Inequity in healthcare has long been understood to be caused by individual and structural racism in the health system. Little progress has been made in diminishing the disparities that exist between Black and African American minoritized populations and the White majority. Cultural competence training in healthcare has focused on surface level differences in ethnicities, including language and religious practices, while ignoring difficult to address topics such as race and racism. Digesting Gender: Gendered Foodways In Modern Chinese Literature, 1890s–1940s, Zhuo Feng

In this dissertation, I investigate Han Bangqing (1856–1894), Lao She (1899– 1966), and Su Qing’s (1914–1982) works to study the literary representations of how people purchased, prepared, shared, and ate food in different social contexts allowing them to adapt to new gender norms. I contend that the intersection of food, gender and literature stages the process through which people reconciled different and sometimes conflicting gender norms through their everyday eating practices. When encountering new cooking and eating practices in these literary works, people reflect upon their past lives and, wittingly or unwittingly, begin to accept different gender norms, and modify …

The site of Dorn Levee #1 (38FA608) in the South Carolina Piedmont has the potential to provide unique information regarding the behaviors and activities of the hunter-gatherer populations who inhabited it throughout prehistory. The Late and Terminal Archaic Period landscape in the Southeast saw with it many major changes in hunter-gatherer lifeways that had begun initial development in periods prior. Though nurses may have knowledge about the health promoting benefits of a healthy diet, many do not consume enough fruits or vegetables. For hospital shift nurses to achieve healthy eating while at work, environmental barriers were reportedly the most challenging to overcome. To better understand the hospital food environment from the nurses’ perspective, two mechanisms for workplace food acquisition were studied: 1.) hospital consumer food environment, which includes cafeterias, vending machines, and gift shops; and 2.) free food at work.

Optimal pregnancy outcomes and subsequent postnatal development in childhood are important contributors for health in adulthood. Some contributors to pregnancy outcomes include interpregnancy interval (IPI) and gestational age. Postnatal growth patterns also contribute to neurodevelopment and metabolic health outcomes later in life.
Several systematic reviews consistently show that short and long IPIs are associated with increased risk of subsequent adverse perinatal outcomes. Recent studies demonstrate that previously observed consistent positive associations between short and long IPIs and adverse perinatal outcomes might be due to unmeasured confounding rather than the length of the IPI. Package warning labeling policy is a fundamental public health strategy for communicating about tobacco product risks. The rapidly growing markets for novel tobacco products, such as heated tobacco products (HTPs) and e-cigarettes (ECs), make it critical to determine the characteristics of effective warning label policies for these products, which have lower levels of risk compared to cigarettes according to available evidence. Cancer remains one of the leading causes of death in the United States. The majority of individuals struggle to adhere to recommended dietary and physical activity guidelines. Specifically, older adults with cancer struggle to meet health behavior recommendations, and tend to have additional risk factors, such as poor social support. This study sought to examine the development of educational partnerships from the perspective of the teachers. Autistic individuals report a greater prevalence of physical and mental health difficulties, compared to the general population. This study examines factors which impact physical and mental health in the general population to evaluate whether they potentially underlie this increased prevalence in autistic individuals. We compared twenty-two autistic adults, twenty-three adults reporting symptoms of insomnia, and twenty-one neurotypical adults. The primary factors were sleep quality and insomnia; secondary factors were level of autistic traits, alexithymia, and prosocial behavior. Accurate population estimates are critical to inform conservation management of species. Incomplete sampling can lead to population underestimates and lacking conservation efforts. Population surveys are important for assessing human and animal welfare to allow for targeted conservation action. Recent ring-tailed lemur (Lemur catta) surveys have led researchers to conclude that L. catta populations are crashing. This has generated much attention and alarm, but may also be based on incomplete information. To better understand population dynamics, more thorough sampling is needed. On January 1, 2022, mandatory genetically engineered (GE) food disclosure labeling will be required nationwide in the United States. To date, the only mandatory GE labeling law implemented in the U.S. was Act 120 in Vermont. This thesis examines the consumer purchasing response to the implementation of Vermont Act 120 using store-level scanner data of food purchases. I measure the effects of Vermont Act 120 on the grocery store sales of non-GMO, organic, and GE- labeled products in Vermont. This research investigates maternal nutritional status through the analysis of young infants (N=27) that are likely pre-weaned from two Roman occupational periods at Put Dragulina. Because young infants are solely dependent on the nutritional status of their mother while in utero and postpartum through the consumption of breast milk, the presence of skeletal pathologies positively associated to nutritional deficiencies on the remains of young infants can be analyzed to reconstruct the nutritional status of the infant’s mother. This study finds that 89% (N=24) of young infants, regardless of occupational period, presented with skeletal pathologies consistent with nutritional deficiencies. These results …

