patients and as our peers is a reasonable expectation. Encouraging younger nurses to embrace working with elders is a challenge. Learning about how we have come to value aging and our elders is one way to engage the change in the work that nurses …

Production Systems Involving Stocker Cattle And Soft Red Winter Wheat, L. B. Daniels, K. F. Harrison, D. S. Hubbell Iii, Z. B. Johnson, T. E. Windham, E. B. Kegley, D. Hellwig
AAES Research Reports and Research Bulletins
A three year study at the Livestock and Forestry Research Station near Batesville, Arkansas evaluated production systems involving stocker cattle and soft red winter wheat. Grazing of soft red winter wheat forage from October through February followed by harvesting wheat grain or grazing through April with stocker cattle offers an alternative to conventional farming. Soft red winter wheat, when planted by September 15, produces an ample supply of high-quality forage that supports rapid growth of stocker cattle during October through April. Net income from stocker cattle averaged over $100 per acre. A normal wheat grain crop can also be harvested. …

The Role Of Extension In Controversial Studies: The Case Of Interstate Dairy Compacts, Kenneth W. Bailey
The Role Of Extension In Controversial Studies: The Case Of Interstate Dairy Compacts, Kenneth W. Bailey
Journal of Extension
This article reviews the steps taken at the University of Missouri in dealing with a very controversial study on dairy compacts. More and more, Extension is being asked to conduct applied economic studies on controversial public policy issues. However, care must be taken to conduct these studies in an objective and scholarly manner without unnecessarily alienating affected stakeholders. Academic freedom and integrity must be maintained, and faculty cannot allow themselves to be placed in a position to be influenced by affected stakeholders. At the same time, Extension cannot operate effectively without these important stakeholders. This study outlines an acceptable balance.

Displacement Of Escherichia Coli O157:H7 From Rumen Medium Containing Prebiotic Sugars, Albane De Vaux, Mark Morrison, Robert W. Hutkins
Department of Food Science and Technology: Faculty Publications
A fed-batch, anaerobic culture system was developed to assess the behavior of Escherichia coli O157:H7 in a rumen-like environment. Fermentation medium consisted of either 50% (vol/vol) raw or sterile rumen fluid and 50% phosphate buffer. Additional rumen fluid was added twice per day, and samples were removed three times per day to simulate the exiting of digesta and microbes from the rumen environment under typical feeding regimens. With both types of medium, anaerobic and enteric bacteria reached 1010 and 104 cells/ml, respectively, and were maintained at these levels for at least 5 days. When a rifampin-resistant strain of …

Acrolein Modifies And Inhibits Cytosolic Aspartate Aminotransferase, James Southwell, George Yeargans, Catherine Kowalewski, Norbert W. Seidler
Faculty and Staff Publications
Acrolein is a reactive lipid peroxidation byproduct, which is found in ischemic tissue. We examined the effects of acrolein on cytosolic aspartate aminotransferase (cAAT), which is an enzyme that was previously shown to be inhibited by glycating agents. cAAT is thought to protect against ischemic injury. We observed that acrolein cross-linked cAAT subunits as evidenced by the presence of high molecular weight bands following SDS-PAGE. Acrolein-modified cAAT resisted thermal denaturation when compared with native cAAT. We also observed a decrease in intrinsic fluorescence (290 nm, ex; 380 nm, em). These observations are consistent with an acrolein-induced change in conformation that …

Iron, Folate And Vitamin B12 Status Of Apparently Healthy Irish Adult Women Attending General Practitioners In Inner-City Dublin, Helen R. Casey
Doctoral
There is substantial related morbidity and mortality among men and women in developed countries. Certain events during the course of a woman’s life such as menstruation, pregnancy, lactation and the menopause may compromise haematinic nutrient status. The purpose of this study was to investigate iron, folate and vitamin B12 status among a sample of apparently healthy, non-pregnant Irish adult women attending general practitioners in inner-city Dublin. Dietary, socio-economic, medical and lifestyle factors contributing to status of these haematinic nutrients were extensively examined. The initial part of the work validated the methods in a representative sample of inner city Dublin women …

Measuring And Benchmarking Customer Satisfaction: Implications For Organizational And Stakeholder Accountability, Rama Radhakrishna
Journal of Extension
Customer satisfaction has become an important performance measurement tool for many organizations, and Cooperative Extension is no exception. Clemson Extension Service conducted a customer satisfaction survey (CSS). A total of 1,068 clients responded to a 14-item survey that elicited data on Extension information use, satisfaction with services, and demographic information. Overall, findings indicated that customers were very satisfied with the service from Clemson Extension, and a majority indicated that the programs were up-to-date, accurate, and relevant to their situations. The CSS findings were benchmarked with two other states in the Southern Region as standards of measurement.

Farmers' Markets: Consumer Trends, Preferences, And Characteristics, Ramu Govindasamy, John Italia, Adesoji Adelaja
Journal of Extension
The study reported here provides an overview of attitudes, preferences, and characteristics of consumers who shop at farmers' markets. The results, based on a consumer survey of 336 patrons of New Jersey farmers' markets, revealed that absence of a market in customers' vicinity, lack of knowledge, and inconvenience in terms of time and location were the main reasons for not patronizing these markets. On average, consumers spent $16 per visit, and the majority had attended between two to four different farmers' markets. The majority visited these facilities once a week, once every 2 weeks, or once a month.
