Charles Cole served the state of Texas as a math teacher, school principal, and finally as a Texas Education Agent, where he eventually oversaw the state child nutrition programs. Pat Deckert was a food service director and later a food broker before finishing her career as a consultant with the Texas Education Agency.

Expert Available To Discuss Decision To Delay Banning Soft Drinks In Schools, Staff Report

Charlotte Oakley, registered dietitian and fellow of the American Dietetic Association, is available to discuss issues related to the recent ruling by the State Board of Education to delay banning some soft drinks in school vending machines until 2009. Oakley is in her fourth year as head of the University of Mississippi's National Food Service Management Institute, which serves the nation as a catalyst for the continuous improvement of child nutrition programs and services, including those in schools.

An Analysis Of The Determinants Of Food Insecurity With Severe Hunger In Selected Southern States, Okwudilio O. Onianwa, Gerald D. Wheelock
Journal of Rural Social Sciences
This study predicts food insecurity with severe hunger versus food insecurity with moderate hunger among low-income households with children and without children. Data for the study was generated from a survey of the clients of nonprofit food assistance agencies in selected southern states. The questionnaire incorporated the 18 core questions for assessing food insecurity, as well as the socio-demographic characteristics of users. A two-stage process involving the application of the Rasch measurement scale and the Logit model was employed to analyze the data. Penny McConnell, a Canada native, had no experience in school nutrition until she moved to Virginia and took a job as food service manager in a local elementary school. McConnell has worked her way up through the Fairfax child nutrition programs, working as a manager in several high schools before becoming a supervisor, and eventually director of Food and Nutrition Services. She has also been active in the American Dietetic Association and the former American School Food Service Association, now the School Nutrition Association.

Clarice Higgins grew up in Waynesboro, Mississippi, and earned her bachelor’s degree in Dietetics from the University of Alabama, studying with Dr. Neige Todhunter. She then interned at Columbia Presbyterian Hospital in New York and earned her master’s from Columbia Teacher’s College. Dr. Mary de Garmo Bryan was her major advisor. In 1964 she became the School Food Service Director in Gadsden County, Florida, and held this position until her retirement in 1993. Mrs. Higgins served as President of the American School Food Service Association in 1983.
