This paper is a case study of an urban agriculture operation in Aurora, Colorado that focuses on providing refugees with food and work that contributes to a sense of community connectedness and pride. The paper is also a proposal for a high tunnel system that could extend the growing season of the farm and provide unique opportunities for urban farmers to learn about emerging resiliency based food production practices.

Non-alcoholic fatty liver disease (NAFLD) represents the major cause of pediatric chronic liver pathology in the United States. The objective of this study was to investigate the effect of partial substitution of dietary lard by an isocaloric amount of olive or coconut oil on endpoints of NAFLD. Thirty-eight 15-d-old Iberian pigs housed in pens balanced for weight and sex were randomly assigned to receive 1 of 3 hypercaloric high-fructose high-fat (HFF) diets for 10 weeks: 1) lard (LAR; n=5 pens), 2) lard + olive oil (OLI, n=10), and 3) lard + coconut oil (COC; n=10). To research the relationship between Childhood obesity and infant feeding patterns, the Electrical Engineering Department at California Polytechnic State University has designed a SmartBottle device attaching to the bottom of a baby bottle to monitor the infant feeding process. This project mainly focuses on the software and firmware design, as well as the neural network design of the SmartBottle device. The SmartBottle device is designed to identify infant feeding activities and to record related data for overweight and obesity research on children. Food Stamp Enrollment And Mental Health: An Implicit Tax On The Poor, James Calvin Hasbany

Economics

Objectives. This study examines whether food stamp participation status impacts the mental health of its recipients.

Methods. We use 2017 data from the Michigan Panel Study of Income Dynamics to construct a propensity score model to match treated and control individuals, circumventing inherent selection bias and estimating causal effects.

Results. We find that enrolling in food stamps within the past 30 days increases the frequency of emotional distress over the same timeframe, manifesting specifically in more frequent feelings of sadness, nervousness, hopelessness, ‘everything being an effort,’ and worthlessness.

Conclusions. Food stamp enrollment harms mental health more than it benefits it, …

With the rapidly growing elderly population in the United States, the number of people diagnosed with dementia and Alzheimer’s Disease (AD) is increasing dramatically. For these patients, it is crucial to slow the rate of progression. Research has proven that exercise improves cognition, and recent findings suggest a similar association among those with AD. The COVID-19 pandemic provides an important opportunity to understand how parenting stress during social crisis may predict child feeding practices and perceptions of child mealtime behaviors. The objective of the present study was to explore whether parents’ perceived increases in and overall levels of parenting stress during the pandemic were associated with controlling feeding practices and perceptions of child eating behaviors. The following study explores the presence of eating disorders on Cal Poly’s campus and how the implementation of the Body Positive program as a part of Campus Health and Wellbeing (CHWB) will assist those struggling with eating disorders. 13.5 percent of college women suffer from eating disorders, (Eisenberg 2011), and 20 percent of college students say they have suffered from an eating disorder at some point in their lives (NEDA). Background: Previous research suggests parents' use of technological devices, such as TV and mobile devices, within family contexts may decrease the quality of parent-child interactions. During early infancy, mothers report engaging with technological devices during infant feeding and care interactions, however, few studies have explored potential associations between maternal technology use and the quality of mother-to-infant attachment.

Aim: To examine associations between maternal technology use during mother-infant interactions and indicators of mother-to-infant attachment during early infancy.

