As I reflect on the past year, I am filled with pride and hope by our progress in becoming a more sustainable WKU. The milestones are significant: completion of our first building for which we will seek LEED certification, sustainability included as a core commitment in the WKU Strategic Guide for 2010-2012 and a Resolution for Education for Sustainability adopted, the first Education for Sustainability faculty retreat, the Energy Savings Performance Contract project initiated and nearly completed, and WKU included in the Princeton Review’s Guide to 286 Green Colleges. The goal of the current study was to examine the relationship between muscle magazine consumption and body dissatisfaction. The study also examined the relationship between muscle magazine consumption and the amount of disparity between ideal and real body shape. Participants (N = 108) were recruited via study board, and also on a volunteer basis, from a mid-Western university with a population of 20,674 students. The first hypothesis stated that men with greater exposure to muscle magazines would indicate that their actual body shape falls further away from their ideal body shape, in terms of both muscularity and fat level, than …

The inconsistencies between the perception of the profession of nursing and the reality of practice can lead to problems in student attrition or result in disillusionment with a career in nursing after a new graduate enters practice. With the nursing shortage reaching critical levels, it is important to examine possible discrepancies that exist and address strategies to reduce them.
For this study, a quantitative design was selected to explore how the perception of the nursing profession compared among first-semester associate degree nursing students, first-semester baccalaureate nursing students, and registered nurses. A convenience sample N = 238 included 69 ADN students, …

Mis-folded proteins and their associated aggregates are a contributing factor in some human diseases. In this study we used the protein lysozyme as a model to define aggregation structures under denaturing conditions. Sasahara et al. (2007), Frare et al. (2009, 2006), and Rubin et al. (2008) observed conditions where heat denatured lysozyme formed fibril structures that were observed to be 8-17 nanometers in diameter under the electron microscope. Even though the crystal structure of lysozyme is known, the denatured form of this protein is still unknown. Throughout the years, women have been the focus of eating disorders and body image research. With women being the focus of research in these areas, disorders such as Anorexia Nervosa, Bulimia Nervosa, and Body Dysmorphic Disorder (BDD) have caught the eyes of researchers. With this new discovery, there has been a recent surge of research on body image issues and men. Originally termed reverse anorexia or bigorexia, Muscle Dysmorphia (MD) has gained the attention of researchers for about a decade (Grieve, 2007; Pope, Katz & Hudson, 1993; Pope, Gruber, Choi, Olivardia & Phillips, 1997).

Due to the recent changes in the economy of Kentucky tobacco production, some producers are seeking an alternative crop that will provide similar economic gains to tobacco without needing more acreage. Tomatoes are an existing crop in Kentucky that have been declining in acreage over the last five years. There is evidence to suggest that, through niche and local marketing, tomatoes may be able to fill the void left by tobacco. However, there is concern among producers that they will lose yield and/or quality if they switch to one of these niche production systems or cultivars.

One of the most commonly and thoroughly studied paradigms of human performance is fatigue. However, despite volumes of research there remains considerable controversy among scientists regarding definitive conclusions about the specific mechanism(s) contributing to fatigue. Within the literature there are three primary yet distinctly different governing ideas of fatigue; the traditionally referenced central model and peripheral model as well as the emerging central governor model (CGM). The CGM has recently been advocated by a limited number of researchers and is suggestive of a more integrative model of fatigue when compared the traditional peripheral and central models. Proteins carry out an almost innumerable amount of biological processes that are absolutely necessary to life and as a result proteins and their structures are very often the objects of study in research. As such, this thesis will begin with a description of protein function and structure, followed by brief discussions of the two major experimental structure determination methods. Bile acids in the small intestines of animals serve to breakdown fats and fatsoluble vitamins. Most of the bile acids are reabsorbed into the enterohepatic circulation, but approximately five percent of these bile acids pass into the large intestine. These bile acids are swiftly deconjugated by the bacterial population, and then subjected to further intestinal bacterial chemical modifications. The most significant of these modifications are 7α-dehydroxylations which form secondary bile acids (deoxycholate and lithocholate). Much research has illuminated the 7α-dehydroxylation pathway: of particular interest is the bile acid inducible operon, for which Clostridium scindens VPI 12708 serves as the model …

