Leisure Time Physical Activity Among Non-Smoking, Normal Weight Adults: Assessing Prevalence Of Central Adiposity, Insulin Resistance, And Systemic Inflammation, Maria M. Corallo
Master's Theses
BACKGROUND: Physical activity (PA) has been examined as a preventive intervention against pre-diabetes, diabetes, and low-grade systemic inflammation, however, it remains unknown if normal weight individuals who do not engage in regular PA are at increased risk.
METHODS: The National Health and Nutrition Examination Survey (NHANES) 2001-2006 were utilized. Three measures of PA (i.e., intensity level, the American College of Sports Medicine (ACSM) guidelines for frequency, intensity, and time/duration (FIT) of PA, and ACSM recommendations for MET-Mins Per Week) were analyzed in relation to elevated waist circumference, homeostatic model assessment for insulin resistance (HOMA), and immune system cells. In addition, …

Polyphenol Composition Of Underutilized Aronia Berries And Changes In Aronia Berry Polyphenol Content Through Ripening, Rod Taheri
Master's Theses
Chokeberry (Aronia melanocarpa, Aronia prunifolia, Aronia arbutifolia) is notable for its high phytochemical content, particularly anthocyanins and proanthocyanidins. Aronia berries of different genotypes may vary in their polyphenol content, so it is important to characterize these compounds based on species, and to determine whether or not aronia fruit color correlates with phytochemical content. Using normal-phase HPLC, UPLC-MS, and the DMAC and Folin-Ciocalteu assays, polyphenols in twelve different aronia accessions were quantified and characterized based on fruit color. Significant diversity was observed in anthocyanin content among berries of different colors, with black aronia berries (mean = 10.47 mg/g DW) …

Effects Of Herbivory As An Ecological Constraint Of Willow Growth At A Restored Riparian Corridor, Jacqueline A. Mccrory
Master's Theses
A critical component of nearly all riparian restoration projects is the rapid successful recovery of native vegetation. The dynamic conditions and diverse biotic community supported by riparian ecosystems can present numerous constraints to restoration efforts. This study investigated stunted growth of arroyo willow (Salix lasiolepis) cuttings planted along the banks of Redwood Creek as part of the National Park Service’s Muir Beach Restoration Project to restore habitat for special status species in California. Based on observations of deer browsing, as well as signs of extensive biomass removal, I designed a field experiment using exclusionary fencing to test the significance of …

Utilization Of An Anti-Nnk Recombinant Antibody To Reduce The Harm Associated With Smokeless Tobacco, Heather L. Wanczyk
Master's Theses
Tobacco products, both combustible and smokeless, contain abundant amounts of toxic chemicals and carcinogens capable of causing extensive damage to the body. Tobacco specific nitrosamines, including 4-(methylnitrosoamino)-1-(3-pyridyl)-1-butanone (NNK) and N’-nitrosonornicotine (NNN), are among the most potent of these carcinogens and are capable of eliciting cellular transformations within the body after bioactivation by cytochrome P450 enzymes. In order to reduce the harm associated with smokeless tobacco, a recombinant anti-NNK antibody has been constructed from a hybridoma secreting a mouse monoclonal antibody specific for NNK.
In work performed previously, hybridomas were created by constructing a structurally-related benzoyl derivative …

The Effect Of Skeletal Muscle Mass On Basal Metabolic Rate In College-Age Males 2013, Chase Vaughn
The Effect Of Skeletal Muscle Mass On Basal Metabolic Rate In College-Age Males 2013, Chase Vaughn
Master's Theses
There are many misconceptions within the fitness community. One such misconception is that an increase in muscle mass will have a large increase in basal metabolic rate, yet this may not be the best way for successful weight loss. The purpose of this study was to determine the strength of the correlation between skeletal muscle mass and basal metabolic rate. The hypothesis tested was that basal metabolic rate is strongly correlated with skeletal muscle mass. The participants were college-aged males (n =17). Skeletal muscle mass (SMM) was estimated using the skin-fold circumference model (SFCM): SMM (kg) = Ht (0.00744 CAG2 …

Conservation Genetics Of Threatened Gopher Tortoises, Gopherus Polyphemus: An Assessment Of Genetic Variation And Parentage In Two Populations In South Mississippi, Angela Huang Getz
Master's Theses
Despite the protection of gopher tortoises, Gopherus polyphemus, in the western portion of their range for over twenty years, populations of the De Soto National Forest (DNF) in southern Mississippi experience low recruitment and lower hatching success than populations in the eastern portion of the range, and the causes of this are unknown. Previous work has shown that Mississippi populations of the DNF have lower levels of genetic diversity than eastern populations, which prompted the suggestion that reduced levels of genetic variation may play a part in low hatching success. Small populations can become more susceptible to the effects …

A Transnational And Intergenerational Account Of Value Preference Patterns: Revisiting Needs-Gratification And Post-Materialist Theories, Fouad Bou Zeineddine
A Transnational And Intergenerational Account Of Value Preference Patterns: Revisiting Needs-Gratification And Post-Materialist Theories, Fouad Bou Zeineddine
Master's Theses
The socio-political values predominant in a particular society will reflect the correspondent needs of that society, and these needs can include factors other than material acquisition. In contrast to needs-gratification theory (Maslow, 1970), and post-materialist theory (Inglehart, 1971), this paper discusses agency in terms of relational autonomy (Oshana, 2006), as it pertains to power. I argue that a) personal and national economic affluence or security may not be sufficient to describe social ecology nor fully describe the ways that power can influence values, b) individual and collective relational power is utilitarian and essential, c) fulfillment of material and social needs …
Effect Of Post Manufacture Thermal Dip Treatment On Proteolysis Of Commercial String Cheese During Storage, Melissa Karen Hsu
Effect Of Post Manufacture Thermal Dip Treatment On Proteolysis Of Commercial String Cheese During Storage, Melissa Karen Hsu
Master's Theses
String cheese, a Mozzarella cheese, has the unique ability to string in fibrous strands when pulled apart. Graders judge string cheese by its stringy texture; samples with copious amounts of string are awarded high ratings. But just as the texture of natural cheeses softens with time, the stringy texture of string cheese can diminish with age too.
Age related softening in cheese is due primarily to an important biochemical event known as proteolysis, which is attributed to inherent milk proteinases, residual coagulant activity, and enzymes from the lysis of starter culture microorganisms. It is hypothesized that a post manufacture heat …
Consumer Evaluation Of Low Sodium Mozzarella Cheese And Development Of A Novel Method For Evaluating Emotions, Lauren Alyse Collinsworth
Consumer Evaluation Of Low Sodium Mozzarella Cheese And Development Of A Novel Method For Evaluating Emotions, Lauren Alyse Collinsworth
Master's Theses
Mozzarella cheese is currently the highest consumed cheese in the United States. The popularity of mozzarella cheese is typically attributed to the high consumption rates of pizza cheese and string cheese; both of which are low moisture part skim (LMPS) mozzarella cheese. A single serving of LMPS mozzarella cheese contains approximately 8% of the daily value (DV) for sodium, a mineral which is currently consumed in excess among most Americans. On average, one in three Americans has hypertension. This condition is strongly associated with excessive sodium intake, and it is a leading risk factor for cardiovascular disease and stroke in …
