The aim of this study was to investigate the effect of partial replacement of wheat flour with riceberry flour and unripe papaya flour on the physicochemical, functional properties and sensory evaluation of crackers. In the current study found that partial substitution of wheat flour with 5, 10, 15 and 20% riceberry flour (5, 10, 15 and 20%RBF) resulted in significantly increased in hardness and redness together with a decreased fracturability, lightness and yellowness of crackers. ปลากะพงขาวเป็นปลาเศรษฐกิจที่สำคัญของประเทศไทย เกล็ดปลากระพงถือเป็นของเสียจากอุตสาหกรรมแปรรูปอาหาร ซึ่งมีประมาณร้อยละ 4 ของน้ำหนัก เกล็ดจากปลากะพงขาวน้ำจืดที่ผลิตในประเทศไทยมีองค์ประกอบโดยน้ำหนักแห้งเป็นสารอนินทรีย์ร้อยละ 53.61 และสารอินทรีย์ร้อยละ 46.39 สภาวะที่เหมาะสมในการสกัดเกลือแร่โดยรักษาความคงตัวของโปรตีนคอลลาเจนที่อยู่ในเกล็ดปลา ระดับห้องปฏิบัติการ เริ่มจากการเตรียมเกล็ดปลาด้วยการล้างด้วยโซเดียมคลอไรด์ร้อยละ 10 ตามด้วยโซเดียมไฮดรอกไซด์ 0.1 โมลาร์ เพื่อกำจัดโปรตีนที่ไม่ใช่คอลลาเจนและไขมันออกโดยใช้ปฏิกิริยาไฮโดรไลซิส เกล็ดปลาถูกตัดให้มีขนาด 0.0625 ตารางเซนติเมตรและทุบให้แตกเพื่อเพิ่มพื้นที่ผิว จากนั้นจึงสกัดเกลือแร่โดยใช้กรดไฮโดรคลอริกความเข้มข้น 1 โมลาร์ เป็นเวลาอย่างน้อย 6 ชั่วโมง แล้วสะเทินกลับเกลือแร่ด้วยการปรับพีเอชของสารละลายเป็น 7 ด้วยโซเดียมไฮดรอกไซด์ และล้างโซเดียมคลอไรด์ที่เกิดจากการสะเทินด้วยน้ำปราศจากไอออนจำนวนมาก ผลจากวิธีการสกัดนี้ได้เกลือแร่ร้อยละ 52.97 โดยน้ำหนักแห้ง เกลือแร่นี้ถูกนำไปให้ความร้อนที่อุณหภูมิ 1100 องศาเซลเซียส ทำให้เกิดแคลเซียมออร์โทฟอสเฟตวัฏภาคผสมระหว่างไฮดรอกซีอะพาไทต์และเบต้า-ไตรแคลเซียมฟอสเฟต ซึ่งพบปริมาณเบต้า-ไตรแคลเซียมฟอสเฟตสูงสุดร้อยละ 79.85 เมื่อเปลี่ยนพีเอชของสารละลายในกระบวนนการสะเทินกลับเกลือแร่ให้มีความเป็นด่างมากขึ้น จะทำให้เกิดวัฏภาคเบต้า-ไตรแคลเซี่ยมฟอสเฟตน้อยลง แคลเซียมออร์โทฟอสเฟตที่ผลิตได้ไม่แสดงความเป็นพิษต่อเซลล์ผิวหนังหนู (L929) เมื่อทดสอบตามมาตรฐาน ISO10993-5 แบบทางอ้อม

Tyrosinase is the key enzyme in melanogenesis leading to skin darkening. Many skin whitening products contain tyrosinase inhibitors or extracts that inhibit tyrosinase activity. Moreover, natural extracts are one of the most popular alternatives. They are safe and have less side effects. To determine the effects of plant compounds on melanogenesis, tyrosinase activity was evaluated in in vitro and cellular screening. Melanin level was measured in B16F10 melanoma cells. In addition, the gene expression level of melanogenesis-related genes was explored by quantitative reverse transcriptase polymerase chain reaction. The pH-sensitive films and resin were developed based on natural pH-sensitive coloring agents and biocompatible polymers. Anthocyanins and a curcumin derivative were selected as the natural pH-sensitive coloring agents. At first, anthocyanins were extracted from red radish and their contents were determined by using the pH-differential method. Difluoro boron curcumin was synthesized to improve its photophysical and stability properties. Next, both coloring agents were characterized by UV-Vis, FT-IR, and NMR techniques as well as their color response in solution was studied in different pHs with UV-Vis profiles. การวิจัยเรื่อง “การสื่อสารยุคดิจิทัลกับพฤติกรรมการดูแลสุขภาพของพนักงานการท่าเรือแห่ง ประเทศไทย เขตคลองเตย จังหวัดกรุงเทพมหานคร” มีวัตถุประสงค์เพื่อศึกษาพฤติกรรมการดูแลสุขภาพกับการใช้สื่อสังคมออนไลน์ด้านสุขภาพของพนักงานการท่าเรือแห่งประเทศไทย และศึกษาปัจจัยการใช้สื่อสังคมด้านสุขภาพที่มีความสัมพันธ์กับพฤติกรรมการดูแลสุขภาพของพนักงานการท่าเรือแห่งประเทศไทย เขตคลองเตย จังหวัดกรุงเทพมหานคร ที่ใช้การวิจัยแบบผสมผสาน(Mixed Method) คือ วิจัยเชิงปริมาณและวิจัยเชิงคุณภาพ โดยการสำรวจด้วยแบบสอบถามออนไลน์ จำนวน 100 ชุด สถิติที่ใช้ประกอบด้วยสถิติเชิงบรรยาย (Descriptive statistics) ได้แก่ สถิติค่าความถี่(Frequency) ค่าร้อยละ(Percent) ค่าเฉลี่ย(Mean) และค่าเบี่ยงเบนมาตรฐาน(Standard deviation) สถิติเชิงอนุมาน (Inferential statistics) ได้แก่ การทดสอบค่าเฉลี่ยของกลุ่มตัวอย่างสองกลุ่มที่มีความเป็นอิสระต่อกัน(Independent Sample T-test) การวิเคราะห์ความแปรปรวนทางเดียว(One way ANOVA) การวิเคราะห์ค่าสัมประสิทธิ์สหสัมพันธ์แบบเพียรสัน(Pearson’s Correlation) และการวิเคราะห์ค่าสัมประสิทธิ์สหสัมพันธ์แบบสเปียแมน(Spearman’s Correlation) ผลการเก็บข้อมูลจากการสำรวจจากกลุ่มตัวอย่าง จำนวน 100 คน พบว่า พนักงานการท่าเรือแห่ง ประเทศไทยส่วนใหญ่เป็นเพศหญิง ช่วงอายุ 30-39 ปี มีการศึกษาในระดับปริญญาตรี ส่วนใหญ่มีรายได้ต่อเดือนตั้งแต่ 20,001-30,000 บาท และผู้ตอบแบบสอบถามส่วนใหญ่ไม่มีโรคประจำตัว คิดเป็นร้อยละ 78 ผู้ตอบแบบสอบถามส่วนใหญ่ใช้สื่อสังคมออนไลน์เพื่อรับข้อมูลข่าวสารด้านสุขภาพผ่านสื่อเฟซบุ๊ก(Facebook) คิดเป็นร้อยละ 86 ส่วนการรับข้อมูลด้านสุขภาพผ่านสื่อออนไลน์ของหน่วยงานการท่าเรือฯ ส่วนใหญ่รับสื่อผ่านช่องทางไลน์(Line) จากหน่วยงานสำนักแพทย์และอนามัยการท่าเรือแห่งประเทศไทย ได้รับประโยชน์ด้านความรู้เบื้องต้นในการดูแลสุขภาพและสังเกตความผิดปกติของตนเอง ผู้ตอบแบบสอบถามส่วนใหญ่มีระดับพฤติกรรมการดูแลสุขภาพด้านการป้องกันโรคอยู่ในระดับสูง ผลการวิจัยพบว่า ปัจจัยส่วนบุคคลด้านเพศ อายุและรายได้มีความสัมพันธ์ทางบวกกับพฤติกรรมการดูแลสุขภาพด้านการป้องกันโรคอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 ทัศนคติการรับข่าวสารด้านสุขภาพผ่านสื่อออนไลน์มีความสัมพันธ์ทางบวกกับพฤติกรรมการดูแลสุขภาพด้าน การจัดการความเครียดอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 และความถี่ของสื่อสุขภาพออนไลน์ของหน่วยงาน การท่าเรือฯที่กระตุ้นให้มีการดูแลสุขภาพมากขึ้นมีความสัมพันธ์ทางบวกกับพฤติกรรมการดูแลสุขภาพด้านการจัดการความเครียดและการป้องกันโรคอย่างมีนัยสำคัญทางสถิติที่ระดับ .05

This study investigated the development of the spray-dried encapsulated curcumin powder from an oil-water-emulsion with better functional properties and evaluated its stability characters during storage and reconstitution. This research was conducted in four parts. The first part was the selection and optimization of curcumin solubility in edible oil. It was found that MCT oil was the best carrier oil with curcumin solubility of 17.01 mg/mL, which was achieved by heating at 80oC for 10 min. Recently, an in situ gelation, which is a rapid sol-to-gel transition under mild conditions, has been employed, allowing an entrapment of cells or substances in 3D structures as well as tailorable geometries and point-of-care uses. Silk fibroin (SF), a natural polymer from Bombyx mori silkworm cocoons, was chosen in this study as a substrate for the in