Research indicates that weight cycling, or “yo-yo dieting” is a common occurrence in obese populations. The long term negative health consequences of weight cycling are debated and it is unclear whether or not this weight change pattern poses a greater disease risk compared to obesity maintenance. This review discusses the prevalence of weight cycling and physiological alterations occurring during weight loss that promotes weight regain. We also discuss the effect weight regain has upon adipose tissue in terms of rate and type of accumulation. Physical Activity Is Associated With Percent Body Fat And Body Composition But Not Bmi In White And Black College Students, Michael Zanovec†, Anantha P. Lakkakula†, Lisa G. Johnson‡, Georgianna Tuuri‡

The objective of this study was to examine the association of self-reported physical activity (PA) with body composition in 290 college students (49% male, 60% White) 18-25 years of age. Outcome measures included: self-reported PA levels calculated in MET-hrs·wk-1 from the International Physical Activity Questionnaire (IPAQ); body mass index (BMI; in kg·m-2); and body composition variables estimated by dual-energy X-ray absorptiometry (DXA). Mean activity levels of the sample were 39.8 ± 23.8 MET-hrs·wk-1. Participants were divided into quartiles of PA levels: ≥0 to <24.0, ≥24.0 to <34.0, ≥34.0 to <51.25, and ≥51.25 MET-hrs·wk-1 and body composition variables were compared by group. Chi-square analyses revealed a significant difference for gender by PA quartile [χ2 (3, N=290) = 32.42, p < 0.0001], and for gender by race by PA quartile [χ2 (9, N=290) = 37.82, p < 0.0001]. MET-hrs·wk-1 was inversely correlated with %BF (r = -0.40, p < 0.0001) but not BMI (r = 0.05, p = 0.43). When comparing body composition variables across PA quartiles, no significant differences were observed for BMI; however, subjects in the highest quartile of PA had a lower percent body fat (%BF) and fat mass (FM), and a higher lean-tissue mass (LTM) compared to subjects in the other three groups. In this cohort of young adults, participants in the highest activity group had a more fit body composition profile (e.g., lower %BF, lower FM, and higher LTM) which was not reflected in BMI and was independent of gender and race.

We appreciate the opportunity to review academic curriculum and current research focus of Exercise Science programs in South Korea. The information of this paper was collected by several different methods, including e-mail and phone interviews, and a discussion with Korean professors who attended the 2009 ACSM annual conference. It was agreed that exercise science programming in South Korea has improved over the last 60 years since being implemented. One of distinguishable achievement is that exercise science programs after the 1980’s has been expanded to several different directions. Ten adult Quarter Horses (5 mares and 5 geldings) were placed in dry lot for 90 days and allowed free choice access to a diet consisting of average quality orchard grass hay, salt and water. The horses were then allowed free choice access to early-growth annual ryegrass pasture, salt and water for a 28 day period. Random hay and grass samples were analyzed for nutrient content. Older adults’ reduced performance in functional activities of daily living (ADL) such as gait, sit to stand or stair climbing may reflect age-related declines in muscular power more so than strength. Therefore, this review was conducted to determine if power training is effective in improving the functional ability of older adults, and if so, if it was more effective than strength training. The purpose of this study was to determine the effect of an environmental cue (bowl size) on food consumption and to examine the influence of exercise on that relationship. This cross-sectional study included 286 college students attending a large Midwestern University. Upon arrival at an ice cream social for university students, participants were randomly given a small (8 oz) or large (12 oz) bowl and a 4-page survey addressing exercise and eating habits. As defined by the Equal Employment Opportunity Commission, harassment is commonly transferred via some type of unwelcome communicated behavior, which includes discrimination (2007). Carbohydrate beverages consumed during long-term exercise have been shown to attenuate fatigue and improve performance; however, the optimal timing of ingestion is unclear. Therefore, the purpose of this study was to determine if timing the carbohydrate ingestion (front-loading (FL), continual loading (CL), and end-loading (EL)) during prolonged exercise influenced exercise performance in competitive cyclists. Ten well-trained cyclists completed three separate exercise bouts on a bicycle ergometer, each lasting 2 hours at an intensity of ~67% VO2 max, followed by a 15-minute “all out” time trial.
