The food stamp program (SNAP) is one of the most important elements of the social safety net and is the second largest anti-poverty program for children in the U.S. (only the EITC raises more children above poverty). The program varies little across states and over time, which creates challenges for quasi-experimental evaluation. Notably, SNAP benefit levels are fixed across 48 states; but local food prices vary widely, leading to substantial variation in the real value of SNAP benefits. In this study, we leverage time variation in the real value of the SNAP benefit across markets to examine the effects of …

The United States is the leading producer and exporter of corn and soybeans in the world. The United States exports 20% of the world’s corn and 30% of soybeans in a typical year (USDA, ERS). The U.S., being the top producer and exporter of these commodities, is also confronting major rivals such as Argentina, Brazil, and Ukraine, which are increasing their exports and causing the U.S. to lose some of its market share. In order to stop this decline in market share, the U.S. can adopt and implement different policies to manage resources and employ advanced technology more effectively.

We tested three hypothesis related to food insecurity and the Supplemental Nutrition Assistance Program (SNAP), America’s largest anti-food insecurity program. We hypothesized that 1)food insecurity would be associated with increased healthcare expenditures, 2)food insecurity would be associated with increased use of emergency department and inpatient services, and 3) SNAP participation would be associated with lower subsequent healthcare expenditures. We used data from the 2011 National Health Interview Survey linked to the 2012-13 Medical Expenditures Panel Survey. Adolescent Food Purchasing Patterns And The Association With Dietary Intake And Body Mass Index In Rural Communities In Kentucky And North Carolina, Paige M. Connelly

The local food environment plays an important role in the health of adolescents, especially in rural areas. Often, rural areas lack the accessibility and availability of healthy food choices, making a healthy lifestyle difficult to achieve. This study presents a cross-sectional survey of rural adolescents in 8 counties in Kentucky and North Carolina to determine the association between food store choice, body mass index (BMI), and key dietary outcomes. Although BMI had no association with food store choice, those who infrequently shopped at gas stations, convenience stores, and fast food restaurants consumed significantly less added sugar (p < 0.05) than those who shopped at those stores more regularly. Increasing the availability and accessibility of food venues with healthy food options such as supermarkets may decrease added sugar intake among rural adolescents.

The school food environment has the ability to increase the consumption of fruit and vegetables in rural adolescents. This study used a survey to allow adolescents in seven rural counties to self-report their fruit and vegetable intake as well as utilizing the USDA Mathematica tool and the School Nutrition and Meal Cost Study audits to evaluate what food and beverage products were actually available to adolescents. By using these two measures, associations between fruit and vegetable intake and availability of healthy and unhealthy foods were determined. This collection of essays examines the impact of two antecedents of household food consumption: SNAP and habit formation to nutrients. Household food choice invariably plays a substantial role in health outcomes such as obesity. Low-income households may be especially vulnerable to obesity as they face a more restricted set of food choices due to income constraints and may have less information on healthy eating relative to high-income households. This dissertation unravels this dynamic by providing causal estimates of the effect of two major determinants of food choice.

Purpose: Individuals working non-daytime shifts have been reported to have an increased risk for many negative health outcomes, including poor cardiovascular health. This study aims to examine the relationship between shift worked and hypertension—a major risk factor for cardiovascular disease. Of particular interest in this study was the role of stress and type of shift worked (day, evening, night, or rotating) in this relationship.

The human voice can transmit multiple streams of information about a person including physical, emotional, and social state. Voice disorders can interfere with social relationships, work productivity, and ultimately, impair an individual’s image. Speech-language pathologists have developed several approaches to voice therapy over the past several decades. Vocal function exercises (VFE) are physiological in nature and aim to restore the balance between the three subsystems of vocal production: respiration, phonation, and resonance. In this thesis, I focus on two tensions within the alternative agro-food movement. First is a question of who/what community is allowed to define food systems problems and then implement solutions. For example, food desert metaphors rely discursively on defining communities as being “without”, which perpetuates needs-based narratives, in which only professional “experts” know how to solve problems of food access. These representations ignore the creativity, agency, and resiliency of everyday food justice mobilizations happening at the grassroots level. Beta-amyloid (Aβ) immunotherapy is a promising intervention to slow Alzheimer’s disease (AD). Aging dogs naturally accumulate Aβ and show cognitive decline. An active vaccine against fibrillar Aβ 1–42 (VAC) in aged beagles resulted in maintenance but not improvement of cognition along with reduced brain Aβ. Behavioral enrichment (ENR) led to cognitive benefits but no reduction in Aβ. We hypothesized cognitive outcomes could be improved by combining VAC with ENR in aged dogs. Aged dogs (11–12 years) were placed into 4 groups: (1) control/control (C/C); (2) control/VAC (C/V); (3) ENR/control (E/C); (4) ENR and VAC (E/V) and treated for 20 months. …

The transition period is defined as the three weeks before and three weeks after the cow calves. Transition cow diseases are considered production diseases. Precision dairy monitoring (PDM) technologies measure physiological, behavioral, and production indicators on individual animals to improve management strategies and farm performance. The objective of the first study was to assess how hypocalcemia, hyperketonemia, and metritis affected variables measured by PDM technologies. The objective of the second study was to use variables from multiple commercially available PDM to examine alert performance generated from different analyses.

