Anthocyanin Stability In Food Products Made With Freeze-Dried Blueberry Powder, Samantha Findley

This study evaluated the stability of anthocyanins in six blueberry products (gummy, graham bar, oatmeal bar, rice krispy bar, ice pop and juice) prepared with freeze-dried wild blueberry powder during processing and over eight weeks storage. Total anthocyanins were determined by HPLC before processing and at day 0 and 2, 4, 6, and 8 weeks of storage. Thermal processing of gummy and graham bar products resulted in significant losses of anthocyanins (50% and 31%, respectively). An eight-week storage time also resulted in a significant decrease in anthocyanins (7% to 51%) in products stored at ambient temperature. The ice pop, which …

Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. The purpose of this study was to determine if STF’s model is an effective way to increase individuals’ access to fresh fruits and vegetables and increase their potential to meet the United States Department of Agriculture’s Food Patterns (USDA-FP) for to fruit and vegetable consumption. Purpose: Cardiovascular disease (CVD) is a condition that affects adults within the United States. In Oklahoma, CVD is the number one cause of death. Without an intervention, death rate from CVD will continue to rise. This author designed a project to address the needs of reducing CVD among Oklahoma residents. Methods: The Health Belief Model was used to design a screening for CVD within the Electronic Health Record (EHR) using secondary data according to evidence-based guidelines. The Latino population is one of the fastest growing minority groups in the United States. Histomoniasis, commonly known as blackhead disease, has increased in prevalence due to the regulatory ban of prophylactics and therapeutics within the past 30 years. The objective of this thesis was to evaluate the efficacy of selected dietary chemoprophylaxis candidates as well as an in vitro live-attenuated vaccine candidate Histomonas meleagridis for prevention of histomoniasis. Chapter one addresses deoxycholic acid and a biliogenic diet intended to endogenously increase production of this secondary bile acid. Deoxycholic acid was effective in vitro but failed to prevent histomoniasis when evaluated during the in vivo experimental disease trial with turkeys. The biliogenic diet did not …

As Americans are spending greater portions of their dollar on food consumed outside the home, the foodservice industry plays more of an integral part of daily existence compared to previous generations. Given the numerous annual foodborne illness outbreaks that threaten human lives while undermining confidence in the food supply, food safety is a pertinent issue for industry stakeholders, government regulators, and consumers. Mitochondria are vital to the proper growth and function of muscle cells since they’re responsible for the majority of ATP production used for cellular energy. Previous studies have investigated how differences in mitochondrial function affects feed efficiency (FE) in broilers phenotyped for High and Low FE. Low FE broilers have been shown to have increased levels of reactive oxygen species (ROS), thus contributing to higher levels of oxidative stress and damage seen in these birds. Analysis of peripheral venous pressure (PVP) waveforms is a novel method of monitoring intravascular volume. Two cohorts were used to study the hemodynamics change of the body state and its influence on the PVP using (1) dehydration setting with infants suffering from pyloric stenosis and (2) hemorrhage setting during a craniosynostosis elective surgery. The goal of this research is to develop a minimally invasive method of analyzing the PVP waveforms and find correlations with volume loss.

This mixed qualitative and quantitative methods study addressed the effect of technology on college algebra and survey of calculus students’ understanding. This research study was conducted in fall 2016 on eight college algebra classes with a total of 315 students, and in summer 2017, on two survey of calculus classes with a total of 40 students at the University of Arkansas.

As individuals enter adulthood, their lifestyles and lifestyle behaviors begin to change drastically. These lifestyle behavior changes in emerging adulthood provide a foundation for future health behaviors that often persist through all of adulthood. The aim of this study was to use Latent profile analyses (LPA) to discover distinct profiles of homogenous groups of young adults based on alcohol, diet, and exercise behaviors. Overall, five distinct profiles for both males and females were identified: Moderates, Unhealthy Eaters, Medium Drinkers, Healthier Eaters and Exercisers, and Heavy Drinkers. Crude protein needs of chickens have changed due to genetic line differences and selection of those lines for differing broiler traits. Standard commercial broiler strains have been selected to be used to meet multiple processing categories typically at live body weights less than 3.5 kg. In the last two decades high-yielding broiler strains were introduced into the commercial market. These breeds are known as the Cobb 700 and Ross 708. The works included within are focused on the Cobb 700 high-yielding broiler strain, and its response to crude protein, with emphasis on digestible lysine.

This thesis contains two articles that describe and characterize the use of the social media platform of blogging in the context of the animal agriculture and protein industry. The first article used content analysis to analyze blog posts and look for themes throughout the posts. This study included 37 posts from ten authors and resulted in four recurrent themes. The major themes were environment, consumption of protein, alternative protein source, and alternative dieting. The tones regarding these themes were both negative and positive toward the protein industry.

Clinicians, professional athletes, and recreational athletes are interested in supplementation that up-regulates nitric oxide (NO) production in blood vessel endothelium, increasing arterial vasodilation. Benefits from these supplements include improvements in blood pressure, muscle hyperemia, and exercise performance. Citrulline Malate (CM) is a pre-workout ingredient, popular for its ability to increase exercise performance and blood serum concentrations of L-arginine, resulting in NO production. However, previous studies have not used gold standard measures of body composition in a college population. For more than forty years, the United States Department of Agriculture Supplemental Nutrition Assistance Program (SNAP; formerly Food Stamps) has offered nutrition assistance to nearly forty million eligible individuals and families each month. This article first provides a brief overview of the evolution of the United States’ largest domestic food security and nutrition safety net program. Then, the article reviews Congressional actions taken regarding SNAP during the 2018 Farm Bill deliberations, appropriations for fiscal years 2017 through 2020, and oversight (in)activities. Hydroponics is an agricultural technology that involves growing plants without soil, instead using other growth media with added nutrients, typically inside a controlled facility such as a greenhouse. Hydroponics-based agriculture has a number of benefits, namely that it is more water efficient, requires less intensive labor, yields higher quality crops consistently in shorter time, and is easier to control. It also has the potential to be economically advantageous, due to its ability to grow certain crops in the off-season.
