Higher Education Institutions (HEIs) have been called to lead global health promotion actions, yet there remains a dearth of empirically informed ‘Healthy University’ (HU) initiatives. This thesis constituted a baseline mixed methods needs assessment to inform a settings-based health promotion (HP) initiative (‘A Healthy MTU’) within a multi-campus ‘case’ HEI in Ireland (Cork campuses of MTU, formerly CIT). Specific aims were to (i) investigate student and staff health metrics, and (ii) identify the cultural and environmental determinants of health and wellbeing within the case HEI setting. The aim of this thesis is to characterize environmental Lactococcus strains to identify different and diverse metabolic capabilities that could be applied to microbial biotransformation, defined as the conversion of a cheap/waste substrate into a value-added product. Women’s pre-conceptional health (including nutritional status) is important for both the health of the individual themselves and also for the lifelong health of any occurring offspring. However, it has been estimated that up to 50% of pregnancies are unplanned, thus optimal nutritional status is important for all women of child-bearing age (WCBA) not just those with pregnancy intentions. Despite the accumulation of evidence of the importance of nutritional status at this life-stage, nutrient recommendations for WCBA for the most part don’t differ from recommendations for other population groups. Bacteriocins represent a heterogeneous group of small, ribosomal-synthesized, potent antibacterial peptides produced by bacteria, capable of inhibiting bacteria both closely related or indeed those from other genera than the producer. In addition to their role as food preservatives, bacteriocins have potent activity against medically significant pathogens and are considered attractive alternatives to antibiotics, due to their inherent heat stability, potency at nanomolar scale, resistance to proteases and low levels of acquired resistance in commercial applications. Assessing The Health Effects Of Climate Change, Social Vulnerability, And Environmental Justice In Camden County, New Jersey, Daniil Ivanov

Climate change negatively impacts health, while socially vulnerable and overburdened communities disproportionately experience climate change and negative health determinants. Camden County is used as a case study for analyzing environment, socioeconomics, and health. Environmental variables—PM2.5 and land cover of impervious surfaces, floodplains, and forests—were compared to the CDC Social Vulnerability Index (SVI) at the census tract level, finding significant correlations between land cover, air quality, and the SVI. The overburdened communities defined by the NJ Environmental Justice Law experienced a significantly higher incidence of emergency department visitation for respiratory, circulatory, and mental illnesses than non-overburdened communities. The ability to perform effectively in the gastrointestinal system (GIT) is one of the most significant criteria for selecting the best probiotic bacteria. Thus, the present study aimed to investigate the potential probiotic characteristics of some selected lactic acid bacteria (LAB) isolated from vegetable products. Probiotic characteristics included tolerance to acid and bile, cholesterol removing ability, bile salt hydrolysis, resistance against lysozyme and antibiotics, production of exopolysaccharides (EPS), antimicrobial and hemolytic activities, and cell surface characteristics (auto-aggregation, co-aggregation, and hydrophobicity). The long-term uncontrolled disease can lead to stomach complications such as gastroparesis, as well as disruption in several proteins, such as ERM (Ezrin, radixin, moesin) proteins. ERM proteins are three proteins that are structurally and functionally related. ERM proteins have molecular masses of 82, 80, and 75 kDa, respectively. This study was designed to explore date palm leaves, an agro by-product, as a potential source of natural polyphenolic compounds using appropriate green Natural Deep Eutectic Solvent (NADES) and emerging green extraction technologies. Herein, six different NADES were prepared using six different hydrogen donors and choline chloride as hydrogen bond acceptor at a molar ratio of 1:2 (w/w) and different NADES concentrations (10, 20, 40, and 80%, in water, at 40°C). The combination of commercial fish emulsion (FE) and plant growth-promoting actinobacteria capable of producing plant growth regulators (PGRs) was evaluated as a biofertilizer to enhance growth and development of grey mangrove (Avicennia marina) in the United Arab Emirates. Whey protein concentrates (WPCs) are gaining importance as a functional ingredient due to their nutritional, techno-functional and bioactive properties. In this study, WPCs were prepared from skimmed camel milk, then either spray-dried (SD) at 170, 185 and 200°C, or treated by ultrasonication (US) (20 kHz) for 5, 10 and 15 min followed by freeze-drying to obtain powders. Protein hydrolysates (PH) from plant-based proteins (PBP) are gaining importance due to the availability, sustainable and economical production when compared to their an-imal origin counterpart. Therefore, this study explored under-utilized PBP hydroly-sates derived from Bitter apple (BA) and Pearl millet (PM) and determined their bio-active properties. Enzymatic hydrolysis (EH) of BA and PM proteins was carried out by enzymes such as alcalase (A), bromelain (B), and chymotrypsin (C) for 3, 6, and 9 h to produce PH possessing high bioactive properties. The increase in palm oil consumption and production has resulted in removing up to 90% of trees in some tropical forests. The green microalgae Chloroidium sp. UTEX 3007 can be an alternative sustainable source of palm oil due to its high palmitic acid content. The objective of this study was to generate a mutant Chloroidium population that is capable of producing and accumulating elevated levels of palmitic acid and to characterize the obtained populations’ lipid contents. The Health Impacts Of Nursing Shift Work, Amanda M. Shandor

This descriptive pilot study was intended to evaluate negative outcomes of shift work stress in nursing. Objective analysis of waist-hip-circumference ratios (WHR) and subjective survey reports were utilized to assess whether differences existed in expressed stress, stress related health disorders, and stress associated behaviors among day shift, night shift, and rotating shift registered nurses (RNs). Statistical analysis of the WHRs indicates that no statistical difference exists in the results from this study across the three nursing shifts.
