To research the antioxidant chemical mechanism of theaflavin, the antioxidant activities of theaflavin were measured in vitro using several chemical models, including DPPH· (1,1-diphenyl-2-picryl-hydrazyl) scavenging, ABTS+· \[2,2’-azino-bis (3-ethylbenzthiazoline-6-sulfonic acid)\] scavenging, and Cu2+-reducing power assays, which was compared with the positive control Trolox. In these assays, theaflavin along with positive control Trolox exhibited dose-dependently antioxidant abilities. The relative antioxidant levels of theaflavin vs Trolox (i.e. IC50,Trolox/IC50,theaflavin value) were calculated as 2.57, 3.13 and 3.74, respectively for DPPH·-scavenging assay, ABTS+·-scavenging assay, and Cu2+-reducing power assay. The contents of total phenolics, flavonoids, ascorbic acid, glutathione and carotenoid were examined in five different processed and utilized parts, which were peels, pulps, juices, pomaces and seeds. The optimum extraction process of inorganic selenium was determined by single factor and response surface design. Combining with total selenium and inorganic selenium contents, analyzed the ratio of organic selenium in various parts. Results indicated that there were significant differences in the contents of these functional nutrients, while the peels had the highest contents. The fatty acids composition and relative content were analyzed by gas chromatography-mass spectrometry (GC-MS), which were extracted from the mycelia of Stropharia rugoso-annulata Farlow apud Murrill strains Gaoyou, Zhaoyang and Tufei. The results showed that 15 kinds of saturated fatty acids and 18 kinds of unsaturated fatty acids were found in Gaoyou and Zhaoyang mycelia. The fatty acids composition in Tufei mycelia consisted of 11 kinds of saturated fatty acids and 17 kinds of unsaturated fatty acids, which were less than those in Gaoyou and Zhaoyang mycelia. Fresh rice noodles at the different temperatures(4, 25, 37 ℃)during 0~30 h storage, the total plate count (TPC), textural properties, cooking properties, color and sensory properties were analyzed. The effects of fermented and unfermented Ziziphus jujuba polysaccharide on the physical fatigue alleviation in mice was investigated in this study. 56 male SPF class Kunming mice were fed with different doses of polysaccharides, and their body weight, exhaustive swimming time and related anti-fatigue evaluating indexes were measured after treated for 4 weeks. Tests showed that, compared with the normal control group, the mice fed with the polysaccharides from fermented and unfermented Ziziphus jujuba had a prolonged exhaustive swimming time. In this study, we established multicomponent trans-fatty acids(TFAs) synchronous detection method, and on this basis the content of various components of TFAs from 38 batches of commercial infant formula farina was investigated. The results showed the average content of TFAs in infant formula farina was 0.749 3 mg/g, and the overall content was low. The TFAs total content was within a range of 0.04~1.0 mg/g in approximately 76.3% of samples. The main component was C18:1-11T, C19:1-7T, C18:3-9T/12T/15T, C18:1-9T and C18:2-9,12TT. The inductively coupled plasma mass spectrometry (ICP-MS) combined with microwave digestion was employed in this study for the determination of forty five elements in Yingde black tea. The results showed that 45 elements had good linearity and correlation coefficients all greater than 0.999 5. The limits of detection (LODs) were ranged from 0.000 1 to 20.090 0 μg/L. The recovery rates were between 82.58% and 119.19% with the relative standard deviations (RSDs) of 0.20%~7.03%. The RSD of all the elements except Sb was 0.15%~9.14% in precision experiments. The kiwifruit pollen polluted by Psa(Pseudomonas syringae pv.actinidiae)in Shaanxi Zhouzhi was treated with solutions of ClO2, Benziothiazolinone and Kocide, and the effects of them on the sterilization rate of Psa, pollen viability and the impacts on fruit yield, single fruit weight and seed number were investigated. The results showed that after treating the kiwifruit pollen with ClO2, Benziothiazolinone and Kocide, the bactericidal rates of Psa were 99.7%, 99.6% and 99.4%, and the pollen viability was 62.2%, 50.1% and 51.2%, respectively. This paper studied composition and antioxidant activity of different solvent extracts from Termitomyces albuminosus. The total flavonoids, total phenols, ergosterol and adenosine of eight kinds of different polar solvents extracts were determined by spectrophotometer and liquid chromatography. In addition, measured the antioxidant activity by scavenging DPPH·, ABTS+·, hydroxyl radical, total antioxidant and total reduction ability. Extracts in distilled water had the highest rate of the yield; contained the highest content of total phenolics and adenosine in different sovlents; the highest content of ergosterol was in methanol extract. Based on water absorption and bean paste rate (dry matter), the soaking and cooking process of red adzuki bean were optimized. Then, the dynamic