Hospitality And Destination Marketing's Role In Medical Tourism: A Call For Research, Dan Cormany
Faculty Publications
Like business travel, where the primary focus is on business and travel is the simply the conduit by which it is performed, medical tourism is a growing trend in which individuals journey to foreign countries primarily to secure specific medical procedures or health benefits. The medical tourist is a newly defined segment of the travel industry, and while still small in numbers, is growing rapidly. This paper seeks to identify research questions related to the hospitality elements that contribute to the medical tourism experience. The answers to these may aid hoteliers, tourism operations, and visitor bureaus better understand, service and …

Reducing Portion Size Reduces Food Intake And Plate Waste, Marjorie Freedman, Carolina Brochado
Reducing Portion Size Reduces Food Intake And Plate Waste, Marjorie Freedman, Carolina Brochado
Faculty Publications
As portion size (PS) increases, so does food intake. The effect of decreasing PS on food intake in a nonlaboratory setting is unknown. This 5-week study sought to determine whether decreasing PS resulted in decreased intake of the same food, and if so, at what point further PS reductions might lack benefit. It also assessed effects of PS reduction on food production and waste in a university all-you-can-eat dining facility (DF). Subjects were primarily freshmen who regularly ate lunch at the DF, and self-selected French fries (FF) presented in individual paper bags, portioned originally at 88 g, and decreased ∼15 …
A “Healthy Pizza Kitchen” Nutrition Education Program At A Children's Health Museum, Marjorie Freedman
A “Healthy Pizza Kitchen” Nutrition Education Program At A Children's Health Museum, Marjorie Freedman
Faculty Publications
For nutrition education to be successful in changing behavior, schools, families, and communities must participate in or provide a variety of diverse, creative, accessible, and culturally appropriate programs. One venue for provision of nutrition education is a health and science education center that has exhibits and special programs not found in an average school. Establishing relationships with these organizations could greatly enhance a school health curriculum.1 Although nutrition information, displays, and programming are often found in these centers, studies examining whether provision of nutrition education in these venues increases knowledge or changes behavior are lacking. The purpose of this study, …

Scientometric Study Of Doctoral Dissertations In Biochemistry In The University Of Kerala, India, K.G. Pillai Sudhier, V. Dileep Kumar
Scientometric Study Of Doctoral Dissertations In Biochemistry In The University Of Kerala, India, K.G. Pillai Sudhier, V. Dileep Kumar
Library Philosophy and Practice (e-journal)
Biochemistry is the most fascinating subject as it deals with the chemical language of life. The ultimate goal of biochemistry is to describe the phenomena that distinguish living from non-living in the language of chemistry and physics. Researchers in biochemistry use specific techniques native to biochemistry, but increasingly combine these with techniques and ideas from genetics, molecular biology and biophysics. In India at present around 75,000 students are enrolled in research and nearly 11,000 are awarded PhDs every year, of which 50 percent are from science and technology disciplines. Theses and dissertations reflect the scholarly communication process. Scientometrics and citation …

A Snapshot Of Information-Seeking Behavior Literature In Health Sciences: A Bibliometric Approach, Ahmed Bakeri Abubakar, Yahya Ibrahim Harande
A Snapshot Of Information-Seeking Behavior Literature In Health Sciences: A Bibliometric Approach, Ahmed Bakeri Abubakar, Yahya Ibrahim Harande
Library Philosophy and Practice (e-journal)
This study is a snapshot on the literature of information seeking behavior in the discipline of health sciences during the years 2000-2007. A total of 801 papers were identified in Medline through the PubMed database. Bibliometric analysis was conducted to explore growth of the literature, authorship patterns, and Bradford distribution of the literature and language of dispersion of the literature. The findings indicate that there is a rapid growth of information seeking behavior in health sciences from 2004 onward. On the language of dispersion of the literature, English was found to be dominant with score of 56 percent, followed by …
Nigeria Public Library Service To Rural Areas: Libraries In Niger Delta States, Posigha Bassil Ebiwolate
Nigeria Public Library Service To Rural Areas: Libraries In Niger Delta States, Posigha Bassil Ebiwolate
Library Philosophy and Practice (e-journal)
The library and its services are fundamental to the socioeconomic and educational development of a nation. In the Niger Delta, a majority of the people live in rural areas and engage in fishing and farming. Library services can improve their level of literacy and education and and enhance their ability to use information relevant to their daily lives. Barriers to library service in the rural areas of the Niger Delta are poor infrastructure, inadequate funding, and inadequate staffing. Recommendations are made to improve the situation.

Impact Of After-School Nutrition Workshops In A Public Library Setting, Marjorie Freedman, Audrey Nickell
Impact Of After-School Nutrition Workshops In A Public Library Setting, Marjorie Freedman, Audrey Nickell
Faculty Publications
Objective: To determine if after-school nutrition workshops conducted in public libraries were related to lasting changes in food choice. Methods: “Snack Smart” workshops, based on Social Cognitive Theory, were conducted in 8 branch libraries (49 ethnically diverse children, ages 9 to 14) to assess changes in consumption of targeted food items by pretest, posttest, and follow-up food frequency questionnaires. Results were analyzed using the Friedman test for repeated measures and Wilcoxon signed rank test. Results: Intake of milk, vegetables, and water significantly increased at 3-week posttest (P < .05), but only water intake showed a significant change from pretest to follow-up 3 months later. Conclusions and Implications: This low-intensity program did not produce lasting behavior change, as measured by changes in food frequency at 3 months post- intervention. The study supports the need to critically evaluate out-of-school nutrition programs for lasting impact.
