Introduction: Lifelong dietary habits are shaped during young adulthood; hence, preventing poor food choice practices during this period is vital. Stress and sleep deprivation are two important lifestyle elements that affect eating habits. The purpose of this study was to evaluate stress and sleep deprivation as factors contributing to poor dietary choices of college-aged students. Methodology: During finals week, a survey inquiring about sleep duration, perceived stress, and dietary patterns throughout the semester (typical week vs. finals week), was administered to university students (n=83). Weaning is a stressful time in a piglet’s life that can have negative impacts on performance and health if not managed properly. The objective of this research was to evaluate the effects of a bioprocessed SBM alone or in combination with spray-dried plasma (SDP) or fishmeal (FM) on immune response at weaning with no imminent disease threat and during a porcine reproductive and respiratory virus (PRRSV) challenge. Preschool-age children have the potential to be influenced by their physical home environment and their parents’ physical activity (PA) practices more than older children as preschool-age children are more reliant on parents for PA opportunities. Previous research with this focus has relied predominantly on various subjective assessments of child activity, often resulting in overestimation of PA and underestimation of sedentary time (ST). Nutritional changes immediately after insemination can result in increased embryonic mortality, but the mechanisms that cause this increased mortality and the impact on the embryos that survive are not known. Therefore, two experiments were conducted to evaluate the impact of a nutritional change immediately following AI on calf performance, global DNA methylation, estrus expression and interval to estrus in heifers, peripheral metabolites, uterine luminal fluid metabolites, and day 6 embryo quality. Purpose: To determine if personality style and an individual’s perception of their health coaching experience impact their ability to lose weight and/or maintain weight loss. Methods: An electronic survey was distributed to 20,000 current and past meal replacement program participants. Personality style was assessed via the Ten Item Personality Inventory, providing individual perceptions of each of the Big Five personality domains (extraversion, agreeableness, conscientiousness, emotional stability, and openness to experience). Ruminants can use plant fiber to produce food products that provide nourishment to humans. However, a precise understanding of specific plants selected by grazing ruminants remains elusive. Many long- and short-term factors impact cattle grazing behavior. Ultimately, grazing behavior can affect forage available for grazing, nutrient density of forage, dry matter intake, and animal performance. A myriad of grazing management strategies have been developed utilizing animal behavior to allow more efficient use of forage resources. Wheat (Triticum aestivum L.) is the most widely cultivated crop in the world and contributes about 20% of the total dietary calories and proteins globally. Unique properties of doughs formed from wheat flour make it feasible to produce a range of food, including bread. Loaf volume is the most perceptible indicator for breadmaking quality. Selection in the early generations for loaf volume is difficult due to the requirement of the large volume of grains and due to the costly, time-consuming, and labor-intensive evaluation process. Background: Self-efficacy is a crucial component in effective health communication and health promotion interventions and serves as a moderator for behavior change. Although awareness and risk perception are important in the behavior change process, self-efficacy gives people the necessary confidence in their ability to engage in advocated health behaviors. In addressing childhood obesity, self-efficacy plays a crucial role in dietary decisions. Informed by the social cognitive theory, this study examines the personal and environmental factors that determine self-efficacy for healthy food choices and healthy eating among adolescents in low-income communities.

The purpose of this project is to describe the development and implementation of cancer SCPs at three health systems’ cancer centers in a rural state. Collectively, these centers serve most cancer patients residing in SD, making the partnership across the cancer centers innovative. Each of the three health systems and their affiliated cancer centers is unique in its history, culture, and infrastructure. Quality Changes And Freezing Time Prediction During Freezing And Thawing Of Ginger, Poonam Singha, Kasiviswanathan Muthukumarappan

Effects of different freezing rates and four different thawing methods on chemical composition, microstructure, and color of ginger were investigated. Computer simulation for predicting the freezing time of cylindrical ginger for two different freezing methods (slow and fast) was done using ANSYS® Multiphysics. Different freezing rates (slow and fast) and thawing methods significantly (P < 0.05) affected the color and composition of essential oil in ginger. Fresh ginger was found to contain 3.60% gingerol and 18.30% zingerone. A maximum yield of 7.43% gingerol was obtained when slow frozen gingers when thawed by infrared method. Maximum zingerone content of 38.30% was achieved by thawing slow frozen gingers using infrared-microwave method. Microscopic examination revealed that structural damage was more pronounced in slow frozen gingers than fast frozen gingers. Simulated freezing curves were in good agreement with experimental measurements (r = 0.97 for slow freezing and r = 0.92 for fast freezing). Slow freezing damaged ginger’s cellular structure. Data obtained will be helpful in selecting appropriate thawing method to increase desirable essential oil components in ginger. Computer simulation for predicting freezing time may help in developing proper storage system of ginger.

Dietary modulation of the gut microbiota impacts human health. Here we investigated the hitherto unknown effects of resistant starch type 4 (RS4) enriched diet on gut microbiota composition and short-chain fatty acid (SCFA) concentrations in parallel with host immunometabolic functions in twenty individuals with signs of metabolic syndrome (MetS). Cholesterols, fasting glucose, glycosylated haemoglobin, and proinflammatory markers in the blood as well as waist circumference and % body fat were lower post intervention in the RS4 group compared with the control group. 16S-rRNA gene sequencing revealed a differential abundance of 71 bacterial operational taxonomic units, including the enrichment of three …

This study investigated the influence of utilizing a collegiate mascot as a marketing tool for the promotion of fruit and vegetable intake and physical activity among 4th grade students. The program utilized service learning and formative research for the development of a social marketing campaign comprised of nutrition education and brand marketing. A pre-test/post-test design was used to measure fruit and vegetable intake and physical activity in participants in intervention and control schools. Awareness and understanding of the campaign was assessed post-intervention. There were no changes in fruit and vegetable intake or physical activity. However, 91% of the intervention students …
