A curious, but important, relationship exists between the social history of a particular age and the imaginative literature of the same period. The writings in both areas become major sources of knowledge about that era for readers in future generations. The following thesis is the outgrowth, in part, of this interest – an examination of the concept of the flapper in the early works of F. Scott Fitzgerald. Condemnation of abscessed portions of swine and beef carcasses is an important economic problem to the meat packing industry and, consequently, to the individual stock producer. The Meat Inspection Division of the Agricultural Research Service of the U.S. Department of Agriculture, in its summary of activities from 1955 through 1969 (2), reported that the numbers of abscessed portions from cattle and swine have increased (Table 1 and Figure 1). In this 10-year period the number of abscessed parts condemned in swine increased from 1.4% (1,397,248) of the animals slaughtered to 3.9% (2,660,522). During the same period of time the number …

The structure of the livestock industry in the United States has undergone change in the past three decades. Integration, scale economies, changed eating habits, production and processing innovations, decentralization and increased demand for service have all affected the market structure. During this change, however, livestock auctions have remained important outlets for marketing livestock. Since the establishment of the first auction at Yankton in 1930, livestock auctions in South Dakota have become increasingly important.1 By 1937 the number had increased to 34. The evolution of hydrogen sulfide by microorganisms has been studied for many years. Until recently, most of the research was in the taxonomical and clinical areas. Much work was done to perfect a cultural medium capable of demonstrating hydrogen sulfide production, using this characteristic to distinguish between groups of organisms. Triple sugar iron agar, Kliglers, lead acetate agar, urea agar base concentrate, and peptone iron medium used today. Relationships between red foxes (Vulpes fulva) end their principal prey, particularly ring-necked pheasants (Phasianus colchicus), were studied on four units in eastern South Dakota from December 1964 to September 1966. Each unit was composed of a 100-square-mile "reduction area," on which fox populations were reduced, and a 100-square-mile "check area," on which fox populations were not reduced for the study. Indices to populations of foxes, pheasants, mice, eastern cottontails (Svlvilagus floridanus) and whitetail jackrabbits (Lepus townsendi) were obtained and used to evaluate food habits and the effect of predator reduction on prey populations. From 1962 through 1966, 1,401 plains sharp-tailed grouse (Pedicecetes phasianellus jamesi) and greater prairie chickens (Tympanuchus cupide pinnatus) were trapped in Gregory and Lyman Counties in south-central South Dakota. Cannon-projected nets and funnel traps were used to capture prairie grouse on breeding grounds and winter baitsites. Some birds were marked with backtags and leg-markers. Movement information was obtained from field observations, hunter reports, sharp-tailed grouse collections, and by recapturing banded birds. Male birds moved less than two miles from winter baitsites to breeding areas; most movements over five miles were made by immature female birds. Seventy-seven percent of the hunter …

Curd formation in a cultured dairy product is brought about by the addition of a bacterial culture capable of producing lactic acid from lactose. The primary function of this culture is to produce sufficient lactic acid to cause coagulation of the caseinate system of skimmilk. A secondary function of the culture is the production of flavor compounds considered to be desirable in these products. The flavor compounds produced by the normal growth of citric acid fermenting organisms are water soluble, and are largely removed during washing of the Cottage cheese curd. Many authorities believe that prophylactic treatment of idiopathic hypercholesterolemia will prevent atherosclerosis and plaque formation which almost always precedes clinical arteriosclerosis and subsequent degenerative heart disease. There has been intensive research investigation initiated to provide a pharmacologic agent that will lower elevated serum cholesterol levels in mammals including humans. Several hypocholesterolemic drugs are being tested at the present time, one of the most promising is the dextro-rotary isomer of thyroxine. A series of experiments was conducted using lambs and rats to determine the effect of various levels and sources of dietary phosphate on the incidence of phosphatic urinary calculi. Additional experiments were conducted to determine the degree of protection afforded sheep against urolithiasis by feeding various salts, and to determine the effect of these salts on excretion and retention of various ions. The lambs used in the sheep experiments were crossbred lambs weighing approximately 30 to 33 kg. There were 1,642,000 beef cows in South Dakota on_ January 1,1967, which was 14 percent higher than the 1961-65 average (South Dakota Crop and Livestock Reporting Service, 1967). These cows were valued at $307, 054, 000, a 27 percent increase over the 1961-65 average. There were 390, 000 head of cattle and calves on feed on January 1, 1967, a 33 percent increase over 1961 and a 22 percent increase over the 1961-65 average. The sale of cattle and calves has accounted for 44 percent of the cash farm income in South Dakota for the period 1958-65 and is the …

Selenium is of interest to the animal nutritionists and to the biochemist from two standpoints. In some areas of the world it occurs in soils in excesses, and the plants growing in these soils contain levels of the element that are toxic to livestock that consume the plants. Pen studies to determine the effects of dieldrin on reproduction of the hen pheasant were conducted for two breeding seasons, Hen pheasants were caged individually and administered encapsulated dieldrin at weekly intervals. The first season, treatment levels were 0, 2 or 4 mg of dieldrin per hen per week. Hens receiving 4 mg weighed more and laid heavier eggs than the controls. However, these differences were not attributed to the effects of dieldrin, but to the condition of the hens when first treated. Hatchability of eggs from the 2 mg group was significantly higher for an undetermined reason. Feed consumption, …

At the South Dakota State University Dairy Science Department, a challenging work is being conducted to develop a new spread type· dairy product which is made almost entirely of dairy ingredients. It contains about 40% fat, 6% protein, 40% water, and 1.9% salts. Among the problems which faced the workers on this project were the process induced changes in the protein and the water holding capacity, which are interlinked. The problem of water holding capacity is increased by the high water content of the product compared with butter, which contains about 16% water. Maintaining the stability of the fat emulsion …

The income level of the farmer in Faulk County depends on the quantity and quality of the resources controlled and the efficiency achieved in utilizing these resources. The level of farm income in Faulk County is often inadequate to meet both the requirements of the farm firm and the needs or desires of the operator and his family. Herman Melville and Henry David Thoreau are two of the most original American authors who appeared during the first half of the nineteenth century. Although the writings of both Melville and Thoreau have been examined extensively in scholarship, little has been done in the way of attempting a comparison of their work. In fact, Melville and Thoreau was an avowed member of the Transcendentalist movement, which Melville openly opposed.1 There are, indeed, many dissimilarities between the two writers. Lipid Mobilization In Beef And Rabbits As Affected By Marketing-Induced Stress Or Acth-Induced Stress, John R. Romans

The effect of stress on intramuscular and plasma lipids was studied in rabbits and beef. Nine mature rabbits were subjected to a constant infusion of ACTH (1.5 mU./min./kg.). Four rabbits completed a 12 hour treatment and two completed an 11-hour treatment. The remaining three rabbits survived treatments of 6, 4, and 2 hours. Blood samples taken at 0, 1, 3, 6, 9 and 12 hours or immediately upon death if it occurred before 12 hours. Initial and final muscle biopsies were taken from the longissimus dorsi directly posterior to the 13th rib on right and left sides, respectively. The stress …
