This study was conducted by the National Institute for Early Education Research (NIEER), a is a unit of Rutgers University, which supports early childhood education policy by providing objective, nonpartisan, information based on research. The 2004 State Preschool Yearbook is the second report in a NIEER series evaluating state-funded preschool programs. It describes state-funded prekindergarten in the 2002-2003 school year. Prediction Of The Tenderness Of Cooked Poultry Pectoralis Major Muscles By Near-Infrared Reflectance Analysis Of Raw Meat, Bradley R. Cheatham
Inquiry: The University of Arkansas Undergraduate Research Journal
Tenderness in boneless poultry breast meat is of utmost importance to consumers. However, there is currently no nondestructive method to predict poultry breast meat tenderness. Textural properties of poultry breast meat were predicted by near-infrared reflectance (NIR) spectroscopy. Spectra were collected on 390 poultry Pectoralis major muscles from broiler carcasses to examine the correlation between NIR spectroscopy and the Meullenet-Owens Razor Shear (MORS) test. Two instrumental parameters (maximum shear force and total shear energy) were used as estimates of meat tenderness. Inquiry: The University of Arkansas Undergraduate Research Journal
Consumption of raw or lightly cooked alfalfa sprouts has been a concern of the U.S. Food and Drug Administration (FDA) in recent years due to connections between sprouts and foodborne illnesses. Researchers have identified, contaminated seeds as the primary source of alfalfa sprouts contamination. Contamination of alfalfa seeds can originate in the field, harvesting, storing, or sprouting. Two pathogens of particular concern on alfalfa seeds are Escherichia coli 0157:H7 (E. coli) and Salmonella. These pathogens are capable of producing biofilms that provide protection for individual cells and allow for survival in otherwise hostile environments, including some disinfectant washes. Selenium (Se) is deficient in many Arkansas soils; therefore, an experiment was conducted on steers to evaluate the effects of two supplemental Se sources on performance, blood metabolites, and immune function. Thirty Angus-crossbred steers were blocked by weight and assigned within block to one of 15 pens (two steers/pen). Pens were assigned randomly within blocks to one of three dietary treatments consisting of a corn-soybean meal supplement devoid of supplemental Se (negative control, NC) or corn-soybean meal supplements providing 1.7 mg supplemental Se/d as sodium selenite (inorganic Se, ISe) or as Se yeast (organic Se, OSe). The co-product of soybean after oil extraction is the meal, which is rich in protein. From this meal, protein concentrate and protein isolate are prepared and are commercially available as functional ingredients. Thermal treatment is the most common step applied to foods during processing. Changes in structural and functional properties can be affected by thermal or chemical treatments. Effect Of Social Status Of Dairy Heifers On Expression Of Estrus And Subsequent Fertility, Dawn A. Elkins, Rick W. Rorie

A study was conducted to determine if social status of heifers within a herd influences estrus activity and subsequent fertility. Thirty cyclic dairy heifers were observed over a 14 d period and ranked by social status, based on a displacement index. The estrous cycles of the heifers were synchronized by treatment with two injections of prostaglandin F2a (PGF2a; Lutalyse, 25 mg) given 14 d apart. At the second PGF2a injection, HeatWatch transmitters were placed on the heifers for continuous monitoring of mounting (estrus) activity over the next 45 d. In response to growing public concern about childhood obesity, the 2003 Arkansas General Assembly passed a measure requiring that school officials measure and report to parents each student’s body mass index (BMI) annually (§20-7- 135). Beginning in the 2003-2004 school year, schools were required to do the following: • include as a part of a student health report to parents an annual body mass index percentile by age for each student; and • to annually provide parents with an explanation of the possible health effects of body mass index, nutrition, and physical activity. Arkansas Agricultural Experiment Station Research Series
Arkansas is the leading rice-producing state in the U.S., representing just over 48% of the total U.S. production and 48.5% of the total acres planted to rice. Rice cultural practices vary across the state and across the U.S. However, due to changing political, environmental, and economic times, the practices are dynamic. This survey was initiated in 2002 to monitor how the changing times reflect the changes in the way Arkansas rice producers approach their livelihood. The survey was conducted by polling county extension agents in each of the counties in Arkansas where rice is produced. Questions included topics such as …

Reported enrollments of students taking online courses in institutes of higher learning in the 2000-01 academic years were estimated at 3.077 million, according to the U.S. Department of Education’s National Center for Educational Statistics (NCES). Dramatic enrollment increases have led to a need for research that involves both the comparison of learning achievement based on delivery mediums, and student attitudes concerning alternative delivery methods. This study compared the learning achievement of students when the deliveries of course lectures were presented both in-class and online, as well as measured attitudes of students concerning delivery mediums.
