Service-learning is an instructional method in which students learn course content by actively participating in thoughtfully organized service experiences related to the content. Effectively linking service-learning to course content not only offers students a powerful opportunity to maximize academic learning, but also promotes their personal growth and instills a commitment to lifelong, civic engagement. Service-learning was integrated into an upper level Family and Consumer Sciences Adolescent Development course. In addition to completing the traditional course work, students also completed a service-learning experience at a community agency that served adolescents. Enhancing Research And Practice In Early Childhood Through Formative And Design Experiments, Barbara A. Bradley, David Reinking

This article describes formative and design experiments and how they can advance research and instructional practices in early childhood education. We argue that this relatively new approach to education research closes the gap between research and practice, and it addresses limitations that have been identified in early childhood research. We provide examples of this approach's potential benefits, trace its origins, present its defining characteristics, illustrate a representative framework for conducting a formative experiment using an example from our own work and we argue that formative and design experiments introduce useful new metaphors into early childhood research.

Beginning in the late 1940s, concerns arose about the enlarging scope of the industrial American food system. Subsequent analysis revealed a continuing pattern of expansion throughout the 1970s and 1980s. A countermovement developed with the aim of altering food production and distribution to create more regionalized food systems. Eventually, individual states came to create their own marketing programs to promote locally grown foods. Private interests also developed initiatives to promote eating locally. By 2007, the term coined to describe one who strives to eat local foods, "locavore," had become New Oxford Dictionary's Word of the Year. The states' efforts are …

Effect Of Molecular Weight Reduction By Gamma Irradiation On The Antimicrobial Activity Of Chitosan, Ebuel Sirmats

The antimicrobial effectiveness of lower molecular weight (LMW) chitosan solutions was tested against Listeria innocua inoculated on TSA and MOX agar plates by the direct droplet method. The chitosan solutions were prepared by dissolving chitosan in 1% (v/v) acetic acid at concentrations ranging from 0.5 to 2.0% and irradiating with Co60 gamma rays ranging from 1 to 20 kGy. MW measurements of chitosan were determined by using HPSEC-MALLS-RI. The MW of chitosan varied from 114.8 kDa to 17.4 kDa and decreased with increasing irradiation dosages. Plate counts on TSA agar from shaker flask assays showed no significant differences among chitosan …

Research was conducted to determine the effect of tall fescue and alternative management regimens on reproduction in replacement beef heifers. Angus _ Simmental heifers (n = 48; 318 ± 4.99 kg initial BW) stratified by weight and pubertal status were assigned to one of three replicated grazing treatments: (1) toxic endophyte-infected tall fescue (TF); (2) toxic endophyte-infected tall fescue with a soybean oil supplement (TFO); or (3) mixed winter annual species (cereal rye, annual ryegrass, crimson clover and hybrid turnip) (M). Tall fescue endophyte infection level was between 74 and 94%. Pastures were grazed from December 12 to April 24. …

The primary objective of this study is to provide evidence that a culinary nutrition intervention is appropriate for, and of value to college students. A secondary objective is to provide evidence that the nutrition component of a culinary nutrition course can be delivered online through an interactive presentation. The study initially involved a review of literature highlighting the nutrition habits of college students, the strengths and weakness of existing cooking and nutrition classes, and other factors relating to the college student's health. Linepithema humile (Mayr), the Argentine ant, is known as a pest in many urban areas of the southeastern United States. In the Piedmont region of South Carolina, there is a documented problem with L. humile invading the campsites of state park campgrounds. While some parks have tried to implement proactive control programs, the most widely used tactic is spraying insecticides when L. humile populations become intolerable to visitors. Although park personnel are treating problem areas with liquid insecticide, park visitors also treat their campsites with insecticidal products, as well as products not labeled for ant control.

There is a significant body of research on the relationships between exercise and nutrition for enhancing athletic performance. However, there is a deficit of research on the relationship between time of eating and athletic injuries. Thus, the purpose of this study was to explore the relationship between the time of eating and athletic injuries in collegiate student-athletes. Given the potential relationship between night eating, sleep disruption, and impaired wound healing, the hypothesis of this research is that eating late at night increases the incidence of chronic athletic injuries.

