Whole milk acidified to pH 5.3 with hydrochloric acid was used for the manufacture of Monterey cheese. The milk was inoculated with one and one-half percent lactic starter and set with 12.5 ml rennet per 1000 pounds of milk. Normal washing treatments resulted in cheese with moisture in excess of 44 percent. Moisture content was brought below 44 percent by using wash water at a temperature such that the water-curd-whey mixture was 35 C. The pH of cheese made by preacidification was all between 5.21 and 5.09. No acid defects were encountered. Preacidification eliminated chance of spoilage or losses caused …

Effect of added calcium ions on the relative milk clotting activities of porcine pepsin, Mucor miehei protease, Endothia parasitica protease, and Mucor pusillus protease was compared with that of rennin. Skimmilk, maintained at pH 6. 3 with 0.000% to 0.030% added calcium chloride, was used as a substrate. The coagulation activity of Mucor pusillus protease appeared to be most sensitive to calcium ions, followed by Mucor rniehei protease, porcine pepsin, rennin, and Endothia parasitica protease. The clotting activities of Mucor pusillus protease were also more sensitive than rennin to added calcium ions in milk samples maintained at pH values of …

The purpose of this thesis is to identify and discuss various popular images of the Mormon women of Utah between 1852 and 1890, the period during which the Latter-day Saints openly practiced plural marriage. The phrase "in the toils" refers to the basic image present in the minds of many Americans--that the women of the church were an oppressed, unhappy, enslaved group of individuals. This image, expressed in different ways, is found in many published writings of the period examined.

After demonstrating the presence of this "in the toils" image, this study then attempts to analyze and evaluate its significance. …

The effects of herbicidal spraying upon a North Central Utah blue grouse population were studied. Baseline data were obtained in 1970 and 1971 prior to the spraying on June 2, 1972. The spraying was done to control wyethia (Wyethia amplexicaulis) and black sage (Artimesia nova) which covered 48 percent and 20 percent of the study area respectively.

No differences in blue grouse numbers occurred following spraying with 17 to 20 broods using the area in 1972 compared to 18 to 20 broods in 1971. Total population of blue grouse each year was between 90 and 104 …

In-stream concrete structures were studied through model tests and river tests. The model studies indicated that four designs provided good habitat in the model stream. These structures were the inverted weir, the "V" structure, the slab with legs and the cylinder. Through the river studies it was determined that these structures did not influence enough of the total river area to be effective in providing good fish habitat. Also an appreciable amount of yearly maintenance would be required to free the structures from silting in, debris, and vandalism. The slab with legs was the only promising structure.

A study was made to compare the protein and forage yield and root dry weight data of five pasture mixtures as influenced by two clipping frequencies (28 and 35 day clipping intervals), three irrigation intervals (1 inch every 5 days, 2 inches every 10 days and 4 inches every 20 days) and four levels of nitrogen fertilization (0, 50, 100, and 200 pounds per acre). The purpose of this study was to determine the physiological responses of subjects to an initial psychological interview, and to study the effect of physical proximity and touch on these responses. Heart rate and total skin conductance variability were the responses monitored. To assess the subjects' like or dislike of the psychologist interviewer, a measure of interpersonal attraction, the Interpersonal Judgment Scale, was employed. The California Psychological Inventory was utilized to investigate possible personality correlates with the physiological responses.

This study evaluated the use of a token, operant conditioning technique as a treatment procedure in a group setting with chronic, hospitalized, psychiatric patients. Fifteen patients were randomly assigned to two experimental groups and to one control group; each group included five patients. The two experimental groups received tokens during phases of contingent reinforcement for "Therapeutic Responses" and under a yoked-control phase of non-contingent token reinforcement; the sequence of these phases was the major difference between the two experimental groups. The control group met under conditions of no tokens, and the frequency of "Therapeutic Responses" was recorded on those subjects. …

The primary purpose of this study was to compare the relative effectiveness of two group counseling methods, a self-directed behavior change group and an experiential growth group, for increasing inner-directedness as measured by Shostrom's Personal Orientation Inventory, in college students who were differentiated, on the basis of a pre-treatment measure of inner-directedness, into internals and externals. A second goal was to compare the overall outcome of each method with a no-treatment control group.

