Diabetes remains a growing public health concern, particularly in underserved regions such as rural Mississippi, where barriers to healthcare access and diabetes education contribute to poor disease management. This qualitative study explores the lived experiences of 27 participants enrolled in Diabetes Solutions, a telehealth-based diabetes self-management education and support (DSMES/T) program offered by the Mississippi Diabetes Network. Using a phenomenological approach and structured interviews, the study identifies four major themes: structural benefits of the program, knowledge gained, common changes by participants, and quality of life outcomes. Food insecurity has long penetrated the rural South. This limits access to nutritious foods like fresh produce and contributes to chronic health conditions that may arise. Food pantries serve as a vital resource in addressing these disparities by providing free food to families in need. Many of these pantries incorporate strategies to increase consumption of nutrient dense options such as fruits as vegetables. Studying abroad presents a unique opportunity for college students to immerse themselves in new cultures, including experiencing different food environments and dietary customs. However, adapting to a foreign food culture can pose various challenges that impact students’ overall health, eating behaviors, and study abroad experiences. Over the course of two years, I spent more than 130 hours completing on-the- ground volunteer work with the Low-Income Taxpayer Clinic (LITC), a clinic within North Mississippi Rural Legal Services that provides free legal assistance to individuals navigating disputes with the IRS. While the Sixth Amendment guarantees legal representation in criminal cases, no such guarantee exists for civil matters such as tax disputes, housing instability, or loss of public benefits. Chronic health issues and poor dietary habits continue to disproportionately impact rural communities in Mississippi, especially among children. Research has shown that early exposure to healthy foods and cooking practices can positively influence lifelong health behaviors. Cooking classes have also been linked to improved food literacy, culinary confidence, and willingness to try new foods. The purpose of this study was to assess the effects of a short-term culinary program on children’s cooking self-efficacy and food behaviors in Quitman County, Mississippi.

This thesis explores food insecurity in Oxford and Lafayette County, Mississippi, within the broader context of state, national, and global challenges. Over a four-year period, student-led and community organizations collaborated to design programs that addressed both food access and chronic illness prevention through education, outreach, and direct service. In recent years, marathon and ultra-marathon participation has grown substantially. Past research has shown that a range of variables influence the performance of endurance athletes. This study included participants of the Forgotten Florida 50-mile and 100-mile race and the Chattanooga Erlanger Half-Marathon and Marathon. These athletes were questioned about their sleep, nutrition, and training habits implemented for the races they completed. The results show the significance of carbohydrate consumption throughout the race for energy maintenance and shortened race times. Tobacco smoking was a deeply rooted tradition in Maya society, often associated with ritual and daily life, and may have contributed to patterns of dental health. However, despite its cultural significance, direct biological evidence of tobacco use in ancient populations is rare. This study addresses that gap by analyzing nicotine residues preserved in dental calculus from the Tipu Maya, offering new insight into both cultural practices and potential health impacts.

Severe burns and other dermatological injuries are frequently accompanied by a range of comorbidities and aesthetic challenges that patients must contend with. The complexity of burn care is exacerbated by the lack of a standardized surgical protocol, as treatment strategies are tailored to individual patient factors, including overall health status, wound size and location, as well as the expertise and resources available to the surgical team. This thesis explores the variation in immigrant access to state-level social welfare programs in the United States from 1997 to 2023, focusing on the influence of state ideology, democratic performance, and public opinion. In the wake of the 1996 Personal Responsibility and Work Opportunity Reconciliation Act (PRWORA), which curtailed federal welfare access for many immigrants and shifted authority to the states, significant disparities emerged in how states approached immigrant inclusion. This study examines the role of an interactive children's museum in promoting physical activity among children aged 5-10, with a focus on the influence of various predictors, including sleep, family activity, typical physical activity levels, and participation in sports. Using a mixed-method design, participants were monitored with an Actigraph wGT3X accelerometer during a typical museum visit, and their parents completed a survey on factors influencing their child's activity. Biodiesel is one current area of interest as a replacement for traditional diesel fuel. Benefits of biodiesel include that it can be derived from renewable resources, and it possesses properties similar to that of traditional diesel fuel. Proper dental health is crucial for overall well-being, yet access to dental care remains a significant challenge in rural Appalachia. This study examines the relationship between Appalachian cultural identity, fatalistic beliefs, and dental health. Using survey data from 20 participants at dental offices in Chattanooga, Tennessee, the study assessed correlations between Appalachian identity, fatalism, and self-reported dental health. Results indicate a high prevalence of dental health issues (95% reported significant problems), with 70% lacking dental insurance. However, correlations between Appalachian identity, fatalism, and dental health were not statistically significant. Findings suggest that while cultural factors play a role in healthcare …

Due to the increasing prevalence of cannabis product availability and usage in the modern United States, particularly among pregnant individuals, evaluating the bioaccumulation of minor cannabinoids to further understand the adverse effects of cannabinoids during early development is critical. This study quantitated the uptake of eight minor cannabinoids ((∆8-tetrahydrocannabinol (∆8-THC), ∆9-THC, ∆10-THC, cannabidiol (CBD), cannabigerol (CBG), cannabinol (CBN), tetrahydrocannabivarin (THCV), and hexahydrocannabinol (HHC)) in zebrafish larvae following water-borne 2 µM exposures from 6 to 96 hours post fertilization (hpf). The present study examines the potential psychological and behavioral impacts Almond Moms have on their college-aged children. Previous studies examining how parents influence disordered eating habits found that parental attitudes, specifically maternal attitudes, towards appearance, weight, and dieting are correlated with their children’s likelihood of engaging in disordered eating behaviors. It was hypothesized that college-aged students who report more experiences growing up with an Almond Mom will demonstrate more disordered eating habits and less positive body image.
