Evaluating Microbial Safety Of Food Products And Processes In Small Scale Food Services, Processors And Manufacturers, Sujan Acharya

This study evaluated microbial safety of relatively new and modified food products prepared especially by small-scale foodservice establishments and home producers. In the first part, microbial safety during fermentation at room temperature was evaluated. Chapter 3 monitored Listeria monocytogenes and Escherichia coli O157 survival during Sauerkraut’s natural fermentation. Chapter 4 evaluated the survival of acid-adapted E.coli O157 during kombucha fermentation and in kombucha-fruit blend during refrigeration. During both fermentations, the pathogens were inactivated before the recommended duration of fermentation. However, E.coli O157 introduced after fermentation survived in kombucha-fruit blends during refrigerated storage. The second part (Chapter 5) evaluated the safety …

Parents who work have many responsibilities to fulfill. They may encounter frustration and exhaustion, which can impact how well they parent. Experiences such as financial strain and the COVID-19 shutdown may further impact parenting. At the same time, adolescents are establishing identities and need attentive parents to help them develop healthy psychosocial well-being. Using Erikson’s (1968) psychosocial theory of development as a backdrop, the purpose of this study was to observe the relationships between parent work-family balance, parenting satisfaction, and adolescent psychosocial well-being within the context of financial stress and the COVID-19 shutdown. Yearly funding for individual national parks is overseen and determined by the House Appropriations and Natural Resources Committees. This process has resulted in the National Park Service being underfunded and facing a $12 billion maintenance backlog. Congress has passed temporary funding to help reduce this backlog but has not indicated a shift in how funding decisions are made to prevent future shortfalls.
This thesis uses statistical analysis to explore how individual members of Congress are impacting funding for national Parks in their states or districts. Often congressional committee’s act on personal incentives to make funding decisions rather than basing their …

Bees are considered to be the most important animal pollinator, providing billions of dollars in pollination services each year. Despite their importance in both natural and agricultural settings, the status of most native bees is unknown. Native bees are subject to a variety of threats including habitat loss, pesticide use, and climate change. Yet, monitoring programs have been implemented in few natural areas. Pinnacles National Park, PNP, in California is one of the only natural areas to have a large historical dataset on bees across decades with surveys conducted in 1996, 1997, 1998, 1999, 2002, 2011, and 2012. Fisheries throughout the world play many important roles, and they are also subject to many pressures. The tension between roles and pressures is increasing, and as a result, many fisheries are being utilized to, or over their capacity, which ultimately threatens their sustainability. To address these challenges, this dissertation provides insights and tools to help us better understand fisheries and the challenges they face. Emotional Support Animals (ESAs) are increasing in prevalence and awareness, though not all the publicity and attention have been positive. Many people, including housing officials, persons with disabilities, health professionals, and the general public are confused about the roles and rights of ESAs. Misunderstandings, lack of awareness, and fraud have led to dangerous and inappropriate situations for humans and animals alike despite overwhelming evidence of powerful therapeutic benefits of the human animal bond.

