Bisphenols (BPA, BPS, BPF) are synthetic organic chemicals with endocrine disrupting properties that are routinely used in the production of plastics used for lining food and beverage containers as well as other products commonly used by consumers. Bisphenol exposure, widespread in the US with 93% of the population having detectable urine levels, is known to have negative health effects related to weight gain, obesity, cardiovascular disease and other chronic illnesses. Surprisingly, few studies have experimentally tested a randomized intervention to reduce bisphenol exposure. Background: College students experience food insecurity at a rate 3.5 times higher than the U.S. general population, affecting 43% of students. Furthermore, college students consume high amounts of ultra-processed products. NOVA, a food classification system, takes into account food processing and is thought to better fit the modern food environment.

Purpose: The purpose of this research project was to examine the impact of CalFresh enrollment on food security status. This study also evaluated the impact of two different nutrition education interventions (MyPlate and MyPlate+NOVA) on participants’ dietary habits and nutrition knowledge.

Does Forest Stewardship Council (FSC) certification of “responsible” commercial forestry change nutrition, health and wealth for indigenous peoples, like the Aka of the Congo Basin? Using hand-collected data from the boundary of a certified and an uncertified forest in the Republic of Congo five years after certification, I compare nutrition, health, and wealth using questions that are locally salient and survey timing designed to reach seminomadic hunter-gatherers. Though I only observe outcomes after certification, using a spatial regression discontinuity design I find suggestive evidence that activities to satisfy forest certification may cause increased food insecurity and illness frequency for Aka …

Diet Quality And Micronutrient Intake In Long-Term Weight Loss Maintainers, Rebecca W. Pascual

Objective: This study’s purpose was to examine dietary quality, macronutrient intake, and micronutrient adequacy among long term weight loss maintainers (WLM) in a commercial weight management program.

Methods: Participants were 1,207 WLM in WW (formerly Weight Watchers) who had maintained a 9.1 kg or greater weight loss (29.7 kg on average) for 3.4 years, and had an average BMI of 28.3 kg/m2. A control group of weight stable adults with obesity (Controls; N=102) had a BMI of 41.1 kg/m2 and 2.3 kg or less weight change over the previous five years.

The system is intended to serve as a space-borne platform that can complement existing systems utilized for astronomical research by undergraduate and high school students. Much research and development work has been performed to develop model-based system engineering methodologies and products for CubeSat missions, including the Horizon Simulation Framework. Limited microbial diversity within the gut has been associated with increased risk for several diseases including obesity, low-grade inflammation, and intestinal inflammation3. Exogenous factors that influence bacterial diversity in the gut include diet, exercise, stress level, and smoking1. The consumption of polyphenols in the diet, found in various fruits and vegetables, has been linked to beneficial microbial gut and metabolic health. In August 2019, we travelled to the unelectrified village of Agbokpa, Ghana to test out our ISEC in real world conditions and acquire personal feedback from real intended users. In surveying this village, we found that all households used biomass cooking either indoors or outdoors, sometimes using up significant quantities of biomass daily, resulting in a large monthly expense. We noticed that predominately women and children spent their time in close proximities to the fires and smoke, which we presume to negatively affect their respiratory health. Heavy metal contamination in soils can influence plants and animals, often leading to toxicosis. Heavy metals can impact various biochemical processes in plants, including enzyme and antioxidant production, protein mobilization and photosynthesis. Hydrolyzing enzymes play a major role in seed germination. Enzymes such as acid phosphatases, proteases and α-amylases are known to facilitate both seed germination and seedling growth via mobilizing nutrients in the endosperm. Cerebral aneurysms occur due to the ballooning of blood vessels in the brain. Rupture of aneurysms can cause a subarachnoid hemorrhage, which, if not fatal, can cause permanent neurologic deficits. Minimally invasive neurovascular devices, such as embolization coils and flow diverters, are methods of treatment utilized to prevent aneurysm rupture. Millsp. & Chase) cover crop management techniques and soil solarization on important agricultural weeds and pathogens in organic strawberry production in Central California. Lab experiments assessed the time needed to kill weed seeds at temperatures typically achieved during soil solarization (40°C, 45°C, 50°C, 55°C, and 60°C) in California. Tumors develop resistance to numerous drug therapies, and this remains a major obstacle in treating many types of non-surgical cancers. Melanoma provides a good model system for studying drug resistance in cancer due to its high propensity to incur resistance after a significant initial response to a drug. Genes that are highly expressed in melanoma cancer cells have been studied, but in order to further understand the collective function of these highly expressed genes we must analyze gene sets, or pathways. Objective: Children breast-fed during infancy consume more fruits and vegetables than formula-fed children. This pattern is likely due, in part, to infant learning from flavours of the mother’s diet transmitted through breast milk, but more research is needed to understand associations between early flavour exposures and later dietary patterns. We examined whether breast-feeding and maternal fruit and vegetable consumption during nursing were synergistically associated with higher child fruit and vegetable consumption.

Across the western United States, researchers are increasingly working with beaver (Castor canadensis) for process-based stream and watershed restoration. One recently-developed geographic information system-based tool, the Beaver Restoration Assessment Tool (BRAT), analyzes opportunities for beaver-assisted restoration (BAR) at a landscape-scale. However, this tool benefits significantly from human dimensions-inclusive, basin-centralized beaver knowledge for proper interpretation. Raceway ponds can be used to cultivate microalgae for purposes such as wastewater treatment and feedstock for animal feeds and biofuels. Besides nitrogen assimilation in biomass, nitrification can be a wastewater treatment mechanism but one that is hindered by the low nighttime dissolved oxygen concentrations (DO) common in wastewater treatment raceways. Celiac Disease (CD) is an autoimmune disorder that emerges due to the ingestion of gluten, a protein found in a variety of common grains such as wheat, rye, and barley. Approximately 1 in 100 individuals in the US suffer from CD, making it the most commonly diagnosed gastrointestinal disorder (Ciclitira et. al., 2005). These proline-rich gluten peptides are resistant to proteolysis and accumulate in the duodenum of the small intestine. Once in the duodenum, these peptides illicit an autoimmune response resulting in villous atrophy. Current treatment for CD requires a rigorous adherence to a gluten-free diet. Lead (Pb) contamination of agroecosystems is a serious issue as Pb is a persistent pollutant that is retained in soil for long, causing toxicities to organisms. This study examines biotransfer of Pb from soils treated with different concentrations of Pb through a broad bean (Vicia faba L.)–aphid (Aphis fabae Scop.)–ladybird (Coccinella transversalis Fabricius) food chain and its consequent inference for natural biological control, the ladybird. Over the past decade, interest in the use of probiotics, or “good bacteria”, for human health advancement and remediation has grown. Previous studies have shown that some health benefits conferred by probiotics are strain specific, therefore individual probiotic effects must be evaluated. This study evaluated some probiotic candidates on their ability to produce metabolites which inhibit the growth of foodborne pathogens. For my senior project, I was asked to assist an Aerospace Engineering professor with the design of his new glider. He needed to create a flight director-type instrument so that his pilot could get the aircraft’s positional data during flight. This positional data came from a powerful sensor mounted on the fuselage. To interface with the sensor, I created an embedded system comprised of a ESP32 micro-controller communicating with the sensor via UART/RS-232.
