Soul Food: An Interpretation Of The History, Significance And Southern Roots Of The American Cuisine, Sarah Bracy Penn

Honors Theses

This thesis is a collection of stories in which I explored several facets of soul food, the cuisine of the American South. It uses soul food as a prism to view the cuisine's connections to race, politics, economics, class, history and social consequences. Rather than write an academic paper, I presented my findings in a series of articles based on live interviews with food historians, culinary writers, entrepreneurs and chefs. I also examined various books, articles and blogs written by these culinary writers. This is not a comprehensive history of the cuisine, nor does it attempt to take sides with …

Does This Have Gluten? Comparison Of Gluten-Free And Unrestricted Diets In Intestinal Bacterial Populations And Diversity, Bradshaw Hammond

Honors Theses

As different diets continue to grow in popularity within the United States, the effect of these diets upon bacteria in the intestines is only beginning to be understood. This study focused on the effect that a shift to a gluten-free diet has on the human gut microbiome. Three genetically close subjects were selected for observation over a six month time period. One subject observed a consistent gluten-free diet. A second subject started on an unrestrictive diet, switched to a gluten-free diet for three months, then returned to an unrestricted diet for an additional three months. The third subject left an …

A Study Of The Impact Of Ph On The Structure And Stability Of Epithelial Cadherin, Catherine Abadie Jan 2015

A Study Of The Impact Of Ph On The Structure And Stability Of Epithelial Cadherin, Catherine Abadie

Honors Theses

Epithelial (E-) cadherin is a transmembrane protein whose function lies in cell-to-cell adhesion. It is a transmembrane component of adherens junctions of epithelial tissues, thereby connecting the actin cytoskeletons of adhered cells. It has five extracellular domains, a small transmembrane portion, and a cytoplasmic tail. The molecule must bind calcium in order to form an adhesive dimer with a cadherin molecule emanating from an adjacent cell. Cancer of the epithelial tissue, carcinoma, is accompanied by acidification of the tissue and a loss in cell adhesion. The long-term goal of this project is to determine the effect of a decrease in …

Brazil has long been linked to violent crime, corruption, and increasing social inequality. It features more homicides than any other country on earth: one in ten people killed around the world each year is a Brazilian (Carvalho, 2015). However, in 2008, Rio's state government began applying a new law enforcement program to rid favelas of gangs and crime before hosting the 2014 FIFA World Cup and 2016 Summer Olympics. Information on the current/future tactics and strategies that Rio will incorporate into …

Standardized Articulation Test Performance Of African American Preschoolers In Mississippi, Emily Ortega Jan 2015

Standardized Articulation Test Performance Of African American Preschoolers In Mississippi, Emily Ortega

Honors Theses

In the past, standardized articulation tests administered by speech-language pathologists (SLPs) have had tendencies to be biased against speakers of a dialect with characteristics that differ from Mainstream American English (MAE). Using these MAE norm referenced tests can cause several problems, including over diagnosing African American (AA) children with impaired speech and language. The purpose of this study is to document the performance of four-year-old African American English (AAE) speakers for their use of age appropriate phonemes regardless of dialect, and whether the presence of AAE affects participants' scores on the following articulation tests: the Arizona Articulation Proficiency Scale-Third Edition …

Visualization Techniques Of Shear Wave Propagation In Wormlike Micellar Fluid, Connor M. Tierney Jan 2015

Visualization Techniques Of Shear Wave Propagation In Wormlike Micellar Fluid, Connor M. Tierney

Honors Theses

In an aqueous solution amphiphilic molecules can self-aggregate and form a wormlike micellar fluid. These non-Newtonian fluids have been studied in the context of diagnostic medical imaging due to the fact that the fluids have viscoelastic properties and can act as a nonperishable model for human tissue. They also display flow-birefringence, which is a property that allows for the analysis of shear wave propagation through the fluid. However, one issue encountered at lower micelle concentrations is the inability to see the emergent birefringence pattern that results from shear wave propagation. In this study Experiment 1 was an analysis of shear …

Estimating The Number Of Components Of A Spatial—Em Algorithm: An R Package, Aishat O. Aloba Jan 2015

Estimating The Number Of Components Of A Spatial—Em Algorithm: An R Package, Aishat O. Aloba

Honors Theses

The Expectation Maximization algorithm also known as the EM algorithm is an algorithm used to solve the maximum likelihood parameter estimation problem. This problem arises when some of the data involved are missing or incomplete, hence it becomes difficult to know the parameters of the underlying distribution. The EM algorithm mainly comprises of two steps; the E—Step, and the M—Step. In the E—Step, estimated parameter values are used as true values to calculate the maximum likelihood estimate, and in the M—Step, the maximum likelihood calculated is used to estimate the parameters. The E—Step and M—Step iterate through until a specified …

Effect Of Biochar And Activated Carbon Amendments On Gaseous Mercury Emissions Of Soil And Mercury Methylation Rates In Sediment, Ryan Sessums

Honors Theses

Mercury is a pervasive global contaminant with a complex biogeochemical cycle. In this biogeochemical cycle, methylmercury (MeHg+) tends to biomagnify and concentrate in fish and seafood consumed by humans. This study examines the effect of sorbent amendments on both the mercury emission from soils and the methylation rates of mercury in sediments, both of which are believed to be major contributors to the global cycle. Biochar and activated carbon were used to treat soils and sediments to explore their effects. It was found that biochar and activated carbon reduced gaseous mercury emission by 25% and 49%, respectively. Methylation rates in …

Effects Of Soil Environment On Abundance, Diversity And Community Structure Of Ectomycorrhizal Fungi In Pinus Radiata, Sarah C. Steele Jan 2015

Effects Of Soil Environment On Abundance, Diversity And Community Structure Of Ectomycorrhizal Fungi In Pinus Radiata, Sarah C. Steele

Honors Theses

Balanced and sustained nutrient cycles are critical to the success of the world's forest ecosystems. Research has shown ectomycorrhizal fungi (ECM) play a vital role in regulating these systems, as they store and mobilize cycled nutrients for the trees they colonize. Not all species of ECM allocate essential nutrients (nitrogen, phosphorous and carbon) to their host with the same efficiency. Studies have shown the soil environment is important for determining fungal distribution. To better understand the ECM fungal community of Pinus radiata, I explored the effects of soil characteristics (percent silt, percent clay, percent sand and soil water content) on …
