BACKGROUND: Studies across racial/ethnic groups indicate that physical activity (PA) and alcohol consumption are positively associated, and that alcohol consumption is negatively associated with body mass index (BMI), but this relationship is less often evaluated in Hispanics. The purpose of this study was to assess the relationships between alcohol consumption, PA, and BMI in Hispanic adults.
METHODS: In this secondary data analysis of a Mexican-American cohort, we collected self-reported PA, alcohol consumption, and demographics, and measured height and weight. Climate change is a threat to food system stability, with small islands particularly vulnerable to extreme weather events. In Puerto Rico, a diminished agricultural sector and resulting food import dependence have been implicated in reduced diet quality, rural impoverishment, and periodic food insecurity during natural disasters. In contrast, smallholder farmers in Puerto Rico serve as cultural emblems of self-sufficient food production, providing fresh foods to local communities in an informal economy and leveraging traditional knowledge systems to manage varying ecological and climatic constraints. Kurt Goldstein imagined that at every stage of their development, organisms are, to characterize, wrestling with the imminent and inescapable realities (bio-socio-psychological) of energy (e.g., food and sleep), safety (e.g., hygiene; home and a family), and possibility (e.g., learning; opportunities and luck), and importantly, simultaneously. To oversimplify, Maslow would like us to eat before loving or praying, whereas Goldstein intuits that human motivations are dynamically complex and multifactorial -- in others words, integrally transactional and ongoing. It is Goldstein’s more complex idea that this essay supports.

We review efforts in Sustainable Food Systems Education and Critical Food Systems Education literature to employ education in ways that seek social and environmental transformation of food systems. Here, we argue that forms of food systems education that are disconnected from awareness of their ontological roots are destined to reproduce the same food systems with the same consequences for life on Earth. This theoretical paper invites discussions that unpack “habits of being” underpinning modern/colonial conceptualizations of food system issues, transformation efforts, and pedagogies. INTRODUCTION: US school systems underwent major upheaval, including closures, implementation of virtual and/or hybrid learning, and stringent infection mitigation protocols, during the initial phase of the COVID-19 pandemic. We aimed to examine the association between food insecurity and perceived health, perceived stress, and social determinants of health concerns among elementary schoolteachers serving predominantly low-income children during the COVID-19 pandemic.

Half The Picture: Word Frequencies Reveal Racial Differences In Clinical Documentation, But Not Their Causes, Jacqueline A Penn, Denis Newman-Griffis

Clinical notes are the best record of a provider's perceptions of their patients, but their use in studying racial bias in clinical documentation has typically been limited to manual evaluation of small datasets. We investigated the use of computational methods to scale these insights to large, heterogeneous clinical text data. We found significant differences in negative emotional tone and language implying social dominance in clinical notes between Black and White patients, but identified multiple contributing factors in addition to potential provider bias, including mis-categorization of some healthcare vocabulary as emotion-related. A collaborative partnership launched the Great Grocer Project (GGP) in March 2021 in Detroit, Michigan where health inequities, including deaths due to COVID-19, have historically been politically determined and informed by socially entrenched norms. Institutional and structural racism has contributed to a lack of diversity in store ownership among Detroit grocers and limited access to high-quality, affordable healthy foods as well as disparate food insecurity among Detroit residents. The purpose of the current study was to explore the experiences of LDS missionary student-athletes returning to competition in the National Collegiate Athletic Association (NCAA) Division I (DI). Using Consensual Qualitative Research methods (CQR; Hill, 2012) including a semi-structured interview guide, 10 DI student-athletes/returned LDS missionaries were interviewed regarding their experience (i.e., mean age of 25 years; baseball, cross-country/track and field, football, and swimming). The Level of Service/Case Management Inventory (LS/CMI) is one of the most widely used instruments for assessing recidivism risk and treatment needs in correctional settings. The predictive validity of the measure and its predecessor (LSI-R) has been established in meta-analytic studies and research finds that the scale's accuracy is largely independent of sex, race, and ethnicity. Whether the LS/CMI works equally well for different age groups remains in question. Urban farming has been transformed into urban agricultural activities oriented towards optimizing economic benefits through export market involvement. However, the expansion of the market has consequences for farmers. The involvement of urban farmers in export trade causes market pressures that affect agricultural production practices. This research used qualitative research methods. There were 27 informants in this study. Introduction: The COVID-19 pandemic may have changed smoking habits. For the smoking population, information regarding smoking habits and the pandemic could potentially aid COVID-19 prevention and control measures. Our study aimed to analyze the effects of the COVID-19 pandemic on tobacco consumption, nicotine dependence levels, and motivation for smoking cessation. We also collected information from smokers regarding their awareness of the consequences of tobacco use and the increased risks smokers have for severe complications from COVID-19.

Background. Burnout among nurses has been on the rise and was exacerbated with the pandemic. Reflective journaling after work may be a strategy to decrease feelings of burnout. Reflective journaling, as an intervention, has been shown to improve self-awareness, compassion fatigue, and burnout among nurses. The purpose of this study was to pilot a 4-week reflective journaling intervention in hospital-based nurses and describe participant professional quality of life, self-awareness, and overall well-being.

Since the start of the COVID-19 pandemic, children have been more sedentary due to nationwide school closures resulting in classes being held virtually. Due to restrictions, children could no longer participate in physical education classes and after school activities at the same frequency. The pandemic also placed a disproportionate burden on low-income families thus, potentially amplifying food insecurity. The state of Mississippi currently has the highest incidence of low birth weight (LBW) births in the United States. LBW is a negative birth outcome which can lead to suboptimal pediatric health and development. The primary goals of this thesis are to identify the long-term outcomes associated with LBW and to present potential interventions to address LBW. A combination of literature review and quantitative data analysis were used to inform the objective of this thesis. The purpose of this study was to investigate different environments of retail cases and LED lighting temperatures to observe how these conditions affect oxidation of previously frozen ground beef patties. Coarse ground beef (85% lean) was purchased from a commercial beef processor, fine ground through a 10 mm grinder plate, and then formed into 1/3-pound patties with an automatic patty forming machine. Historically Black youth have been labeled as needing to be “saved” and “fixed” because they are “at-risk,” “broken,” and more likely to subscribe to deviant behavior. This deficit rhetoric frames community-based education programs (CBEPs) that serve Black youth as vital spaces that must prevent and save Black youth from subscribing to undesirable behaviors. Therefore, this study builds on the paucity of literature regarding CBEPs as spaces that view Black youth as valuable and worthy and encourage youth to critically examine the world around them, often withholding opportunities and resources. Seizure disorders can be life altering and debilitating, especially for developing children. Children who have seizure disorders often require social, emotional, educational, and behavioral adjustments for children. Most medication regimes do not achieve complete management of seizure frequency and intensity. For children, seizure disorders can lead to unsuccessful education experiences, low self-esteem, severe injury, and difficulties with social skills and engagement. Rice is utilized as an adjunct grain by the beer manufacturing industry. Before utilization, the rice has to be dried to a desired moisture content. The drying process employed may have an impact on the rice’s physicochemical properties which influence the rice’s performance in the brewing process. This study focused on investigating the impact of microwave drying on rice’s physicochemical properties and utilization in the brewing process.
