Perceptions Of Mississippi As A Tourist Destination, Kathleen Diane Kaiser

Mississippi offers an array of tourism, but what do people who visit the state consider Mississippi has the best of? What are Mississippi’s less known tourism offerings? This study hints that those who are experienced with Mississippi more positively perceive the state as a tourist destination, whereas those who are not familiar with Mississippi’s offerings do not see the state as positively. A Qualtrics survey was conducted for students attending the University of Mississippi in the Lafayette/Oxford asking demographic questions and a survey that measured 16 tourism criteria on a 5 point Likert scale. In an ideal Human Anatomy & Physiology (Human A&P) laboratory, students would use human cadavers for study. However, due to the limited supply of human cadavers and high cost of constructing and maintaining laboratory facilities, many institutions choose to use various animal organs and models to teach human anatomy. Dissections are an irreplaceable tool to help students understand human anatomy because models often have garish colors that allow easy discrimination of structures but do not show the colors and textures associated with real tissue. Farmers Markets And Food Security: A Critical Evaluation Of The Sociodemographic Factors Influencing Market Patronage In The Mississippi Delta, Mary Margaret Saulters

Characterized by extreme poverty, limited access to fresh foods, and a high prevalence of nutrition-related disease, the rural Mississippi Delta represents an understudied and highly at-risk population in terms of food security. This paper explores the role of alternative foodways in the Delta, specifically examining the potential for farmers markets to improve community food security in rural, low- income areas. This study uses a mixed-methods approach to measure farmers market patronage among different racial and socioeconomic groups in the Mississippi Delta. The culturally accepted body ideal is grov^dng increasingly thinner. Youns women seem to be particularly susceptible to an internalization of this ideal throuah media exposure. This susceptibility led me to explore the relationship between media exposure and negative body image. After examining a plethora of literature on the subject, I discovered that body dissatisfaction seems to have become the societal norm for adolescent girls. Every world culture defines itself differently through the application of similar qualifying processes. Gastronomy is an important one of these processes. This thesis aims to explain how food both aids in and exists as a reflection of cultural identity by asking these questions: What are the specifics of how gastronomical processes are applied in Uruguay and the Mississippi Delta? Federal Farm Subsidies And Industrial Agriculture: A Case Study In Mississippi Agriculture And Policy Analysis, Travis Lenti Gray

Over the last century, federal agricultural policy has shifted from supporting family farmers to protecting profits for a handful of the largest agricultural corporations and food producers. By guaranteeing a price-floor for commodity crops, farm subsidies encourage farmers to overproduce with no regard to traditional supply and demand economics. Under the current system, commodity crops are exceptionally cheap. The emphasis on quantity over quality has led to an array of negative externalities in this country, which include environmental, public health, and economic consequences.

Journal of Rural Social Sciences

Rural residents in communities face opportunities and obstaclesfor physical activity (PA), health, and wellbeing that differ from those experienced in non-rural settings. Yet, rural people’s interpretations of PA and experience of the PA environment are understudied. This study utilized a descriptive case study approach in three rural New Hampshire communities and engaged rural residents in community participatory action research of the experiential factors that enable or prevent PA for adults and youth in their communities. Qualitative data were collected using photo mapping surveys, participant observations, interviews, and focus groups, analyzed using a constant comparative method, and triangulated across multiple sources. …

A Demographic Analysis Of Metro/Nonmetro Differences In Adult Normal Weight, Overweight, And Obesity, P. Johnelle Sparks, Susanne Schmidt

Journal of Rural Social Sciences

Overweight and obesity prevalence is increasing throughout the United States, and these two health conditions seem to disproportionately affect certain segments of the adult population. To date little research has examined adult differences in normal weight, overweight, and obesity by metropolitan or nonmetropolitan residential status while controlling for important demographic, socioeconomic, behavioral, and health status characteristics. This research helps to fill this gap. We used data from the 2008 Behavioral Risk Factor Surveillance System (BRFSS) to empirically assess predictors of overweight and obesity risk for all adults and then by residential location. A Maine native, Darlene French hails from South Bristol. After spending part of her childhood in Florida, the family moved back to Maine and settled in Boothbay Harbor. After several years in restaurants and catering, French applied for a position in school food service. She was hired as a cook, she took every training available to her, and advanced to baker, and then manager, and finally is the current food service director in Boothbay Harbor.

While the number of children subject to abuse or neglect has dropped over the past decade, it is undoubtedly the case that child abuse and neglect remains one of the most serious concerns for children in the United States. Nationwide, nearly 702,000 children (or 9.3 out of 1,000) were subject to some form of abuse in the Fiscal Year 2009, a drop from even the year before (10.3 victims per 1,000 children), and a significant drop from earlier recorded findings in 1995 (15 victims per 1,000). Still, the numbers remain alarmingly high, particularly given the dire consequences. A number of …

Wanda Shockey, a native of Monroe, Louisiana, began her child nutrition career in Bastrop, Louisiana, first as the home economics teacher and then becoming the child nutrition director. After moving to Arkansas, Shockey was child nutrition director for Little Rock School District for nine years and had fifty schools. Later she moved to the Arkansas Department of Education where she has been director of child nutrition for the past fifteen years.
