The session will also explain how Cal Poly Chocolates, an enterprise project of the university’s Food Science and Nutrition Department, has sold over $40,000 of fair trade chocolates in one year. In closing, Simcha Udwin will discuss how she developed a book and educational materials re-use program which meets the needs of prison and jail education programs, while helping the campus reach zero waste.

Learn about campuses who are taking the lead in recycling post-consumer materials from food waste to biodegradable dishware. The presentation will address both off-site composting where the local waste hauler is willing to accept post-consumer materials, as well as examples of where the campus had to take the lead and implement their own way to process post-consumer materials. We will compare start-up costs and savings and hear about tangible examples of how the various options work on a day to day basis.

I will investigate the current debate regarding biofuels, such as the differences between ethanol and biodiesel. My presentation will be a robust investigation of biodiesel and the issues associated with biofuel. Currently, biofuels are getting a lot of attention in the media. To mention a few of the issues: debate of food verses fuel, appropriate land use for growing feedstock, and biodiesel quality. Applying Experimental Economics To Obesity In The Family Household, Mariah D. Ehmke, Travis Warziniack, Christiane Schroeter, Kari Morgan

The objective of this study is to identify experimental economic tools that can be employed to explain the role of economic behavior in overweight and obesity in the household. We identify three economic experiments that can be used to understand how parent-child economic relationships relate to obesity. Loss aversion experiments are discussed as a tool to understand challenges some individuals face in achieving a healthy diet. Finally, testbed experiments are introduced as a means to test and understand new policies and incentives for better health at the household level.

Economic Factors And Body Weight: An Empirical Analysis, Christiane Schroeter, Jayson L. Lusk

With this study, we investigate the effects of changes in economic factors on body weight by constructing a utility theoretic model. The model is empirically estimated by combining data on individuals’ body weight, demographic and physical activity information, and state level measures pertaining to the prices of food away from home, food at home, and wages. By combining these data sources, we aim to estimate directly the weight effects of price and income changes. The empirical analysis suggests that decreasing the price of food at home could decrease body weight, a finding which has important public policy implications.

Iron deficiency anemia is the most common nutritional deficiency disease worldwide (Mahan & Escott-Stump, 2004). Iron deficiency anemia is of major concern especially in women of child bearing age and those who follow a vegetarian diet. The objective of this study was to compare the nutrient and hematological values related to iron status in female university students following a vegetarian versus following a nonvegetarian diet. This study took a cross sectional analysis of 39 female students at California Polytechnic State University (Cal Poly State University) in San Luis Obispo, CA. Odor Evaluation And Gas Emission From Manure Of Dairy Heifers Fed High/Low - Forage Quality And High/Low-Concentrate Diets, Patrick A. Topper, Robin Brandt, Arlene Adviento-Borbe, Gustavo J. Lascano, Arlyn J. Heinrichs, Eileen F. Wheeler

Dairy Science

A heifer feeding trial evaluated the impact of high/low forage quality and high/low concentrate level nutrient-balanced diets on simultaneous odor and gas emissions from the manure. Gas concentration was determined using an infrared photoacoustic analyzer over a 24-hour period using a steady-state flux chamber setup containing urine:feces as-excreted from eight individual heifers. Odorous air samples were collected from chamber headspace and evaluated by six human assessors for pleasantness, intensity and detection threshold using a forced-choice dynamic olfactometer. Ammonia emission ranged from 0.64 to 3.94 mg NH3 cm-2 d-1 across diets. Average ammonia emission from the low concentrate (80% forage) diets …

Patellofemoral Pain Syndrome (PFPS), a common cause of anterior knee pain, is successfully treated in over 2/3 of patients through rehabilitation protocols designed to reduce pain and return function to the individual. Applying preventive medicine strategies, the majority of cases of PFPS may be avoided if a pre-diagnosis can be made by clinician or certified athletic trainer testing the current researched potential risk factors during a Preparticipation Screening Evaluation (PPSE). Psychology and Child Development

Poverty affects a child’s development and educational outcomes beginning in the earliest years of life, both directly and indirectly through mediated, moderated, and transactional processes. School readiness, or the child’s ability to use and profit from school, has been recognized as playing a unique role in escape from poverty in the United States and increasingly in developing countries. It is a critical element but needs to be supported by many other components of a poverty alleviation strategy, such as improved opportunity structures and empowerment of families.