The purpose of this research was to develop and test a group of predictors that could be used by fundraisers to determine potential corporate support for environmental and recreational programs. Local surveys were conducted to determine environmental and recreational needs for Cache Valley and twenty interviews were held with local corporate managers. The information gathered in these interviews and the literature review provided a list of approximately 20 variables which were narrowed down to 10 to predict both the potential for giving and the level of giving.

Rats given L-Ascorbic Acid in their drinking water prior to and during starvation did not develop severe ulceration in the glandular portion of their stomachs. Control rats which were either nontreated or given deactivated L-Ascorbic Acid developed severe stomach pathology on the starvation regimen.

The present study was based on the finding that food deprivation results in severe rumenal ulceration in rats. Given that L-AA is essential in maintaining tissue integrity and that ulcers are examples of tissue degeneration, the L-AA in large amounts could retard, or prevent, the formation of starvation induced stomach ulcers in rats.

The purpose of this thesis was to compare the results from two vocational interest blanks, the Job Activity Preference Questionnaire (JAPQ) and the Strong Vocational Interest Blank (SVIB) in the prediction of grade point averages (GPA) for university students. An investigation was also made to determine if the variable vocational interest would contribute to a multiple r composed of American College Test (ACT) scores and GPA.

Ground turkey samples were prepared with different fat levels, fat types, percent mechanically deboned meat and grind. All samples were analyzed at three different time-intervals. Samples were evaluated by chemical, sensory, and physical measurements, in term of stability, water content, fat content, press fluid, water loss, flavor, texture, and hedonic values. Significant differences were determined by analysis of variance.

Coarse ground (5/8") samples showed significantly higher TBA numbers, fat content, total loss, and juiciness. Water content, flavor scores, amount of press fluid, texture scores, and hedonic scores were lower when compared to the fine and medium ground samples.

Salt soluble extracts from mechanically deboned mutton were significantly higher (P < .01) in pH than the extracts from the hand boned mutton. An associated trend toward greater extractability, however, was not significant. Variation in emulsifying capacity between extracts from carcass parts were highly significant yet significant variation did not occur in the emulsifying capacity of hand versus mechanically deboned mutton. A new term, extractable- emulsifying capacity is presented which incorporates the extractability and emulsifying capacity of meat extracts into one value which should more accurately estimate the contribution of a meat ingredient in forming a stable sausage emulsion.

Salami, utilizing mutton, was formulated from experimental results which indicated that up to 10 percent mutton fat and 68 percent mutton lean was acceptable to panelists. Pork was preferred to beef for use in combination with mutton as determined by panel scores, however disagreement was noted between panelists. Panelists were unable to detect flavor, moisture or texture differences between the final mutton salami and a commercial beef and pork formulation. They did however prefer the appearance of the mutton salami (P < .05).

Dietary calcium has been classified as one of the minerals frequently limiting in the American diet (FAO, 1962) . Bone demineralization has been observed as a result of calcium deficient diets (Salomon et al., 1972), partial gastrectomies (Eddy, 1971) and inadequate hormonal balance (Albright et al., 1948). Although bone demineralization, or osteoporosis, has been attributed to many factors, the interrelationship of gastric acidity and the utilization of dietary calcium may be a key to the etiology of osteoporosis.

The ability of gibberellic acid to counteract the toxic effects of these chemicals on germination and seedling growth was studied. Chemical composition of the treated and untreated seeds was made with special attention to starch and protein degradation. Test procedures were developed for measuring the residual milk clotting activity of a protease produced by Endothia parasitica in curd and whey separated from freshly coagulated milk. A substrate was prepared by reconstituting 6 g low heat nonfat dry milk in 500 ml buffer containing 50 ml 0.5M cacodylic acid, 50 ml 0.2M CaCl2 , 30 ml 0.2M triethanolamine and 370 ml double distilled water. Economic and environmental inventory and evaluation were made of Utah recreational subdivisions filed with the state from 1962 through 1972. Major data were collected from standard subdivision questionnaires, filed by developers with Utah Real Estate Division, Department of Business Regulation. Study included 62,716 lots, 238,004 acres, and a value, in terms of developers' projected gross sales, of $211,836,550 in 1972 dollars.