changes of main nutritional and functional components during the process were tracked. The results showed that the water absorption of red adzuki bean was the highest (94.67±1.29)% under the soaking temperature of 45 ℃ and soaking time of 12 h. The bean paste rate was the highest (65.69±0.68)% to be cooked at 110 ℃ for 40 min with a solid-to-solvent ratio (soaked red adzuki bean:water) of 12 (g/mL). Chicken bone contains plenty of various nutrition, however the efficiency of direct use is relatively low. The enzymatic hydrolysis with protease can significantly increase the efficiency. In the present study, an enzymatic hydrolysis process on chicken bone paste with double-enzyme combination was developed. By the orthogonal test analysis, the optimal process parameters were as follows. Mycotoxin contamination caused by Zearalenone (ZEN) and Ochratoxin A (OTA) is widespread for being prone to happen and hard to degrade. In this paper, the effects of ozone and electron beam irradiation (EBI) on the degradation of Zearalenone and Ochratoxin A were investigated. After 10 s of 2.0 mg/L ozone treatment, the ZEN content decreased from 50 μg/mL to concentration undetectable. After 12 kGy of EBI, the degradation rate of ZEN was up to 86% and concentration of ZEN within 0.5~5.0 μg/mL had no significant different (P<0.05), with the degradation of ZEN being faster in acetonitrile than methanol. The acetylated starches from corn were prepared under ultra high pressure (UHP) by acetic anhydride as reaction reagent, and NaCl as the reaction medium. The structure and properties of acetylated starches were analyzed by using light microscope, X-ray diffractometer and rapid viscosity analyzer. The results indicated that the granular acetylated starch showed a similar crystallite structure as that of native starch. In addition, the acetylated starches were gelatinized when treated at 600 MPa and the structure of starch granules was gradually destroyed, whereas the crystal structure was transformed from the A-type crystallite to the V-type crystallite. The ultrasonic-assisted ethanol-ammonium sulfate aqueous two-phase system was adopted to extract polyphenols from finger millet. The extraction process was optimized by single factor test and response surface analysis, polyphenols yield as the index. The results showed that the optimum extraction process was determined as follows: ethanol volume fraction of 41%, ammonium sulfate concentration of 0.3 g/mL, ultrasonic temperature of 42 ℃, liquid-solid ratio of 60 mL/g, and treated for 29 min. In order to prepare original material for developing low phenylalanine special food, the peanut protein was degraded by Alcalase2.4L and papain, the hydrolysis by Flavourzyme and the removal of phenylalanine by activated carbon were determined by signal and orthogonal tests separately. The optimal parameters were found to be hydrolysis temperature 50 ℃, pH 6.5, enzyme/substrate 3 500 U/g and time 5 h, which resulted in a content of free phenylalanine of 28.65 mg/100 mL in hydrolysates. In order to study the effects of common high temperature treatment methods such as pan-frying, frying and broiling on eating quality of meat. pork, chicken and duck were used as research object. The meat color, texture profile analysis and shear force were determined to evaluate the eating quality. Results indicated that pan-frying, frying and broiling had a significant influence on the eating quality of all the samples (P<0.05). Interactions between Streptococcus salivarius and Streptococcus mutans play important roles in the development of dental biolms in oral cavity. S. salivarius BD3900, isolated from the oral cavity of a healthy voluteer, displayed the potential to be an oral probiotics in vitro. Strong hydrophobicity (95.8%) and high surface charges(≥88.6%) endure the strain to be easily adhered in oral cavity. The strain BD3900 was tolerant to 100 μg/mL lysozyme(2.0×104 U/mg), indicating the high ability for the strain to survive in oral cavity. The physicochemical characteristics and digestibility of native starch from Dioscorea opposite Thunb. cv. Huaiqing and its resistant starch produced by autoclave process preparation method have been analyzed and compared in the paper. Results showed that the shape of native starch granules from Dioscorea opposite Thunb. cv. Huaiqing was irregular ellipsoid and triangle with a smooth surface. The crystal form of naitive starch was type C. Resistant starch losing particle characteristic exhibited a lamellar structure with loose surface. The ice-temperature vacuum drying processing dose little damage to the nutrition of food products, and helps to preserve their high quality. However, the precise control of ice-temperature is difficult in this field. On the basis of analyzing the principles of ice-temperature vacuum drying process and the features of drying equipment, the ice-temperature vacuum drying system with improved control flow was set up and the experiments with the sample of white radish wear were carried out.
