Introduction: Multiple barriers exist to healthy and environmentally sustainable food choices. Limited consumer understanding of the health and environmental implications of food choices complicates their abilities to make choices that lead to desired outcomes. The complexity of the retail environment itself may crowd out less immediate motivations to address health or environment. Even if consumers understand general impacts of food choices on health and environmental outcomes, there may be non-negligible time and search costs to identifying the products that meet consumers’ needs. As with phenotyping of any microscopic appendages, such as cilia or antennae, phenotyping of root hairs has been a challenge due to their complex intersecting arrangements in two-dimensional images and the technical limitations of automated measurements. Digital Imaging of Root Traits at Microscale (DIRT/μ) is a newly developed algorithm that addresses this issue by computationally resolving intersections and extracting individual root hairs from two-dimensional microscopy images. This solution enables automatic and precise trait measurements of individual root hairs. Alcohol use is an independent risk factor for the development of bacterial pneumonia due, in part, to impaired mucus-facilitated clearance, macrophage phagocytosis, and recruitment of neutrophils. Alcohol consumption is also known to reduce peripheral natural killer (NK) cell numbers and compromise NK cell cytolytic activity, especially NK cells with a mature phenotype. However, the role of innate lymphocytes, such as NK cells during host defense against alcohol-associated bacterial pneumonia is essentially unknown. We have previously shown that indole supplementation mitigates increases in pulmonary bacterial burden and improves pulmonary NK cell recruitment in alcohol-fed mice, which were dependent on aryl hydrocarbon …

Background: Food security is an increasingly pressing global issue, and by 2050, food production will not be sufficient to feed the growing population. Part of global food insecurity can be attributed to post-harvest losses, including quantity and quality losses caused by stored-product pests like insects. It is thus timely to find management strategies to mitigate these losses and counteract food insecurity. The red flour beetle, Tribolium castaneum (Herbst) (Coleoptera: Tenebrionidae), a global stored-product pest with a wide range of food sources, was used in this study to assess repellency to a selection of essential oils. Reproduction is classically controlled by gonadotropin-releasing hormone (GnRH-I) and its receptor (GnRHR-I) within the brain. In pigs, a second form (GnRH-II) and its specific receptor (GnRHR-II) are also produced, with greater abundance in peripheral vs. central reproductive tissues. The binding of GnRH-II to GnRHR-II has been implicated in the autocrine/paracrine regulation of gonadal steroidogenesis rather than gonadotropin secretion. Blood samples were collected from transgenic gilts, with the ubiquitous knockdown of GnRHR-II (GnRHR-II KD; n = 8) and littermate controls (n = 7) at the onset of estrus (follicular) and 10 days later (luteal); serum concentrations of 16 steroid hormones …

Two experiments evaluated the impact of the reduction in the percentage of corn oil remaining in distillers grains plus solubles (DGS) after the ethanol plant de-oiling process or by adding corn oil back to DGS following de-oiling on finishing cattle performance and nutrient digestion. Experiment 1 utilized 320 yearling steers (initial BW = 413 kg; SD = 25 kg) fed in 32 pens (10 steers/pen) and assigned to one of four treatments (n = 8 pens/treatment). Attempting to conceptualize wellbeing is difficult, and the current research literature does not offer a standard definition that encapsulates the complexity of this construct, nor has there been a thorough consideration the impact of culture and societal standards of behavior on wellbeing. Additionally, the emergence of a new developmental period between adolescence and true adulthood (emerging adulthood) offers an additional layer of nuance, as many of the traditional scales currently used to measure wellbeing are inappropriate for emerging adults. Maize metabolism is highly complex and influenced by genetic variation, yet the specific genes contributing to this variation and their links to non-metabolic traits remain less understood. To address this knowledge gap, we identified genes involved in maize metabolic variation and linked them to non-metabolic traits. We utilized a quadruplicate dataset of whole genome resequencing, transcriptomic, metabolic, and whole plant phenotype data from a single common field experiment of 660 diverse maize inbred lines. Leaf samples were collected shortly before flowering and analyzed using GC-MS for 26 metabolites. Aronia melanocarpa, also known as chokeberry, is gaining popularity for its high antioxidant content and health benefits, including reducing oxidative stress and inhibiting cancer gene expression. However, its characteristic bitterness and astringency limit its broader appeal. Chokeberry's low pH places it in the acid foods category, making it ideal for safe home canning. An acidic environment combined with heat treatment inhibits harmful bacteria like Clostridium botulinum. Home canning preserves food by sealing it in airtight containers and heating it to destroy spoilage microorganisms.