Spraying with the chemical herbicide 2,4-D is the most widely used method of controlling big sagebrush. Spraying is very effective in increasing forage production and generally is not poisonous to either man or animals.

Two procedures can be used to calculate the internal rate of return to big sagebrush control: standard and modified discounting. Standard discounting assumes all nonuse costs are incurred in the year of treatment, and the annual income stream is constant throughout the effective life of treatment. The ry+ gene of Drosophila melanogaster and its associated enzyme, xanthine dehydrogenase, were employed in an analysis of the relationship between regulation and the location of a gene in the genome. Enzyme assays as an indication of gene activity were performed on genotypes containing zero, one and two doses of ry+ genes. Xanthine dehydrogenase activity of rosy genes in normal and relocated positions was determined during development.

The results indicate: 1) the gene ry+ is differentially active during ontogeny; 2) the activity during ontogeny is proportional to the number of ry+ genes present in the genome; …

A number of investigations were undertaken to determine what factors control testicular MAO activity. Activity was high in neonatal rats (19 g - body weight), showed a reduced activity at 53 g, was increased at 145-235 g and showed a progressively reduced activity at 415 g, 482 g and 650 g. Hypophysectomy of immature male rats at 3 weeks of age, or mature rats at 10 weeks of age, significantly reduced testicular weight and total MAO activity as calculated on a per animal basis. Two experimental studies were reported in which attempts were made to increase resistance to the negative effects of set. Set interference was measured by performance on 1) a task in which a set was experimentally induced, 2) a series of problems presumed to involve implicit sets, and 3) a test of creativity presumed to involve implicit sets.

The experimental treatments consisted of tasks which required set-breaking. An important aspect of this research was that no hints or instructions concerning sets were provided.

The absorption, translocation and metabolism of 1,3-dichloropropene (a soil fumigant) in bush beans, tomato and carrot was studied under growth chamber and greenhouse conditions using solution culture, vermiculite and sand. Absorption was monitored using gas chromatographic analysis and isotope techniques. Plants were shown to absorb a maximum amount of dichloropropene by 24 to 48 hr from solution culture and vermiculite. The plant absorbed and translocated 1,3-dichlorpropene-14C-U readily to aerial parts of the plant.

Bush beans, tomatoes and carrots absorbed and translocated 3-chlorallyl alcohol-14C-U from solution culture and vermiculite. Levels of 3-chloroallyl alcohol reached maximum at 24 …

Wild-trapped and laboratory-reared Peromyscus maniculatus (Wagner) were raised as confined colonies indoors with various stocking densities ranging from 0.026 to 0.100 mice per sq. ft. in pens of 40, 77, and 154 sq. ft. The animals were individually tagged and all pens were censused at weekly or semi-monthly intervals to record animals present, body weights, food consumption, and overt reproductive condition. At the termination of each experiment, all mice were necropsied and organ weights of gonads and adrenals recorded. Histological sections were made of the testes and ovaries. This paper presents information obtained from 1972 and 1973 on the reproduction, survival and density of snowshoe hares (Lepus americanus) in Cache National Forest, Utah. The main objectives of the study were: (1) to estimate population densities; (2) to measure adult and juvenile mortality ; and (3) to measure natality rates , including recruitment (realized annual natality).

Live-trapping and snaring were used to estimate population levels and to collect hares for necropsy. Fecal pellet counts were used to evaluate relative habitat use by hares.

This paper entails the economic and biological interpretation of the response of rangeland grasses to nitrogen fertilization. Six sites throughout Utah received graduated rates of fertilizer. The coefficients of the production function

were identified.

An initial production and a carry-over response were identified on sites receiving greater than ten inches of annual precipitation. Optimum fertilization rates may be identified by equating the marginal physical product to the ratio of the price of nitrogen to the price of the forage.

Twelve of the children were given tutorial experience through the use of children's flannel board stories written by the author. A computer program was developed at Utah State University (USU) to aid in obtaining a more complete individual performance record keeping system for beef cattle in Utah. Some computer programs for beef cattle records presently exist but a program was needed that was readily available to the USU animal science extension and resident staff.