The objective of this study was to evaluate how forages grazed during the summer months alter live animal performance, carcass quality, consumer acceptability and fatty acid composition in finishing beef cattle. Angus-cross steers (n=60) were finished on alfalfa (AL), bermudagrass (BG), chicory (CH), cowpea (CO), and pearl millet (PM) during this two year trial. Using a complete randomized block design, ten 2-ha paddocks were blocked and assigned to forage species (2 reps per species). Tissue engineered constructs with autologous adult stem cells capable of self-repair and growth are highly desired replacements for diseased heart valves. However, the current approaches have inadequate mechanical properties to withstand in vivo implantation. Therefore, our group hypothesized that an in vitro environment of physiological intra-cardiac pressures and flow will stimulate stem cells to differentiate and remodel valvular scaffold constructs before implantation.
The group developed a pneumatic-driven conditioning system (Aim I) consisting of a three-chambered heart valve bioreactor, a pressurized compliance tank, a reservoir tank, one-way valves, pressure-retaining valves, and pressure transducers. The purpose of this study was to determine the driving factors in food choice. The Flavor Pyramid, introduced by Steven Kaun, indicates that the foundation of consumer food choice is emotional (Kaun, 2005). This study serves as a preliminary means to validate the role of the emotional component of food choice in today's market. Four gingerbread formulas, one from 1430, 1861, 2004, and a new product, were evaluated in a sensory panel in order to collect preliminary data on the role that food emotions play in consumer preference. The small GTPase, Rab8, has been shown to play a role in cell-cell adhesion and restructuring of the actin cytoskeleton in both mammalian cells and the lower eukaryote, Dictyostelium discoideum. In D. discoideum, cells expressing constitutively activated Rab8 (Rab8CA) display reduced cell-cell adhesion and increased actin-rich protrusions as well as delayed aggregation. Rab8 has been implicated in the restructuring of the actin cytoskeleton, but no specific pathway for this action has been identified. In other systems, actin-rich membrane extension formation is regulated by WASp family proteins, including SCAR. Here we provide evidence of a functional relationship between the WASp family …

Meat continues to be the most in-demand food item for the Utah Food Bank. To address this issue, the 4-H Donated Meat Program was started by a 4-H Club in Davis County, Utah. When Utah State University Extension Agents in Davis, Salt Lake, Weber, and Morgan Counties became involved in the program it expanded rapidly. The program was made possible through generous donations from corporations allowing for the purchase of market livestock exhibited by 4-H youth at county fair livestock sales. USDA certified processed meat was then donated to the Utah Food Bank for distribution to hungry families in the …

A recent report, 4-H Critical Indicators of Youth Development Outcomes for Mission Mandates, outlines a nationwide evaluation of youth program quality and impact of three new programming initiatives. The plan is presented as a model for youth development impact and organizational change. Discussion focuses on the three components of the plan, including evaluation context, framework for assessing program quality and outcomes, and implementation issues critical to successful evaluation.

An Evaluation Of The University Of Illinois Extension Get Up & Move! Program, Mary Ann Halpin, Susan M. Farner, Stephen J. Notaro, Sheri Seibold

Get Up & Move! is a program created by University of Illinois Extension to address childhood obesity. It provides ready-to-use materials for youth leaders to promote healthy lifestyles through physical fitness and healthy eating. The impact of the program on participants’ physical activity was evaluated to see whether involvement produces an increase in physical activity to the USDA recommended 60 minutes per day. It was found that a significant increase in minutes of physical activity occurred in participants from an average of 51.88 minutes per day to an average of 58.84 minutes per day.

Antioxidant And Anticancer Activities Of Wampee (Clausena Lansium (Lour.) Skeels) Peel, K. Nagendra Prasad, Jing Hao, Chun Yi, Dandan Zhang, Shengxiang Qiu, Yueming Jiang, Mingwei Zhang, Feng Chen

Antioxidant activities of wampee peel extracts using five different solvents (ethanol, hexane, ethyl acetate, butanol and water) were determined by using in-vitro antioxidant models including total antioxidant capability, 1,1-diphenyl-2-picryl hydrazyl (DPPH) radical scavenging activity, reducing power, and superoxide scavenging activity. Ethyl acetate fraction (EAF) exhibited the highest antioxidant activity compared to other fractions, even higher than synthetic antioxidant butylated hydroxyl toluene (BHT). In addition, the EAF exhibited strong anticancer activities against human gastric carcinoma (SGC-7901), human hepatocellular liver carcinoma (HepG-2) and human lung adenocarcinoma (A-549) cancer cell lines, higher than cisplatin, a conventional anticancer drug.
