Modern broiler production faces persistent challenges from metabolic and skeletal disorders, particularly ascites and bacterial chondronecrosis with osteomyelitis (BCO), which compromise animal welfare and production efficiency. This dissertation examines two key factors that contribute to these conditions: mitochondrial gene expression associated with pulmonary hypertension syndrome (PHS) and the role of intestinal barrier integrity in mitigating lameness. In the first study, the expression of mitochondrial genes COXII and ATP6 was evaluated in the breast, thigh, and lung tissues of three broiler genetic lines—ascites-susceptible (SUS), ascites-resistant (RES), and unselected relaxed (REL). Feed restriction is common in the broiler breeder industry to optimize health and reproduction. However, this practice has been associated with increased drinking behavior, leading to water spillage, higher litter moisture, and footpad lesions. Consequently, parts of the industry have adopted water restriction protocols. This study aimed to evaluate how different combinations of feed and water restriction affected drinking behavior, welfare, and performance indicators in broiler breeder pullets. The present invention provides Bacillus isolates, as well as probiotic and animal feed compositions comprising said isolates, which may be included in the diet of poultry to improve growth performance with reduced energy diets. This study assessed the use of social media by Extension educators in Arkansas and examines strategies for identifying and combating misinformation within agricultural extension services. Guided by the Uses and Gratifications Theory, the Unified Theory of Acceptance and Use of Technology (UTAUT), and the Third-Person Effect Theory for objectives one, two, and three, this research employed quantitative and qualitative approaches, specifically, two quantitative cross-sectional surveys and a qualitative focus group study developed into a three article dissertation. Since its founding in 1971, CGIAR (formerly the Consultative Group on International Agricultural Research) has been at the forefront of agricultural innovation, credited with launching the Green Revolution and delivering 1.78 trillion USD in net present value (NPV) benefits globally, particularly in low- and middle-income countries. Despite these accomplishments, CGIAR now faces internal and external pressures that threaten its future impact. The 2019 reorganization into “One CGIAR” aimed to enhance coordination but has been criticized for adding bureaucracy and reducing scientific autonomy. Low-moisture food (LMF) processing environments pose a persistent food safety risk due to Salmonella survival and harborage on surfaces. This work investigates persistent bacterial populations (PBPs) in LMF production environments, focusing on identifying a suitable surrogate and evaluating sanitation strategies. Three potential surrogates, Escherichia coli MP 26, Enterococcus faecium, and Pediococcus acidilactici, were compared to Salmonella PBPs formed in nonfat dry milk (NFDM) on stainless steel coupons stored at 25°C under 30% or 70% relative humidity (RH) using two different inoculation methods. E. faecium showed survival patterns most similar to Salmonella, with no significant differences in log reductions (p > 0.05), …

Septic arthritis is a severe joint infection that can rapidly destroy cartilage and cause lifelong disability if not diagnosed and treated promptly. Faster, bedside diagnostic tools are needed to reduce delays and support timely treatment decisions while preserving standard laboratory workflows. A syringe-mounted diffuse reflectance spectroscopy (DRS) system was developed for rapid, sterile, point-of-care measurement of synovial fluid optical properties. Broadband light (400–650 nm) was delivered and collected through the syringe barrel without contaminating the sample. Pasture-raised broiler chickens face temperature extremes that can threaten welfare. In the study, we evaluated whether a 0.26 % tryptophan-supplemented diet (T) improved heat stress (HS) resilience in Ross-708 broilers raised on pasture. At D14, birds began the T or remained on the control diet (C) and were moved outdoors. On D20 and 41, half of each group underwent six-hour HS; the remainder stayed under thermoneutral (TN) conditions. Weekly body weight, feed intake on D20 and D41 were recorded, and fear was measured using the Tonic Immobility (TI) test. Neither diet nor HS affected body weight. Despite being available nationwide since 2016, enrollment in Pasture, Rangeland, and Forage (PRF) insurance remains low in many regions of the country. The program's performance also presents regional discrepancies, with loss ratios varying significantly. Studies that have simplified the complexity of interval selection for producers have been shown to positively affect PRF enrollment. Such studies remain limited in several forage-producing areas. This study aims to address the lack of information in Arkansas specifically. Arkansas has among the nation's lowest participation rates and loss ratios. Potassium (K) deficiency is a common yield-limiting factor in cotton (Gossypium hirsu tum L.) production across the U.S. Cotton Belt. This research examines Postclassic Maya food practices during CE 1200–1600 to understand how eating behaviors reflect systems of social hierarchy, political economy, and cultural identity. The investigation focuses on four archaeological sites in the northern Yucatán Peninsula—Tulum, El Rey, El Meco, and San Miguelito—to examine dietary behaviors through dental microwear texture analysis (DMTA), oral pathology, and stable isotope data within a biocultural framework. Abstract The poultry industry has implemented numerous methods, as marination and aging, to improve meat quality and satisfy consumer demands. Three experiments were developed to assess the effects of vacuum tumble marination and aging on the