Ready-to-eat meat (RTE) products such as hotdogs represent a popular segment in convenience food purchases. Increased demand has led the processors to extend the shelf life by minimizing lipid oxidation and post-processing contaminants such as Listeria monocytogenes. Linoleic acid isomerase (LAI) is the enzyme that converts linoleic acid to conjugated linoleic acids (CLAs) which appear to be capable of lowering cancer risk and enhancing immunity. There is an interest in developing commercial processes for the production of single isomers of CLA by biotransformation of LA using microbial cells and enzymes. However, the evaluation of these strains suggest that growth and LA isomerase production levels by these anaerobes are insufficient to support economic commercial production of single CLA isomers. Italian ryegrass is a principal weed problem in wheat production fields in the Southern US. Resistance to herbicides diclofop, mesosulfuron, and pinoxaden among ryegrass populations has been reported. Glyphosate-resistant Italian ryegrass populations were identified in Desha County, Arkansas. This research aimed to 1) determine resistance patterns to ACCase (diclofop and pinoxaden) and ALS (imazamox, mesosulfuron, and pyroxsulam) herbicides among Italian ryegrass populations from the southern US; 2) determine if cytochrome P450-mediated enhanced herbicide metabolism contributed to resistance; and 3) elucidate the resistance mechanism to glyphosate in four Arkansas populations (Des03, Des05, Des14, and D8). Forty-eight Gelbvieh x Angus steers (265 ¡À 40 kg) were utilized to determine the relationships among molecular breeding values (MBV), steer performance, and carcass traits. Body weight (BW), hip height (HH), hip width (HW), exit velocity (EV; rate at which steers exited the squeeze chute and traversed 1.8 m) and body ultrasound measurements of steers were recorded at d 0, 93 and 154 of grazing mixed stockpiled endophyte-infected and -free tall fescue. The purpose of this study was to evaluate the relationship between standardized content specific mastery assessments and NCLEX-RN outcomes. Three content-specific standardized assessments testing Fundamentals, Pharmacology and Mental Health concepts were used to explain the dichotomous NCLEX-RN outcome of pass or fail. The three assessments were developed by Assessment Technologies Institute, LLC (ATI). The assessments were administered to baccalaureate nursing students (N = 119) during the first year of a nursing program in one public university over a period of five consecutive semesters. The purpose of this study was to examine the effects of smoking on risk factors associated with cardiovascular disease (CVD) and determine the efficacy of antioxidant-rich berries in ameliorating these risk factors in postmenopausal smokers. Menopause and cigarette smoking have been identified as major risk factors for CVD due to a decrease in antioxidant protection, increase in inflammation and oxidative stress, and adverse changes in serum lipids. Antioxidants, specifically flavonoid compounds found in blackberries and blueberries, have been shown to prevent low-density lipoprotein cholesterol oxidation and thus prevent downstream inflammation and oxidative stress. In 1935, the National Poultry Improvement Plan (NPIP) was created to control Salmonella gallinarum and Salmonella pullorum . These two pathogens were devastating economically for poultry producers. Through cooperative efforts using vaccination and strict biosecurity, these two pathogens were eradicated from the United States. Currently, the NPIP program is targeting two other poultry pathogens, Salmonella enterica serovar Enteritidis and Mycoplasma . In the broiler industry it targets 2 specific Mycoplasma species (synoviae, gallisepticum). Hydrolyzing food by-products is a unique approach to potentially increase by-product value and reduce waste. An abundant by-product of cheese production, whey, contains all essential amino acids and some distinctive peptides with functional and nutraceutical properties. Typically, proteins from whey are tailored for specific uses by chemical or enzymatic hydrolysis; however, subcritical water hydrolysis is a novel alternative used successfully to hydrolyze various substrates. Twenty seven perennial species native to the Eastern Temperate Forests Level I Ecoregion were exposed to an acute ozone (O3) treatment consisting of a target peak O3 concentration of 2.0 ppm for 30 minutes in a closed chamber environment, during the summer of 2010. Plants were evaluated for visible foliar injury symptoms and symptoms were described and photographically documented. Ten of the 27 species developed visible foliar injury in which interspecific and intraspecific response to O3 was observed. Because of their simple fruiting bodies consisting of one to a few spores atop a finely