The overall goal was to understand the capabilities of a dairy based meat alternative. This was done in three phases: 1) the production of a dairy protein gel as a base for a dairy based meat alternative, 2) texturization of the dairy protein gel base to produce a nugget like texture, and 3) a consumer test to determine the acceptability of the dairy based nugget compared to meat and meat alternatives on the market.

Host-parasite relationships are one of the most common symbiotic relationships present in a diverse array of ecosystems. There are numerous factors that impact the dynamics of these relationships. Major factors that can influence the degree of parasitism include host sex, hormonal state, reproductive condition, and behavior. It has been observed in several vertebrate taxa that males have higher ectoparasite intensities than females and males with increased testosterone have increased ectoparasite intensities. One potential reason for these observations is that testosterone concentrations are elevated in males, particularly during the breeding season, and when circulating concentrations increase males become more vulnerable to …

The purpose of this study was to create an accessible website for a non-profit
organization called Activity4All. This study was done in collaboration with Professor Kevin Taylor and two students from the Kinesiology department.
The website has physiology and nutritional information for individuals with
disabilities including: Muscular Dystrophy, Multiple Sclerosis, Dysautonomia, and Joint Hypermobility Syndrome. It also includes instructional workout videos that individuals can do at home.
This study includes research about website accessibility and guidelines provided by the World Wide Web Consortium. Checklists were created from research and interviews in order to determine whether or not the website is …

Since the mid-century proliferation of public housing, policy makers and environmental justice advocates have exposed the fact that geographically and economically isolated public housing sites are ultimately detrimental to residents and communities. In recent years, more progressive housing policies have emphasized the importance of site location in the success of housing programs. This study explores the intersection of affordable housing policy and “food desert” research, by assessing the Low-Income Housing Tax Credit (LIHTC) program in California, with specific attention to the grocery store category within the Site Amenities section. The purpose of this project was to create an educational booklet explaining that succulents make fantastic SAE projects. The booklet was designed to be helpful to both high school students and high school instructors. All students enrolled in agriculture programs have projects known as SAE’s. This booklet includes a variety of topics that are relevant to having an SAE project. All information was based on industry statistics and information gained from courses. To understand the relationship between BMI and sleep patterns in Cal Poly Freshman (First years) over the course of their first year at Cal Poly. First year students were recruited via campus email to fill out a survey regarding various health aspects. The survey was filled out at the beginning of the year (Fall 2009), and again in June (Spring 2010). The questions used in this study only pertained to height, weight, sleep quantity, and sleep quantity satisfaction rating. The results were not significant for the cross sectional analysis of the Fall 2009 sample and the Spring 2010 sample. The …

The National Weight Control Registry (NWCR) was established in 1993 to examine characteristics of successful weight-loss maintainers. This group consistently self-reports high levels of physical activity. The aims of this study were to obtain objective assessments of physical activity in NWCR subjects and compare this to physical activity in both normal-weight and overweight controls. Individuals from the NWCR (n = 26) were compared to a never‑obese normal-weight control group matched to the NWCR group’s current BMI (n = 30), and an overweight control group matched to the NWCR group’s self-reported pre-weight-loss BMI (n = 34). Cabernet sauvignon is the most widely planted red wine grape in California and is valued in the hundreds of millions of dollars. Cabernet sauvignon grapes, when severely vigorous or overcropped, can contain vegetal aromas and flavors when harvested. 3-alkyl-methoxypyrazines are the volatile compounds responsible for this effect and can lower the perceived quality of the wine. Resveratrol is a phytoalexin that has many medical and health benefits and can be found in red wines. An experiment was conducted in Paso Robles, CA to assess the effects of five yield levels, manipulated through cluster thinning, on methoxypyrazine and resveratrol concentrations. Berry …

Objective: The purpose of this pilot study was to examine the effect of an online social network used as an adjunct to a behavioral weight loss intervention on participants’ perceived social support and perceived self-efficacy using constructs of Social Cognitive Theory as a basis for website development.
Methods: 13 adult women (mean age: 43 years of age, range: 25-63 years) participated in a 12-week behavioral weight-loss intervention with the option to access the Transformation Challenge Online Community (TCOC), an internet-based support and informational website. On the basis of a strong body of data, the Institute of Medicine currently recommends at least 60 minutes of exercise per day to prevent body weight gain overtime. Previous studies have shown that there is no compensatory increase in food intake with this dose of exercise. Ultimately, the brain decides whether to alter food intake. Surprisingly, no published studies have assessed the impact of exercise on brain activation. The kinetics of milk coagulation are complex and still not well understood. A deeper understanding of coagulation and the impact of the relevant factors would aid in both cheese manufacturing and also in determining the nutritional benefits of dairy products. A method using confocal microscopy was developed to follow the movement of milk fat globules and the formation of a milk protein network during the enzyme-induced coagulation of milk. Image processing methods were then used to quantify the rate of coagulation. It was found that the texture of the protein network is an indicator of the current status of the …
