This study focuses on the detectable metabolome of high-quality raw hazelnuts (Cory- lus avellana L.) and on its changes after dry-roasting. Informative fingerprinting was obtained by comprehensive two-dimensional gas chromatography with fast-scanning quadrupole mass spectrom- etry (GC×GC-qMS) combined with dedicated data processing. In particular, combined untargeted and targeted (UT) fingerprinting, based on pattern recognition by template matching, is applied to chromatograms from raw and roasted samples of Tonda Gentile Trilobata and Anakliuri hazelnuts harvested in Italy and Georgia. Lab-scale roasting was designed to develop a desirable organoleptic profile matching industrial standards. Results, based on 430 peak features, reveal that phenotype …

Nebraska Center for Biotechnology: Faculty and Staff Publications
Abstract Lipid droplets (LDs) are composed of neutral lipids enclosed in a phospholipid monolayer, which harbors membrane-associated proteins that regulate LD functions. Despite the crucial role of LDs in lipid metabolism, remodeling of LD protein composition in disease contexts, such as steatosis, remains poorly understood. We hypothesized that chronic ethanol consumption, subsequent abstinence from ethanol, or fasting differentially affects the LD membrane proteome content and that these changes influence how LDs interact with other intracellular organelles. Here, male Wistar rats were pair-fed liquid control or ethanol diets for 6 weeks, and then, randomly chosen animals from both groups were either …

Little is known about the interactive effects of exogenous nitric oxide (NO) and abscisic acid (ABA) on nitrogen (N) metabolism and related changes at molecular and biochemical levels under drought stress. The present study highlights the independent and combined effect of NO and ABA (grouped as “nitrate agonists”) on expression profiles of representative key genes known to be involved in N-uptake and assimilation, together with proline metabolism, N–NO metabolism enzyme’s activity and nutrient content in polyethylene glycol (PEG) treated roots of Indian mustard (B. juncea cv. Varuna). Here we report that PEG mediated drought stress negatively inhibited growth performance, as …

Department of Agricultural Economics: Faculty Publications
Since the beginning of the pandemic, small and medium scale Nebraska farmers have gone above and beyond to increase production, change delivery methods, and meet the shifting needs of their communities. Farmers from Stratton to Columbus began working together to aggregate local foods. Farmers with livestock planned ahead as butcher dates at processing facilities were booked far into the future. Farmers’ market managers worked overtime to ensure a safe shopping experience as an essential food access point. The pandemic reminded us that how our food gets from field to table is in many cases long, complex, and rigid. It opened …
Consumer Valuation Of And Attitudes Towards Novel Foods Produced With New Plant Engineering Techniques: A Review, John C. Beghin, Christopher Gustafson
Consumer Valuation Of And Attitudes Towards Novel Foods Produced With New Plant Engineering Techniques: A Review, John C. Beghin, Christopher Gustafson
Department of Agricultural Economics: Faculty Publications
We follow the PRISMA extension for scoping reviews to review the emerging international body of empirical evidence on consumers’ attitudes and willingness to pay (WTP) for novel foods produced with New Plant Engineering Techniques (NPETs). NPETs include genome/gene editing, cisgenesis, intragenesis, and RNA interference. These novel foods are often beneficial for the environment and human health and more sustainable under increasingly prevalent climate extremes. These techniques can also improve animal welfare and disease resistance when applied to animals. Despite these abilities of NPETs, evidence suggests that many, but not all, consumers discount these novel foods relative to conventional ones. Our …

High Bmi Predicts Attention To Less Healthy Product Sets: Can A Prompt Lead To Consideration Of Healthier Sets Of Products?, Christopher Gustafson, Kristina Arslain, Devin Rose
Department of Agricultural Economics: Faculty Publications
While the food environment has been implicated in diet-related health disparities, individuals’ ability to shape the food environment by limiting attention to a subset of products has not been studied. We examine the relationship between BMI category and consideration set—the products the individual considers before making a final choice—in an online hypothetical shopping experiment. Specifically, we focus on the healthiness of the consideration set the individual selected. Secondly, we examined the interaction of a health prompt (versus a no-prompt control) with BMI category on the healthiness of the consideration set. We used linear probability models to document the relationship between …