Alkaloid toxicities negatively impact livestock health and production and are of serious economic concern to animal industries. To date, few strategies have been developed to evaluate alkaloid levels in feed or to counteract alkaloid toxicities. The present research evaluated the applicability of imprinting technology to synthesize polymers that have potential to interact with ergot alkaloids and therefore reduce their bioavailability in the GIT. The studies also evaluated applicability of synthesized polymers for use in the ruminal environment using an in vitro ruminal fermentation model, and for the ability to ameliorate vasoconstriction using ex vivo myographic evaluations.

This dissertation examines organic food marketing from three aspects: household demand for organic food, household choice of retail formats accounting for preference organic food preference, and farmers’ joint adoption of organic farming and direct marketing methods. In Chapter Two, given the fast growth of private label milk and organic milk in the U.S., we estimate a censored demand system to study the demand relations among types of milk differentiated by brand types and organic status, using recent Nielsen Homescan data. The purpose of this research was to evaluate performance claims in athleisure, in order to confirm or refute their authenticity. Aesthetic properties and functional claims were evaluated initially, and after repeated home laundering. A convenience (nonprobability) sample of activewear with performance features consisted of ninety garments that are currently on the market and commonly used by consumers. The garments included men’s and women’s t-shirts, polos, leggings, windbreakers, hoodies, sweatpants, and warm-up pants of various fiber contents and performance chemistries. This dissertation consists of three essays related to the effects of welfare reform on the intergenerational transmission of welfare participation as well as effects on labor supply and childcare arrangements. States implemented welfare reform at different times from 1992 to 1996, and these policies notably introduced work requirements and other restrictions intended to limit dependency of needy families. One mechanism reforms were intended to address was childhood exposure to a "culture" of ongoing welfare receipt. Heat and moisture production (HMP) rates of animals are used for calculation of ventilation rate (VR) in animal housing. New swine HMP data revealed considerable differences from previously reported data. This project determined new design VRs and evaluated differences from previously recommended VRs. The swine production stages evaluated included gestation, farrowing, nursery, growing, and finishing. The ranges of ambient temperature and ambient relative humidity (RH) evaluated for VR were -25°C to 15°C in 10°C increments and 15% to 75% in 15% increments, respectively. Land-applied horse manure and municipal biosolids can increase nutrient and bacteria concentrations in runoff. Biochar has been demonstrated to have beneficial impacts on nutrient retention and runoff quality when used to treat other land-applied organic soil amendments (e.g., poultry manure). The objective of this study was to evaluate the effects of biochar addition to horse manure and municipal biosolids on runoff concentrations of nutrients and fecal coliforms. Increasing rates of overweight, obesity, and related cardiovascular diseases among older adults in the United States present unique public health challenges. Cross-cultural research has shown marked variation in health across the world’s elder populations because aging is a biological process rooted in sociocultural context. The sociocultural environment contributes to complex negotiations of food and physical activity patterns for older adults. The Serf gene is evolutionarily highly conserved but its biological function is not known in any organism. In human, SERF1/H4F5 was first identified as a modifier of the disease Spinal Muscular Atrophy (SMA). SMA is caused by mutations in the Survival Motor Neuron 1(SMN1) gene leading to diminished levels of the Smn protein. More than 90% of patients with the most severe form of SMA have deletions that remove SERF1 as well as mutaions within SMN1. Purpose: A quality improvement project was undertaken in an internal medicine clinic to evaluate provider adherence with the Eighth Joint National Committee (JNC 8) hypertension (HTN) medication management guidelines for adult patients diagnosed with HTN, evaluate characteristics associated with clinical inertia (CI) in patients with uncontrolled HTN, and evaluate the utility of a brief educational intervention to decrease CI.

The purpose of this research was to evaluate consumer response based on two distances (12 and 24 inches) between tables in a fast-casual restaurant. An onsite survey was conducted to measure customers’ cognitive, emotional, and behavioral responses to questions on pleasure, privacy, stress, arousal, comfort, control, customer satisfaction, and future dining intentions based on their experience with the table spacing. Results showed that table spacing has an effect on diner’s pleasure, feelings of privacy, and sense of comfort and control. The results confirmed a strong correlation between customer satisfaction and future behavioral intentions.

For more than thirty years the United States Agricultural Information Network (USAIN) has been a major player in the dissemination and preservation of agricultural information. Beginning as a network of institutions, USAIN early on restructured to an individual-based organization. As a community of practice, USAIN members conduct work through committees and interest groups and maintain close communication through a variety of outlets. Biennial conferences offer face-to-face networking opportunities, and conference scholarships have been successful in engaging potential new members directly in organizational activities. Inoculation is a robust theory applied to a variety of health behaviors. Social marketing is designed to change behavior by applying marketing tactics in the context of social change. This study combines inoculation theory with social marketing in the context of substance abuse disorders to promote long-term recovery. This is a pilot project that specifically focuses on the Beacon House, a residential recovery treatment center in Louisville, Kentucky. With the growing drug problem in America, it is necessary to implement effective recovery strategies in treatment programs.