High gravity (HG) brewing has become the most used strategy for maximizing fermenter productivity in commercial brewing. While HG brewing has many benefits, the additional stress placed on the yeast due to the higher concentration of fermentable sugars in the wort can negatively impact fermentation performance and flavor compound formation. A proper dissolved oxygen (DO) level is vital to guarantee adequate yeast performance during HG fermentations. The fresh-cut produce industry has seen expansive growth in recent years, to meet consumer demand ready-to-eat (RTE) salads have included the use of non-traditional ingredients. Uncommon ingredients include beet greens, kale, broccoli stalk, and Brussels sprouts, since these ingredients have not historically been consumed raw, potential food safety issues should be reassessed. Current processing technologies include produce washes that can reduce microbial levels but do not eradicate all populations. For years the issue of food waste has been recognized and quantified; however, food safety issues often go unrecognized as a source of food waste. One objective of this research is to estimate quantities and monetary value of fruits and vegetables implicated in food safety recalls, and thus wasted. Using publicly available data we identified all recalls involving vegetable or fruit commodities contaminated with Listeria monocytogenes, pathogenic E. coli, or Salmonella during 2015-2018. Background: The Special Supplemental Nutrition Program for Women, Infants and Children (WIC) provides enough formula to meet the known nutritional needs of infants up to 6 months of age whose mothers report not breastfeeding, but many mothers report WIC providing insufficient formula, indicating potential overfeeding.

Objective: To estimate the prevalence of potential overfeeding among formula-feeding WIC participants and identify associated factors.

Fruit tree leaf nutrient concentrations are commonly used to determine fertilizer rates, but information is limited regarding nutrient requirements, seasonal N uptake and removal rates, and soil N dynamics for pomegranate. Relationships between fertilizer rates, leaf nutrient concentrations, fruit yield and quality were examined in five mature, commercial California ‘Wonderful’ pomegranate orchards. Site 1 was observed for two growing seasons (2018-2019) and sites 2-5 were observed for one season (2018 or 2019). This study evaluates soil properties that impact the effectiveness of soil aquifer treatment (SAT) as a polishing step to the remove two classes of ECs from wastewater effluent: pharmaceuticals and personal care products (PPCPs), and engineering nanomaterials (ENMs). In recent years, it has been determined that elevated levels of emerging contaminants (ECs) are being released into the environment with wastewater effluent. ECs are proven to cause adverse environmental and health effects as a result of long-term exposure. Parents play a critical role in the development of children's eating behaviours and weight status, serving as providers, models and regulators of the food environment. Many research reviews have focused on the robust body of evidence on coercive control in feeding: how parenting practices such as restriction and pressure to eat increase children's risk for developing undesirable eating behaviours and unhealthy weight outcomes. Fewer reviews adopt a strengths-based perspective focusing on the ways that parents can actively support the development of healthy eating behaviours and weight trajectories. Nutritional evidence suggests that a vegan diet is the most adaptive one for humans. An ethical principle based on following our biological nature (naturalistic ethic) could therefore provide additional support for a vegan diet. However, some argue that humans in the natural world could not eat a vegan diet, since it relies on supplements, particularly vitamin B12. This leads to the conclusion that humans are naturally omnivores, and therefore our natural diet should include small amounts of animal products.

This paper addresses the ways in which the kitchen has historically existed as a site of violence and worked to actively exclude marginalized people. Working with Judith Butler’s definition of queer and José Muñoz’s concept of queer futurity, the concept of queering the kitchen is discussed as a method for creating accessible, equitable, and inclusive kitchens.

Understanding spatial and temporal patterns in the recruitment of marine invertebrates with complex life histories remains a critical knowledge gap in marine ecology and fisheries. As marine invertebrates are facing multiple stressors from overfishing and climatic stress, it is important to evaluate the conditions that facilitate recruitment in low-density populations. The red abalone Haliolis rufescens historically supported an economically important fishery in California, but the fishery was sequentially closed as stocks declined, and the last fished area was closed in 2018 following the collapse of the kelp forests in Northern California. It is estimated that roughly 103, 515 tons of peach waste is produced annually in the US. The majority of the waste is disposed of in landfills, which contributes to climate change as they release 93 million metric tons of CO2 equivalent. Peach waste principally consists of remaining stone and seed after flesh removal. The agro-waste includes both cellulose and lignin, which can be utilized as a filler in plastic packaging to reduce carbon footprints and material cost. Rapid infant weight gain (RWG) in the first six months postpartum is a strong predictor for obesity during childhood and adolescence. Although biological factors can influence infant weight gain trajectories, the modifiable factor of parent feeding practices can also have an influence.