situ hydrogel fabrication, due to self-assembly characteristic and a presence of modifiable functional groups. A novel multiplex PCR (mPCR) was developed to identify and differentiate malaria parasite (Plasmodium caprae), and two piroplasms (Babesia bigemina and Theileria luwenshuni) in Thai goats. Three pairs of primer were designed to be species-specific, targeting cytochrome c oxidase subunit I (COI) gene in mitochondria. Plasmids containing each parasite’s DNA was serially diluted to evaluate the sensitivity of singleplex and mPCR assays. The specificity of the primer sets was confirmed by testing for amplification from DNA of each pathogen and other related hemoparasites. In this study, composite sponges of natural rubber and cellulose (NR-C) with various compositions were synthesized. Diabetes and diabetic nephropathy are two noticeable disorders in modern life. Chalcones are considered as a feasible candidate for these medication disorders due to the capability to activate AMPK relating to these two diseases. Hyaluronic acid (HA) is a biopolymer of disaccharide with two alternate glycosidic bonds, β(1,3) and β(1,4). It has a wide-range of applications in medicine, nutrition and cosmetics. A molecular dynamics (MD) study in aqueous condition presented here unveiled conformational variability in association with the flexibility of the glycosidic linkers, which depends on the number of disaccharide units. HA chain maintains a rigid rod-like conformation with short chain lengths i.e. with 1 to 10 disaccharide units. World’s population of older people is rising, dietary supplements promoting healthy lifespan are needed. Moreover, Alzheimer’s disease (AD), an age-related degenerative disease, becomes a public health problem in aging society. Recent reports using cell culture models of AD suggest that amyloid precursor protein (APP), a protein causally related to AD, plays an important role as an inhibitor of neurite outgrowth. Medicinal herbs with neurite outgrowth stimulatory effect may help to prevent and cure AD. Facebook users worldwide had been facing challenges of information credibility. This study aimed to address this issue among Thai Facebook users by focusing on health information in particular, through a lens of heuristic approach. Data were collected from 50 informants by in-depth interviews and 480 responses from online surveys. All participants were at least 18 years old with a minimum of one year experience in using Facebook. The objective of this study was to evaluate and compare the antioxidant activity and tyrosinase inhibition activity of Murraya paniculata (Linn.) Jack leaves extract (MPE) obtained from different extraction solvents for the use of cosmetic purposes. The result showed that 75 % ethanolic extract presented the highest antioxidant activity (IC50 = 1.43 mg/mL), the total phenolic content of 66.12 mg GAE/g and the total flavonoids content of 7.83 mg QE/g. Interfering of these protein-protein interactions has been shown to reduce or inhibit biological and growth responses to various growth factors and hormones.
