The overall objective of this dissertation was to determine the impact of finishing systems on carcass and palatability attributes of bison. The specific objectives were 1) determine the influence of finishing system (grain-finished vs. grass-finished) on the mechanisms of tenderness formation in the longissimus lumborum of bison bulls, 2) determine the influence of diverse finishing systems on carcass characteristics and proximate composition of bison heifers, and 3) determine the influence of diverse finishing systems on palatability of striploin steaks from bison heifers. Results indicate that finishing systems differentially influence carcass characteristics, tenderness, and flavor attributes of bison. Specifically, this is …

Cold and wet spring conditions during planting in the Northern Corn Belt can limit nutrient mobility, especially phosphorus (P) due to reduced mineralization. This often triggers the use of starter fertilizers to enhance nutrient availability within the root zone, and as a result improve nutrient uptake and the overall plant growth. Biological Nitrogen Fixation (BNF) has surged as a natural strategy to provide available nitrogen to crops by taking advantage of diazotrophs, microorganisms that can reduce atmospheric nitrogen to ammonia. Soybean, a major crop, greatly benefits from BNF by forming endosymbiotic relationships with rhizobacteria from the genus Bradyrhizobium, which culminates in the formation of specialized organs called nodules, where nitrogen fixation occurs. This is known as Symbiotic Nitrogen Fixation (SNF). Inoculation of soybean fields with high nitrogen fixing Bradyrhizobium strains to stimulate SNF is being used as a strategy to increase crop productivity and nitrogen content. Various technologies and alternative ingredients are being developed to increase the nutrient value of fibrous feedstuffs, improve animal performance, and promote sustainable swine production. Fiber-degrading enzymes have been extensively studied in growing pigs, with few studies focused on gestating sows. When considering gestating sows have greater energy digestibility of fibrous feedstuffs than grower pigs, the efficacy of fiber-degrading enzymes needs to be determined for implementation in commercial sow diets. Objective: Quantify South Dakota (SD)’s capacity to procure locally-sourced fruit and vegetables (FVs) for K-12 school meals.
Methods: Secondary analysis of 2017 SD agricultural census and school meal data. Yields were converted to edible cups of FVs using school meal guidelines provided by the U.S. Department of Agriculture. Student enrollment and meal redemptions were used to estimate the number of FV cups needed.
Results: Estimated SD FV production met minimum total K-12 cup requirements, except for total fruit (66%) and dark green vegetables (80%). Legumes supplied 77% of the total cups of vegetables produced in 2017, whereas dark green vegetables …

Despite its excellent nutritional profile, soybean meal (SBM) is limited in nursery pig diets due to its anti-nutritional factors (ANFs), which young pigs tolerate poorly. In the first study, strategies to mitigate these effects included supplementation with enzymes, alone or with acidifiers. A total of 240 weaned pigs (5.9 ± 0.8 kg average body weight [BW]) were assigned in randomized complete block design to five dietary treatments: low, medium, or high SBM diets, high SBM with multienzyme, and high SBM with multienzyme plus acidifier. Every year, one-eighth of all North American bison (Bison bison) are translocated, often across large climatic gradients. Over the last 16 years bison have been translocated from Wind Cave National Park in South Dakota to establish six herds across the United States central grasslands in Iowa, Missouri, Illinois, Indiana, and Kansas. Influence of climatic gradients on herd-level thermoregulation, body size, and helmintic infection were evaluated. Overall, 1174 thermal images and 1050 fecal samples were collected between 2021 and 2023. Beef tenderness formation is influenced by various factors, such as temperature decline and proteolysis. Limited focus has been given to the effects of carcass weight on proteolysis. The Afrikaner breed of cattle is indigenous to South Africa and due to their hardiness was once the most popular breed amongst farmers. The objectives for this study were to: (1) estimate environmental effects (age at first calving, season) and (2) genetic variance affecting longevity in Afrikaner cattle using survival analysis and a Weibull model and (3) evaluate the effect of the Infusion Project on longevity utilizing a Cox model. This research investigated the competitive bidding dynamics for infant formula rebate contracts within the Special Supplemental Nutrition Assistance Program for Women, Infants, and Children (WIC). I begin by focusing on the differences between winning and losing bids. The study employs multiple regression to predict rebate bids submitted by major manufacturers when they win a contract. I next conduct a paired t-test for each manufacturer – revealing statistically significant differences between predicted bids (based on the parameters from the winning model) and actual bids when a manufacturer did not win. Recent studies have suggested that dietary rumen-protected choline (RPC) supplementation can modulate immune function, attenuate inflammation, and improve performance in periparturient dairy cattle; however, this has yet to be evaluated during a mastitis challenge. Therefore, the objective of this study was to examine the effects of supplementation and dose of RPC on metabolism, inflammation, and performance during an intramammary lipopolysaccharide (LPS) challenge. The study aimed to develop a locust protein (Loct-Prot)-based film to enhance the lipid oxidative and storage stability of chocolate. The E. purpurea flower extract based-nanoparticles (EFNPs) were developed using ultra- sonication (500 W and 20 kHz for 10 min) following a green method of synthesis. The EFPNs were incorporated at different levels [T0 (0%), T1 (1.0%), T2 (1.5%), and T3 (2.0%)] to impart bioactive properties to the Loct-Prot- based films which were used for packaging of white chocolate during 90 days trial. The addition of EFPNs increased (P < 0.05) the density of the Loct-Prot-based film which in turn decreased (P < 0.05) the transmittance (%) and WVTR (water vapour transmission rate, mg/mt2) with increasing levels of addition. While brightness (L*) showed a decrease, redness (a*) and yellowness (b*) increased with increasing concentration of EFPNs. No significant (P > 0.05) effect was recorded on other physicomechanical parameters of the film. …

However, its use can result in texture defects such as a soft body and restricted melting characteristics. Many dietary guidelines and the relevant literature have in general indicated many benefits of consuming milk-fat-rich products for the human body. As a group of essential biopolymers, carbohydrates exist widely in living organisms and play many known and unknown biological roles in life activities via different pathways. Carbohydrates are widely used in foodstuffs, pharmaceuticals, biofuels, and biomaterials, to name a few. Parallelly, a growing understanding and deeper investigation drive the development of natural carbohydrates for novel applications, especially for treating chronic diseases, e.g., hyperlipidemia, obesity, and diabetes. The emerging evidence indicates that carbohydrates are effective for modulating gut microbiota, a vital organ in health and diseases.
