Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences

Objectives of this project were to evaluate polymorphisms in upstream elements of the lactate dehydrogenase B (LDHB) gene in crossbred dairy heifers (n = 27) and their effects on immune function and heifer growth when grazing endophyte-infected tall fescue. Two cultivars of tall fescue were utilized: Kentucky 31 (KY31), a wild-type endophyte-infected tall fescue, and HiMag 4 (HiMag), a domesticated non-toxic endophyte-infected tall fescue. Crossbred dairy heifers (Holstein × Jersey) were stratified by weight and randomly allotted to forage. The LDHB gene codes for one subunit of lactate dehydrogenase (LDH), an enzyme that catalyzes pyruvate to lactate and back to …

Greenhouse and growth chamber experiments are conducted worldwide in efforts to produce solutions that would increase yields of agronomic crops. However, the results of those experiments vary due to the many growth media being used. An experiment was conducted in the fall of 2010 to identify a broadly acceptable growth media that would produce uniform stands and optimum results in greenhouse and growth chamber settings. A total of six growth media were tested on cotton (Gossypium hirsutum) at the Arkansas Agricutural Research and Extension Center’s Altheimer Lab in Fayetteville. Protein isolates and peptide fractions from food sources (cereal grains), have been shown to exert bioactive properties including antiobesity, anticancer, antiangiogenic, etc. One such food source is rice bran, which is an underutilized co-product of rough rice milling. It contains 90% of the nutrients and nutraceuticals of value to health, including high quality protein. The high quality protein is a potential source to generate peptides that can reduce hypertension and oxidative stress, both being important risk factors for cardiovascular diseases. Rice is one of the few cereal products that does not contain gluten. However, the absence of gluten poses problems in the structure of and cooking quality of rice pasta. The objective of this project was to investigate the addition of starch on the physicochemical properties and cooking quality of rice-based pasta. Rice-based pasta was prepared from parboiled long-grain rice flour with the addition of 25% cooked starch from different sources. The color and pasting properties of the ground pasta flour were measured by a chroma meter and a Rapid Visco Analyser, respectively. The pasta was cooked to the optimum …

Malaria, water-borne diarrheal diseases, and geohelminth infections, combined with severe malnutrition ravage entire villages throughout subSaharan Africa. The Bawa Health Initiative (BHI) is a 501c(3) non-profit organization with the goal of implementing a comprehensive public health program in an attempt to address these problems in a series of rural villages located in the West Province of Cameroon, Africa. Interventions include the provision of permethrin-treated bed nets to reduce the transmission of malaria, the installation of biosand water filters to reduce the prevalence of water-borne diseases, and a geohelminth control program utilizing mass treatment with albendazole. Analysis Of The Response Of Medicago Truncatula Calcium Oxalate Mutants To Abiotic Stress, Wayra Gabriela Navia-Gine

Calcium oxalate crystals are found in most plant species. In Medicago truncatula wild-type A17, crystals accumulate in leaves along the secondary veins and the only role attributed to them so far is defense against chewing insects. Calcium oxalate deficient (cod) mutants were isolated in M. truncatula; the cod mutants include cod5, which completely lack crystals in the leaves and cod6 that accumulates fewer and smaller crystals compared to A17. We analyzed gene expression in the cod mutants and A17 using GeneChip® Medicago Genome Arrays and found important differences in transcriptome between the three genotypes. The recent rise of consumer consciousness regarding the health qualities of foods and beverages has become something akin to common knowledge. Reflecting this rise, studies reveal that labels regarding the health qualities of a food are more likely to increase sales. And among the health labels consumers prefer, labels describing the product as natural top the list. Isolated food safety crises are not uncommon occurrences in the United States. Indeed, the history of public scares indicates a pattern of deficiencies in the safety of the American food supply. In the early 20th century, the public learned of the squalid conditions of meatpacking facilities through muckraking publications such as Upton Sinclair's The Jungle. In the 1980s, a 60 Minutes report documented research finding carcinogenic properties of a widespread pesticide, traces of which were commonly found in apple-based products. Why is the relationship between our food system and federalism important to American law and health? It is important simply because federal law controls the American food system. This essay considers how federal law came to structure our food system, and suggests that though food is an essential part of our national economy, the dominating role of the federal government alienates citizens from their food system.
