We investigated the effect of capsular and ropy exopolysaccharide-producing Streptococcus thermophilus starter bacteria on Mozzarella cheese functionality and whey viscosity. Mozzarella cheeses were manufactured with Lactobacillus helveticus LH100 paired with one of four S. thermophilus strains: MR-1C, a bacterium that produces a capsular exopolysaccharide; MTC360, a strain that secretes a ropy exopolysaccharide; TAO61, a nonexopolysaccharide-producing commercial cheese starter; and DM10, a nonencapsulated, exopolysaccharide-negative mutant of strain MR-1C. As expected, cheese moisture levels were significantly higher in Mozzarella cheeses made with exopolysaccharide-positive versus exopolysaccharide-negative streptococci, and melt properties were better in the higher moisture cheeses. A membrane concentration system consisting of tubular polysulphone ultrafiltration (UF) and polyamide reverse osmosis (RO) was evaluated for concentrating key water soluble flavor compounds from lobster extracts. Major flavor‐giving compounds in the extract were glutamic acid, glycine, arginine, uridine 5′‐monophosphate (UMP), succninic acid and glucose. Factors affecting performance of the UF/RO systems, such as flow rate, feed solid level, temperature and pressure, on permeate flux and solids rejection were measured. The optimum UF conditions were 1.5% feed solid level, 15 L/min feed flow rate, 50°C feed temperature and 1 MPa log mean transmembrane pressure. The RO system retained all dissolved …

Induction Of Protease Activity In Vibrio Anguillarum By Gastrointestinal Mucus, Steven M. Denkin, David R. Nelson

The effect of gastrointestinal mucus on protease activity in Vibrio anguillarum was investigated. Protease activity was measured by using an azocasein hydrolysis assay. Cells grown to stationary phase in mucus (200 mg of mucus protein/ml) exhibited ninefold-greater protease activity than cells grown in Luria-Bertani broth plus 2% NaCl (LB20). Protease induction was examined with cells grown in LB20 and resuspended in mucus, LB20, nine-salts solution (NSS [a carbon-, nitrogen-, and phosphorus-free salt solution]), or marine minimal medium (3M) (~109 CFU/ml). Induction of protease activity occurred 60 to 90 min after addition of mucus and was ≥ 70-fold greater than …

The growth physiology of Escherichia coli during colonization of the intestinal tract was studied with four animal models: the streptomycin-treated mouse carrying a reduced microflora, the monoassociated mouse with no other microflora than the introduced strain, the conventionalized streptomycin-treated mouse, and the conventionalized monoassociated mouse harboring a full microflora. A 23S rRNA fluorescent oligonucleotide probe was used for hybridization to whole E. coli cells fixed directly after being taken from the animals, and the respective growth rates of E. coli BJ4 in the four animal models were estimated by correlating the cellular concentrations of ribosomes with the growth rate of …

In the sheep enterprise, lamb sales account for more than 90 percent of gross revenue. Most analyses indicate profitable sheep production is dependent on market prices, pounds of lamb weaned or sold per ewe exposed and the unit cost of production. Producers have little control annually over selling price for their lambs, but they do control production efficiency. Ewe productivity and ewe/lamb feed cost containment are important parameters for all types of flock management systems whether a feeder lamb or finished lamb production emphasis. Seasonality of lamb production continues to be a major hurdle for the sheep industry. The lack of a continuous supply of fresh lamb impacts both the processing and retail segments of the industry. The seasonal fluctuation in supply and quality results in sporadic buying patterns by consumers and ultimately less shelf space and therefore less product in the meat case. Often lamb cuts are not available in retail outlets or only on a seasonal basis making sustained consumption levels difficult. In many cases seasonal production also results in inefficient use of facilities, labor and management for the producer. This study …

Lilacs are among the most versatile shrubs grown in Nebraska. They come in various shapes, sizes, flower types and flower colors. Time of flowering also varies with species and cultivars. Lilacs can be used statewide for wind screens, hedges, accent plants or strictly for flower beauty and fragrance. Their drought and winter hardiness makes them easy to grow.