proteins of chicken breast. These experiments utilized 0.75 % sodium chloride, 0.45 % phosphate, and water in a marinade. In experiment one, 270 fillets were allocated into six treatment groups, each comprising 45 fillets. Colorectal cancer is one of the most fatal diseases in the United States. Chronic tissue inflammation can cause cell proliferation, which leads to tumor formation and cancer development. Macrophages are responsible for maintaining tissue homeostasis and for inflammatory responses. M1 macrophages exhibit proinflammatory responses while M2 macrophages exhibit anti-inflammatory responses. Imbalance between M1 and M2 macrophages is closely related to inflammation-associated disease development. The anti-inflammatory effects of apiaceous vegetable constituents, specifically flavonoids, have been studied for their preventative effects towards reducing disease risk. The resistive pulse technique characterizes single analytes by detecting fluctuations in the ion current as they pass through a narrow orifice connecting two electrolyte-filled chambers, each containing a single electrode. The amplitude, shape, frequency, and duration of these fluctuations primarily provide information about the analyte’s size, shape, concentration, and net surface charge, respectively. One configuration for resistive pulse measurements is of an electrolyte-filled nanopipette immersed in a bath, where the nanopipette tip acts as the nanoscale orifice. The objectives of these studies were to evaluate the impact of retail display case type and muscle type on meat quality attributes, including color, lipid oxidation, texture, and volatile compound profiles, as well as to assess economic implications based on retail color degradation. Heat stress (HS) is one of the most critical environmental challenges negatively impacting global poultry production, significantly compromising broiler performance, welfare, and economic viability. Specifically, heat stress profoundly disrupts physiological and metabolic processes, including hepatic lipid metabolism. Two broiler lines were divergently selected for high (HWE) or low (LWE) water efficiency. Heat-stressed HWE birds showed reduced fat content compared to their LWE counterparts, and HS reduced abdominal fat content in both lines. Introduction Consumer demand for authenticity and sustainability in food systems is growing, creating both opportunities and challenges for entrepreneurs in niche and specialty markets. While wild-foraged and hunted foods are often perceived as more "natural" and sustainable, attempts to scale these products through farming may compromise their perceived authenticity.Methods To explore these dynamics, we conducted discrete choice experiments with a nationally representative sample of 1,039 U.S. consumers. But the potential transfer of the interactive effects of these stressors onto the transgenerational plants has not been understood. Sequential herbivory leads to a multitude of effects on plants, influencing processes like growth, physiology, defense, and fitness. However, whether the sequential herbivore attack can elicit any transgenerational consequences is poorly examined. In this study, we show evidence of transgenerational impacts of sequential herbivory by two chewing herbivores, fall armyworm (Spodopterafrugiperda , FAW) and soybean looper (Chrysodeixis includens , SL) on soybean (Glycine max ) progeny. Limited research has systematically compared the detailed sensory profiles of commercially available gluten-containing (C) and gluten-free (F) cookies using trained panelists. This study aimed to develop a comprehensive sensory lexicon for C and F chocolate chip cookies and identify key sensory attributes that differentiate them. Seven professionally trained panelists created a lexicon of 33 attributes spanning aroma, flavor, basic taste, texture, and residual property. Using this lexicon, a descriptive analysis was conducted on 12 C and 12 F cookie samples. Multivariate analysis of variance revealed significant differences between the two groups across the 33 sensory attributes (p < 0.05). A mixed model analysis showed that C cookies had higher intensities of chocolate-related and sweet aroma complex notes, while F cookies exhibited stronger nutty, artificial, and off-note flavors. In terms of texture, F cookies were higher in toothpack and powdery mouthcoat, while C cookies displayed more melt-in-mouth characteristics. Principal component analysis and agglomerative hierarchical clustering revealed three distinct clusters of test samples within both crispy and chewy cookie types, with some F cookies closely aligning with C profiles. These findings, along with the developed lexicon, provide a valuable foundation for enhancing the sensory appeal and quality of gluten-free chocolate chip cookies.

Introduction Excessive nitrate accumulation in leafy vegetables poses health risks and indicates inefficient nitrogen use in conventional agriculture. While nitrogen metabolism has been extensively studied, the molecular mechanisms linking nutrient deprivation to nitrate reduction in vegetables remain unclear. Methods In this study, we investigated these mechanisms in lettuce (Lactuca sativa var. ramosa Hort.) by analyzing nitrate content and gene expression in leaves and roots under nutrient deprivation. Results After five days of treatment, nitrate content decreased by 57.49% in leaves and 50.77% in roots. Biochar is a charcoal-like substance made by the pyrolysis of organic material from agricultural and forestry waste. While biochar is well documented for altering soil physicochemical conditions, few studies have investigated its possible effects on the management of arthropod pests. Tobacco hornworm (Manduca sexta) and fall armyworm (Spodoptera frugiperda, FAW) are specialist and generalist insect herbivores respectively, that can cause significant defoliation in natural and agricultural ecosystems.
