This article is an exploration of this new and growing local food movement. It is not a cohesive movement, nor is it one that is organized by a particular group. Rather, it is a grassroots movement comprised of people who are interested, for various reasons, in obtaining food grown or produced where they live or in producing this food themselves. The purpose of this article is to explore what the local food movement is, why consumers are interested in basing their food purchasing choices on where their food originates, current and future regulation of local food, and where this movement …

In their ordinary lives, many people try to avoid any situation involving risk that could cause themselves harm. On the other hand, others assume risk with greater facility because they are not sufficiently aware of it, or because they know that the probability of resulting damage is very low. Overwhelming worry in the face of any kind of risk would be paralyzing (we would not leave the house, eat in any restaurant outside of our home, drive, or fly). On the contrary, an attitude absolutely heedless of risks would end up causing innumerable damages, some of them irreparable. Common sense …

The United States Department of Agriculture (USDA) was signed into law by President Abraham Lincoln in 1862. At the signing ceremony, President Lincoln declared the Department of Agriculture to be the "people's Department" because he said it governed an industry "in which [citizens felt] more directly concerned than in any other. .. ." Today, many American citizens do not share Abraham Lincoln's view of the USDA as being the "people's Department"; rather, they identify it as being "the last plantation" due to its long history of open discrimination against African-American farmers. United States Food Law Update: Food Safely Planning, Attribute Labeling, And The Irradiation Debate, Bryan Endres

This article summarizes significant changes and developments in food law throughout the second half of 2007. The previous edition of the Food Law Update noted the recent increase in imported food and the resulting stress placed on food safety agencies and customs officials. Detailed inspections of every food shipment entering the United States would quickly exhaust limited agency resources and cripple efficient international trade of food products. On the other hand, after several well-publicized food scares and the ongoing threat of international contamination, the public increasingly demands high levels of physical surveillance. Northwest Arkansas has experienced considerable transformation in its soft infrastructure (demography, health, education, arts, civic engagement, etc.) over the last thirty years. The changes occurring in Northwest Arkansas have created a number of significant challenges that the region must acknowledge and address head-on, but certainly not all the changes have had a negative effect. The regions metamorphosis has invigorated communities throughout the area and created a tremendous set of social, economic, and cultural opportunities.
The intent of this quality of life report is two-fold. First, is to provide the people of Northwest Arkansas with an empirically grounded understanding of the …

Algae In Agricultural Fields From St. Francis County, Arkansas, T. Smith
Journal of the Arkansas Academy of Science
On August 9th, 2007, two agriculture fields (rice and sorghum fields) were sampled for freshwater algae in St. Francis County. The purpose of this study was to document the algal species in the rice and sorghum fields and compare the similarities of species composition. There were a total of 53 species identified. Overall, diatoms and cyanobacteria were equally dominant with both represented by 21 species (39.6% of the total) and 11 green algal species (20.8%) were present. The sorghum field was dominated by Chlorogloeopsis fritschii and Chroococcus limneticus, while Anabeana cylindrica was abundant in the rice field.

Impact Of Stressing A Pen Mate On Physiological Responses Of Growing Pigs, Brent Koonce, Elizabeth B. Kegley, Doug Galloway, Jason Apple

Crossbred barrows and gilts (n = 36), weighing 16.59 ± 2.1 kg, were used to test the effects of stressing a pen mate on the physiological responses of growing pigs. Pigs were randomly allotted to 6 groups after stratifying according to gender, litter origin, and body weight. Dominance order was determined within each group, and 1 to 3 d prior to the stress treatment the most- and least-dominant pigs within a group were fitted with indwelling catheters in their vena cavas. Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences
Grape pomace, a by-product of juice and wine processing, is a rich source of anthocyanins, antioxidant compounds that may afford protection against cancer and coronary heart disease. Unfortunately, traditional extraction of these antioxidants involves use of organic solvents, which pose serious safety and disposal problems for industry. Clearly a need exists for “green” extraction technologies—such as use of subcritical water—that eliminate or reduce the amount of organic solvents. In this study, we determined the efficacy of subcritical and carbonated water in extraction of anthocyanins from red grape pomace. Imagine sitting down to breakfast and eating strawberry yogurt with a glass of grapefruit juice. You think you are eating a healthy meal, but along with vitamins, calcium, and nutrients, you are getting a side of crushed beetles. Cochineal extract and carmine, two color additives derived from the cochineal beetle, color many foods such as strawberry yogurt. When people consume products with color additives, most do not realize that they could be ingesting insects, which can also be potentially dangerous, not to mention possibly unappetizing or upsetting. "Agu chupa! Agu chupa!" As we drove through the lush rolling hills of northwestern Rwanda, a crowd of young children appeared from the tea fields and repeatedly shouted these words to us. The taxi driver explained that the children wanted our "water bottes." Aware that visitors often drink bottled water, the children run alongside taxis with the hopes of obtaining the plastic bottles. Although Rwandan children typically carry their drinking water in tightly-woven baskets, the modern plastic bottles have become popular and prized possessions.

"Silly rabbit, Trix are for kids." Since the 1970s, kids have gotten to know the silly rabbit created to promote sugary, fruit-flavored cereal in television ads. Today, "i'm lovin' it" is the McDonald's slogan, but to millions of children the more recognizable symbol is Ronald McDonald. Ronald McDonald is so recognizable that one study pegged recognition of Ronald among American children at 96% and another at 80% by children in nine other countries. Given the "obesity crisis," many question whether these ads should be permitted, with some questioning whether such products are even safe for children's consumption. The Trix Rabbit …

This update summarizes significant changes and developments in food law throughout the first half of 2007. Out of necessity, not every change is included; rather, this update is limited to significant changes in national law. This series of updates provides a starting point for scholars, practitioners, food scientists, and policymakers determined to understand the shaping of food law in modern society. Tracing the development of food law through these updates also builds an important historical context for the overall development of the discipline.
