Temperature-Time Relations In Canned Foods During Sterilization, George E. Thompson

Bacteriologists have found that the death rate of the bacteria which cause spoilage in canned goods depends upon the temperature to which the bacteria are subjected. In order, therefore, to establish the bacteriology of canning on a firm scientific basis it is necessary to know the time at which certain critical temperatures are attained by the foods which are subjected to the sterilization process. This paper shows the result of an attempt to work out by a combination of mathematical theory and experiment the temperature-time curves for certain foods in containers of any size and for any practical temperature range.

A rather incomplete report of the work of Dershem on the X-ray spectrum of tungsten has appeared in the proceedings of the Iowa Academy of Science, A complete report is to be found in the Physical Review of June, 1918, where he finds this spectrum to contain 19 lines in the L region. Further experiments have been carried on using the same apparatus and method as used by Dershem, but increasing the time of exposure, with the result that six new lines have been discovered.

The characteristic equation for stroboscopic velocity is v8 = (A-n/m B) D0 (see Proc. Iowa Acad. Sci., Vol. XXIV, 1917, p. 222), where v8 is the stroboscopic velocity, A the frequency of the stroboscopic figures, B the frequency of illumination, n/m a fraction at lowest terms, and D0 the distance of separation of the stroboscopic figures.

The coefficient of absorption can be defined by the constant α in the exponential relation N=N0e-at. The precise physical interpretation of such an exponential law when applied to a beam of electrons moving through a metal plate of thickness "t" is not so simple as its mathematical expression would lead one to suppose. It may, however, lie interpreted if we assume that there exists no "scattering" or energy transformation as the beam of electrons passes through the metal. In the summer of 1910, Dr. George F. Kay, while engaged in a study of the Bering River Coal Field of southeastern Alaska, discovered some subspherical, concretion-like bodies in the ''shales of the Tokun formation.'' Three specimens were brought back by Professor Kay and these through his kindness have been submitted to the writer for study. The largest is a smooth oval body with long and short diameters of 8.6 and 7.6 centimeters; the smallest is likewise smooth, irregularly oval, and with diameters of 4.3 and 3.8 centimeters. A Modern School is a 23-page occasional paper, written by Abraham Flexner and published in 1916 by The General Education Board. Flexner (1866-1959) was an American educator and education reformer. With its even plains surface, the infrequency of bed-rock exposures, and the universal presence of thick till or loess mantles, detailed geologic mapping of the prairie states is attended by many inherent difficulties not met with in more broken country. In consequence of the existence of these unusual conditions the consideration of possible noteworthy geotectonic features in the region is largely neglected. Anything beyond a few of the most obvious local characters completely fail of record. Over a very large part of the Mississippi basin the tectonics are commonly treated as if there were none at all.