The Colorado Plateau provides numerous sources of energy, particularly natural oil and gas. This energy potential is being actively extracted for consumption on both public and private lands. Elements of biodiversity (e.g., listed and sensitive plant and animal species) are distributed among all land tenures, yet the laws protecting them can vary depending if they occur on public, private, or tribal land. Many eye-tracking technologies exist to aid in calculating and recording data associated with what a person focuses their visual attention on. Wetlands are important ecosystems that improve water quality, prevent floods, and provide wildlife habitat. As such, restoring native plants that promote wetland health is a high priority for land managers. However, there are many challenges to the restoration of native plants. In our study system (Great Salt Lake wetlands), many areas are invaded by the European grass, Phragmites australis. Phragmites grows in dense stands and displaces native plants. A droplet of fluid can slide or roll down an angled surface if the droplet doesn’t stick to the plate (e.g., droplets on glass). The most common surface to allow for such this motion are hydrophobic surfaces. One example is a freshly waxed car where the rain beads up and rolls off. Another example is if a pan is heated to a high enough temperature then when small amounts of water are added the droplet will skitter around on the surface for a moment before boiling away. Predation is one of the most important interspecies interactions that affect a wildlife population. Predator-prey interactions may cause species to shift their behavior, such as changing the use of their habitat in both space and time, based on their ability to assess risk. Wildlife population responses to predation stresses have been studied in the past, but individuals' responses to these stresses have not been studied in fine detail. Many students in the United States are not proficient in mathematics. Mathematics vocabulary is one area that may impact students’ understanding of and engagement with mathematics. This dissertation investigated the implementation, effectiveness, and teacher’s perceptions of a program for teaching mathematics vocabulary necessary for fourth grade and beyond.
This study randomly assigned 30 students (11-14 years old) to receive mathematics vocabulary instruction or not. Three teachers at a school for students with learning difficulties and disabilities administered mathematics vocabulary and mathematics achievement tests to all of their students before teaching the program to 17 of the students. The COVID-19 pandemic has highlighted a need for students to learn about public health issues, including the transmission of disease and methods for the prevention of epidemics. This study presents data from a project focused on developing computational microworlds to help middle school students learn about these topics. The microworld is designed to help students model and test their ideas about how a disease spreads through a population and how an epidemic can be prevented. Nanoparticles (NPs) are particles less than 100 nm (~4 millionths of an inch) in a direction. NPs, due to their small size, are used in a variety of products, such as silver (Ag) NPs as an antimicrobial in clothes. Copper Oxide (CuO) NPs are used in electronics as semiconductors and other fields as antimicrobials and purposefully or accidentally end up in the environment. Copper (Cu) is a necessary nutrient for plants, but at higher amounts is toxic to plants and beneficial soil microbes.

Embryos resulting from assisted reproductive technologies, such as in vitro fertilization (IVF) or intracytoplasmic sperm injection (ICSI), develop with lower efficiencies than embryos resulting from their in vivo counterparts. The reasons behind the developmental discrepancies remain largely unknown. Because the egg is the primary determinant of embryo developmental success, it is reasonable to consider inherent egg quality as a possible cause. The hypothesis for this project is that there are distinct mRNA transcript patterns, or molecular “fingerprints,” that distinguish high- versus low-quality eggs developing within the same environment. Alfalfa is one of the most economically important crops in North America. To produce alfalfa seed, a pollinator must release plant reproductive organs by applying pressure to keel petals. The alfalfa leafcutting bee, Megachile rotundata, is the primary commercial pollinator of alfalfa. U.S. bee managers struggle to maintain populations due to many mortality factors. One cause is attack from parasitoid wasps such as Melittobia acasta. Females can lay hundreds of eggs and have multiple generations, which can decimate bee stocks. Chapter Two investigates the life cycle and base temperature that allows development of M. acasta on bee hosts. …

Much of these impacts depend heavily on the frequency of impactful weather which is constrained by the state of the climate system each year. This thesis explores the changes to the landscape of the Virgin River Basin by Mormon pioneers and the environment between 1854 and 1921. This thesis shows the ways in which the Mormons replaced the local vegetation of the basin with new crops and expanded the area available for farming through the use of irrigation canals and different farming techniques. Along with showing the ways in which the Mormons changed the landscape the thesis explores the ways in which environmental changes played into this process. Most bees are solitary and important contributors to pollination of a variety of crops. Solitary bees do not live in colonies. Instead, females work individually to construct nests and provision nutrients for each offspring. However, solitary bees can be difficult to manage, especially on a large scale like honey bees, because of differences in how species provision for their offspring and construct nests. This study was conducted to increase our understanding of the influence of adult female pronghorn (Antilocapra americana) physiology on fawn summer survival. Pronghorn are a valued big game animal in Idaho, but are particularly sensitive to capture; therefore, we designed a noninvasive fecal sampling study to measure pregnancy (progesterone and estrogen), diet, nutrition (fecal nitrogen and DAPA), and stress (cortisol), during metabolically-demanding female life history stages (late gestation, early lactation, and breeding season). We also compared survey results between ground and aerial methods within mountain valley landscapes.