Ifnγ Is A Key Link Between Obesity And Th1-Mediated Autoimmune Diseases, Heekyong R. Bae, Myung-Sook Choi, Suntae Kim, Howard A. Young, M E. Gershwin, Seon Min Jeon, Eun Young Kwon
United States Public Health Resources
Obesity, a characteristic of metabolic syndrome, is also associated with chronic inflammation and the development of autoimmune diseases. However, the relationship between obesity and autoimmune diseases remains to be investigated in depth. Here, we compared hepatic gene expression profiles among high-fat diet (HFD) mice using the primary biliary cholangitis (PBC) mouse model based on the chronic expression of interferon gamma (IFNγ) (ARE-Del-/- mice). The top differentially expressed genes affected by upstream transcriptional regulators IFNγ, LPS, and TNFα displayed an overlap in HFD and ARE-Del-/- mice, indicating that obesity-induced liver inflammation may be dependent on signaling via IFNγ. The top pathways …

Perceptions Of Barriers And Benefits Of Manure Use In Cropping Systems, Richard Koelsch, Daniel Andersen, Erin Cortus, Leslie Johnson, Amy Schmidt, Siok A. Siek, Melissa Wilson
Nebraska Beef Cattle Reports
Animal agriculture is tasked with recycling the nitrogen and phosphorus in manures in an environmentally sound manner, typically as a soil fertility amendment, which often requires voluntary transfer of manures to crop farms on which there may be little or no history of manure use. # e ability of manure to compete with commercially available fertilizers is essential for this transfer. A survey was conducted of farmers’ and their advisors’ perceptions of the benefits and barriers to manure use in crops. There exists a strong recognition of manure’s agronomic, yield, and soil health benefits. However, many challenges associated with manure …

The Relationship Of Liver Abscess Scores And Early Postmortem Meat Tenderness, Nicolas J. Herrera, Felipe A. Ribeiro, Nicolas A. Bland, Morgan L. Henriott, Kellen B. Hart, Chris Calkins
Nebraska Beef Cattle Reports
Acidosis is one of the most common nutritional disorders found in commercial feedlots. Cattle diets with high concentrations of starch can cause rapid production of acids in the rumen, disrupting microbial fermentation, causing liver abscess formation, and lowering livestock performance. This study was conducted to evaluate the relationship between the occurrence of liver abscesses and beef tenderness early postmortem. Results showed numerically lesser shear force values (greater tenderness) in loins from animals without liver abscesses, however, this was not statistically significant for slice shear force or Warner- Bratzler shear force. Although the effects of liver abscess occurrence in relation to …

To evaluate the effects of diet and quality grade on tenderness and oxidative damage to proteins, strip loins from USDA Upper 2/3rd Choice and Select- grade carcasses were obtained. Steers were fed either a diet containing dry rolled corn, steam flaked corn, dry rolled corn with 30% dried distillers grains with solubles, or steam flaked corn with 30% dried distillers grain with solubles. Results suggest that steaks from steers fed dry rolled corn are more objectively tender than steam flaked corn; in addition, steaks grading USDA Upper 2/3rd Choice steaks were more tender when compared to USDA Select quality grade. …

Judicial Stress And Resiliency Survey Covid-19 Update, Katheryn Yetter, David X. Swenson
Court Review: Journal of the American Judges Association
Judges in the United States preside in many different courts, both on state and federal levels. Judges exercise a considerable amount of power as the ultimate decision makers in matters of legal controversy. However enviable this position may seem, the daily challenges of this role are stressful and can have an adverse effect on any judge’s health and well-being. While some would argue that these challenges are part of the job, the judiciary, legal community, and public in general would be remiss not to recognize the strain that these challenges create. To shed light on the matter, the 2019 National …

Court Review, the quarterly journal of the American Judges Association, invites the submission of unsolicited, original articles, essays, and book reviews. Court Review seeks to provide practical, useful information to the working judges of the United States and Canada. In each issue, we hope to provide information that will be of use to judges in their everyday work, whether in highlighting new procedures or methods of trial, court, or case management, providing substantive information regarding an area of law likely to be encountered by many judges, or by providing background information (such as psychology or other social science research) …
What Judges Can Do About Implicit Bias, Jerry Kang
What Judges Can Do About Implicit Bias, Jerry Kang
Court Review: Journal of the American Judges Association
“Implicit bias” was not well known in legal communities twenty years ago. But now, the idea of implicit bias circulates widely in both popular and academic discussions. Even the casually interested judge knows a great deal about the topic. Still, even as the problem of implicit bias has grown familiar, potential solutions remain out of focus. Specifically, what can judges do about implicit bias, in their capacities as managers of a workplace, as well as vessels of state power?
In 2009 I wrote a Primer for the National Center for State Courts, which described the challenge of implicit bias to …