tapering stalk, protosteloid amoebae, previously called protostelids, were thought of as primitive members of the Eumycetozoa sensu Olive 1975. The studies presented here have precipitated a change in the way protosteloid amoebae are perceived in two ways: (1) by expanding their known habitat range and (2) by forcing us to think of them as amoebae that occasionally form fruiting bodies rather than as primitive fungus-like organisms. Nitrogen (N) availability in poultry litter (PL) applied in the fall as a nutrient source for winter wheat (Triticum aestivum L.) has not been adequately characterized. Our objective was to determine a potentially available N (PAN) coefficient based on the inorganic-N fertilizer equivalence (FEQ) of fall-applied PL to winter wheat via field and laboratory research. The studies that comprise this thesis were performed in an attempt to identify and eliminate stressful conditions that may lead to infertility in the male bovine. The first project was performed to determine if ergot alkaloids directly affect bovine sperm motility. Percentage of motile spermatozoa was affected (P = 0.015) by a three-way interactions between time, concentration, and alkaloid. Ergotamine and dihydroergotamine decreased (P = 0.01) sperm motility in a concentration and time dependant manner and ergonovine had a minimal effect on overall sperm motility. The number of static spermatozoa also was affected (P < 0.01) by a three way interaction and increased as ET and DHET concentrations increased. Percentages of progressively motile and rapidly motile spermatozoa decreased (P < 0.01) in a two way interaction between alkaloid and concentration. Overall, sperm motility was decreased by ET and DHET. Furthermore, the qualities of motility as represented by progressive, rapid, path velocity (VAP), progressive velocity (VSL), track speed (VCL), beat frequency (BCF), lateral amplitude (ALH), straightness (STR), elongated, and area were decreased by those alkaloids. These data verify that ergot alkaloids commonly found in toxic tall fescue are detrimental to bovine spermatozoa. In the second study two antioxidants (alpha-tocopherol and ascorbic acid) were added to bovine sperm culture media and cryopreservation extender. The antioxidant capabilities of these two vitamins could help reduce free radical production and help preserve sperm viability. There was an interactive effect between ascorbic acid concentration and storage method on the bovine sperm motility characteristics: motile, progressive, rapid, track speed (VCL), and straightness (P < 0.05). A bull by ascorbic acid interaction (P < 0.05) was observed for motile, progressive, rapid, path velocity (VAP), progressive velocity (VSL), and VCL characteristics. Alpha tocopherol had no affects on sperm motility characteristics. Lipid peroxidation was affected (P < 0.01) by bull and ascorbic acid. Malondialdehyde concentrations for ascorbic acid treatments (0, 5, 10, 20 mM) were 3.25, 4.2, 2.96, and 2.15 ìM respectively. Results from the second study indicate that the addition of ascorbic acid may reduce sperm motility, but help prevent lipid peroxidation.

Historically, cranberry juice has been consumed to prevent urinary tract infections. These and other health benefits, including reduced risks of cancer and cardiovascular disease, are believed to be due to the presence of polyphenolics, specifically flavonoids. Cranberry pomace is the by-product of cranberry processing which consists of seeds and skins. This research focuses primarily on the effects of processing on the flavonoid composition of cranberries and cranberry pomace. First, the concentration of flavonoids during juice processing was evaluated. A series of experiments were conducted to determine the effects of on-arrival vs. delayed respiratory vaccination and exposure to persistently infected bovine viral diarrhea virus challenge on health, gain performance, and physiological and immunological measurements in newly received stocker cattle. Two experiments evaluated timing (d 0 vs. 14) of respiratory, clostridial, or both vaccinations in newly received stocker calves during stress-induced immunosuppression. The lesser mealworm, Alphitobius diaperinus (Panzer) (Coleoptera: Tenebrionidae), is a serious, cosmopolitan pest present in poultry production facilities, where it slows down weight gain in chicks, carries disease–causing organisms, and causes damage to poultry insulation. The first study estimated that the lesser mealworm densities in poultry litter applied to pastures were 3.5, 2.2 and 0.4 million larvae, adults and pupae, respectively, per hectare in Savoy, Arkansas. The repercussions of these adult beetles are that they often disperse to and reinfest poultry houses with the potential to vector disease to poultry, and disperse to invade human dwellings resulting in litigation.