Iron deficiency chlorosis (IDC) is a frequent problem in soybean [Glycine max (L.) Merr.] production on calcareous soils. Greenhouse and soil incubation experiments were established to evaluate pyritic lignite efficacy to supply Fe as compared to Fe-EDDHA and Fe-EDTA sources across contrasting IDC tolerance varieties grown on a slightly acid and a calcareous soil. Soybean IDC incidence was influenced by the soil properties and variety tolerance. All iron sources increased plant dry matter accumulation on the Leeper soil, whereas on the Marietta soil only lignite at 0.672 kg ha-1 produced an increase. Human activity affects white-tailed deer (Odocoileus virginianus) movement and habitat selection during all times of the year, but knowledge is limited regarding how human risk affects white-tailed deer during the summer and winter. During spring and summer, variation in patch selection varied. Natural vegetation was selected for early in the year, with anthropogenic forages being important for deer use during the summer. During the winter, deer responded to different levels of risk. As hunter risk increased on the landscape, deer altered selection of the landscape. Deer avoided areas that were heavily used by hunters, using areas containing less hunter risk. …

Post-Harvest Reduction Of Salmonella In Pork Trimming, Dishnu Sajeev

The objective of the current study was to determine the efficacy of 3% acetic acid in reducing Salmonella in pork trimming and the effects of such treatment on meat quality. For 15-s dipping and 5-log CFU/pork cube inoculation, only 0.2- to 0.3-log reduction was observed (P ≤ 0.026). Acetic acid worked best at 75 s and 50°C, providing 1.4-log reduction (P < 0.001), damaging Salmonella cell membranes. When an inoculated pork cube was placed at the geometrical center of 2.3-kg pork trimming, dipping at 50°C for 75 s only reduced Salmonella by 0.2 log (P = 0.040). Although dipping slightly increased lightness (P < 0.001) and decreased redness (P ≤ 0.008) on the meat surface, no inside color change was detected (P = 0.120). Neither lipid oxidation (TBARS, P = 0.644), protein solubility (P = 0.187), nor water-holding capacity (P = 0.076) were affected by treatments.

Controlling pathogenic presence in broilers has become a priority in the poultry industry to prevent economic losses due to disease and infection, as well as the possible contamination of chicken products. The use of antibiotics reduces the incidence of infections; however, their removal from production initiated the search for suitable alternatives. Diet is a key factor in the development and progression of Inflammatory Bowel Disease (IBD). A variety of diets have been studied with IBD patients. This cross-sectional survey identified current healthcare practitioner views on different diets and their efficacy with IBD patients. Diets were rated on awareness, compliance, and contributors to success by participants (n = 181). Frequencies were conducted, and ANOVA with Duncan pairwise comparison or chi-square analysis were used to determine significant differences. Most participants (96%) and 98% of registered dietitians (RD) considered using diet to help treat IBD patients. RDs perceived the low fiber or low residue …

Bareroot and containerized loblolly pine (Pinus taeda L.) were planted in December 2016 and February 2017 to compare performance across four sites in South Carolina and Georgia. Main treatments analyzed for growth differences were stocktype, genetics, and planting date. Analysis of variance results showed significant growth differences after two growing seasons for containerized over bareroot seedlings, for control-pollinated seedlings over open-pollinated and varietal seedlings, and for December-planted seedlings over February-planted seedlings. Control–pollinated seedlings demonstrated the most incremental growth between ages one and two. Site conditions dictated seedling survival to a certain degree, and bareroot seedling growth was slightly better than …

Prescribed fire is commonly used to manage white-tailed deer habitat. However, nutrition is still limited during the summer for deer in the Southeast and prescribed fire is commonly restricted to the dormant season. Knowledge of fire phenology effects on summer nutrient availability is relatively unknown. Stump sprouts may also affect available nutrition, which could be important when managing for summer nutrition. To address this summer nutritional stress period, I examined impacts prescribed fire phenology and mechanical stump sprouting had on summer nutritional carrying capacity for deer. Weedy rice is of the same species as cultivated rice, Oryza, and is a common rice weed exhibiting allopathic characteristics. Incorporation of allelopathic traits from weedy rice into cultivated rice may have a positive impact on rice yield. The overall objective of this study was to characterize weedy rice accessions based on the allelopathic potential to suppress barnyardgrass. These accessions, once discovered, may be used in identifying phenotypic traits and genes associated with their weed suppressive trait. Ten weedy rice accessions, and five rice cultivars (Rex, CL163,Rondo, PI312777, PI338046) were screened using a stair-step technique. The allelopathic potential was calculated …