Pedestrians and vehicles interact with each other all over the world. Pedestrian-vehicle interactions are most likely to occur at intersections. One way to streamline these interactions and reduce the number of potential conflicts is by using traffic signals. Signalized intersections were developed to increase the overall safety and efficiency of movements involving motorists and, later, pedestrians (Clark, 2022). The number of signalized intersections is increasing across the country as vehicle volumes increase. This means that pedestrian-vehicle conflicts are also increasing. Pedestrian-vehicle conflicts can have serious, even fatal, consequences if not appropriately managed.

Fire, insects, and disease are necessary components of forest ecosystems. Yet, climate change is intensifying these tree stressors and creating new interactions that threaten forest survival. This dissertation combined field observations with statistical predictions of changing disturbances in western forests to identify 1) how conventional models may underestimate future forest loss, and 2) how positive relationships between trees may be exploited by managers to prevent forest loss.

Wildfires can contribute to enhanced flooding, erosion, debris flows, sediment transport, and water quality changes that impact downstream infrastructure, water users, and aquatic habitat. This thesis describes and addresses the need for reliable ignition in small satellite hybrid propulsion systems using higher density oxidizers. It describes methods of creating custom 3D printing ABS plastic based filaments that contain small amounts of catalysts. These catalysts lead to a more reliable and energy-efficient ignition of a hybrid rocked propulsion system using catalyst-infused ABS and nitrous oxide and oxygen blend called Nytrox, commonly known as ”laughing gas.” The ”laughing gas” has a higher density and can therefore provide more ”miles per gallon” in a hybrid propulsion system on a small satellite when compared to gaseous oxygen (GOX). …

Adolescents with intellectual and developmental disabilities (IDD) are often overlooked in research, including psychosocial development (self-esteem, autonomy, attachment, and identity formation). Reliable and consistent survey tools are essential to understanding developmental trends. This study focused on creating surveys that could be comprehended by all adolescents, no matter if they experience IDD or not. Findings from this study suggested that there are more similarities than difference across areas of psychosocial development among adolescents with IDD as well as with their typically developing peers. These findings can help researchers more accurately assess psychosocial development for more adolescents, including those experiencing IDD.

Prehistoric populations across North America seem to grow exponentially, with some variation between regions. Archaeologists have explored the differences somewhat, but have not explained the differences or the sustained growth with any reference to what may be going on under the surface in a way that is relevant to all regions. I propose that environmental limits on population are shaped by what populations eat and how they acquire food, and that when populations are large enough to feel the scarcity in their environment, they change their way of life in a way that increases those limits. This master’s thesis work presents an investigative study about the performance of transparent antennas. The antennas have been fabricated using two advanced transparent conductive films (TCF) namely Nano-C Hybrid and Silver-Nanowire (AgNW). Nano-C Hybrid is a new transparent conductive film which combines thin conductors like Carbon Nanotube and Silver Nanowire. The antennas made from Nano-C Hybrid and AgNW are of monopole types and are mounted on a ground plane made out of a printed circuit board and the antennas are excited using an SMA connector through that printed circuit board. Over the past 40 years, the prevalence of bilingualism in the United States has increased. As bilingualism is increasing, it is important to examine potential benefits or drawbacks that early household bilingual exposure has on child development and how bilingualism may facilitate those benefits or drawbacks. This study included 5 monolingual and 6 bilingual children and compared differences in brain activation location and executive functioning skills. Joint invariants are motivated by the study of congruence problems in Euclidean geometry, where they provide necessary and sufficient conditions for congruence. More recently joint invariants have been used in computer image recognition problems. This thesis develops new methods to compute joint invariants by developing a reduction technique, and applies the reduction to a number of important examples.