High-pressure processing (HPP) is recognized by the United States Department of Agriculture Food Safety and Inspection Service (USDA FSIS) as a post-lethality treatment to control Listeria monocytogenes in ready-to-eat (RTE) meat and poultry products. A scoping review of 603 journal articles, which ultimately was narrowed down to 16 articles, revealed that the efficacy of HPP varies with fat content. The studies demonstrated that L. monocytogenes inactivation by HPP tends to be lower in RTE meats with greater than 5% fat content, compared to products with lower than 5% fat. The TCA cycle enzymes- malate dehydrogenase (MDH) and citrate synthase (CS)- interact to transfer oxaloacetate from the active site of MDH to the active site of CS, through an electropositive channel. The MDH-CS metabolon is highly conserved across different domains of life, and it has been associated with many advantages. Some of these advantages include protecting oxaloacetate from competing enzymes like aspartate aminotransferase, allowing the thermodynamically unfavorable MDH forward reaction to occur and increasing the local concentration of oxaloacetate within the active site of CS. The Northern Great Plains grasslands are social-ecological systems that were shaped by evolutionary and Indigenous social-ecological relationships. European colonization disrupted many of these interactions, including the coupling of fire and grazing, and degraded social-ecological resilience, shifting these grasslands to a new state. For those reasons, my research focused on assessing, restoring, and centering evolutionary and Indigenous social-ecological relationships for advancing social-ecological resilience in the Northern Great Plains grasslands. By integrating household risk preferences and empowerment dynamics, this work offers valuable insights into the complex mechanisms driving household welfare and provides a framework for future interventions to promote gender equality and economic development in rural settings. Research has identified executive control (EC) as an important predictor of dietary outcomes among youth. Executive control in preschool age has been shown to predict important outcomes across development for youth, indicating that good, foundational EC abilities are associated with successful development in later life. Feed costs are the largest contributor towards the variable costs of pork production. To decrease feed cost while not sacrificing output requires an improvement in feed efficiency (FE). Information About Honey Fraud: Implications Of Information Choice For Consumer Behavior, Christopher R. Gustafson

The study highlights that standard research practice—exposing participants to information—may not capture what will happen outside of the lab when people have a choice about what to read, view, or do with their time. While we found that having participants read about honey fraud significantly shifted their willingness to pay for local and domestic versus imported honey, we did not find those changes when people were able to select a text to read.
The implications of these findings extend beyond the issue of honey fraud to broader contexts of food safety, nutrition, and production techniques. While people have preferences for …

Chapter one devises an approach to adjust estimates of the number of food insecure for changes in sedentarism over time. Existing methodologies are biased upwards and date back several decades. We build a household model utilizing a Stone-Geary utility function, which rationalizes households shifting their labor decisions towards sedentary activities. Our comparative statics examine the impacts of changes in the productivities of sedentary types, as opposed to my physically demanding types, of activities and also their returns. The objective of this study was to evaluate growth and reproductive performance of heifers developed using 3 different winter systems in the midwestern U.S. Spring-born heifers (n = 1,156; 214 d of age; SD ± 17 d) were used in a 3-yr study to evaluate performance in winter development systems, which utilized cover crop (CC) and corn residue grazing. Heifers were assigned to 1 of 3 treatments: grazing corn residue with 0.77 kg/d dried distillers grains (CD) or 1.69 kg/d wheat midds (CW) supplementation followed by a grower ration in the drylot, or grazing late summer planted oat-brassica CC followed …

The purpose of this dissertation study was to examine the associations between student-teacher closeness, student-teacher conflict, and educational outcomes (i.e., academic, social, and behavioral outcomes) for students with elevated symptoms of attention-deficit/hyperactivity disorder (ADHD). Positive student-teacher relationship quality is linked to educational success and has been found to be inversely related to adverse outcomes in the general population. Previous research has examined differences in student-teacher relationship quality for students with ADHD, but the association between student-teacher relationship quality and educational outcomes is not well understood for students with ADHD. Previous studies have examined sex differences in performance fatigability during isometric, isokinetic and controlled dynamic constant external resistance (DCER) fatiguing tasks (FT), however, whether those sex differences remain during maximal intended velocity (MIV) DCER muscle actions remains unclear. The purpose of this study was to examine the sex-related differences in the time course of fatigue, neuromuscular responses, and coactivation from the ipsilateral and contralateral limbs during MIV DCER muscle actions to failure at low versus high relative loads, as well as performance fatigability from pre- to post-testing. Microbiomes are a fundamental part of eukaryotic organisms and play a role in both host health and fitness. Although microbiomes are often associated with health and positive effects on the host, certain microbiome compositions are also associated with disease. We used Caenorhabditis elegans and its experimental microbiome, CeMbio to explore the interactions that individual microbiome members have with other microbes, with the host, and how the entire microbiome community interacts with the host. We found that individual CeMbio members have varying effects on host health and fitness compared to the whole community. This suggested that there is synergy occurring in …

Small extracellular vesicles (SEVs, “exosomes”) are natural nanoparticles that can be endogenously synthesized and also obtained from dietary sources, such as bovine milk SEVs (mEVs). mEVs have been extensively studied and discovered with contributive features that potentially play a role in drug delivery and other therapeutic purposes, such as diagnostic tools. Current studies have shown that mEVs have been used preclinically to carry in targeting drugs, nucleotides, biomolecules, and labels to target metabolic diseases and cancers. I examined the effects of virtual fencing on beef cattle stress and how implementing the technology can aid wildlife habitat conservation at the University of Nebraska Gudmundsen Sandhills laboratory (GSL) near Whitman, NE. First, I examined how virtual fencing influences acute heart rate changes in beef cattle fitted with the virtual fencing collars. No significant difference in the average heart rate of a cow (P > 0.05) was observed between the 30 min control and virtual fenced periods for both trial dates.
