This Capstone project examines the historical impact of African American chefs on American gastronomy, highlighting their substantial contributions to the nation's culinary heritage from 1619 to 2024. By employing Jessica B. Harris's book High on the Hog as a foundation, the research identifies a critical gap in existing study abroad programs: the Black diaspora within the United States. The proposed four-week educational program aims to immerse participants in African American culinary heritage across four culturally rich cities: Charleston, South Carolina; New Orleans, Louisiana; Chicago, Illinois, and Oakland, California. Assessing The Lgbtq+ Beliefs, Behaviors, And Competency Of Nutrition Professionals: A Mixed-Methods Study, Anthony Dissen, Christina Riccardo, Liam Oliver Lair

Lesbian, gay, bisexual, transgender, and queer/questioning (LGBTQ+) individuals often experience disproportionate levels of physical and mental health issues including nutrition-specific issues such as eating disorders, body dysmorphia, and food insecurity related to psychological distress from discrimination and stigmatization. This study sought to understand nutrition professionals’ LGBTQ+ competence, beliefs, and behaviors. Researchers distributed 2 data collection tools to registered dietitian nutritionists (RDNs): the Gay Affirmative Practice Scale (GAP-Scale) and the LGBT Competency Assessment Tool (LGBT-CAT). Data from the GAP-Scale were numerically scored using a 5-point Likert scale, and data from LGBT-CAT were scored on a scale of 0 to 3 points. …

Examining Weight Bias Attitude Changes After Exposure To A Brief Photovoice Assignment, Gretchen L. George, Hillary L. Roberts, Kristin Rose, Madison Clemens, Kate G. Burt

Weight bias is present among pre-health professional students (e.g., nutrition, dietetics, nursing, physical therapy, medicine). Educators need support and guidelines about how to enhance learning through engaging assignments while also meeting accreditation requirements. This pilot study examined the impact of an innovative weight bias assignment using photovoice and reflection within existing nutrition education courses, measured through pre-post assessments from the Fat Attitudes Assessment Toolkit. While not all subscales showed significant change, improvements in the Fat Acceptance and Attribution Complexity Composites suggest these methods may be effective in shifting attitudes about fatness. Global economic development has been associated with an increased prevalence of obesity and related health problems. Increased caloric intake and reduced energy expenditure are both cited as development-related contributors to the obesity crisis, but their relative importance remains unresolved. Here, we examine energy expenditure and two measures of obesity (body fat percentage and body mass index, BMI) for 4,213 adults from 34 populations across six continents and a wide range of lifestyles and economies, including hunter-gatherer, pastoralist, farming, and industrialized populations. The desire for economic prosperity on the African continent led to the African Continental Free Trade Area (AfCFTA), in line with the vision of the Organisation of African Unity (OAU), when it proposed the creation of an African Economic Community (AEC) by 2028. However, sustainable economic development will remain a mirage without inclusivity where no one is left behind, in line with the African Union’s Agenda 2063. This study explores the challenge of restricting women to economic margins in trade agreements under the AfCFTA and how this would undermine its implementation. Incorporating kelp into American diets offers a promising avenue for enhancing nutrition and environmental sustainability. Despite its nutritional richness and ecological benefits as a "superfood" and carbon sink, cultural resistance presents a barrier to its widespread acceptance. This study delves into kelp's nutritional content and ecological advantages, exploring its potential to reshape dietary habits. Drawing insights from interviews and surveys, cultural norms emerge as a significant obstacle to kelp's integration into American cuisine. Youth violence—the deliberate use of physical force or harm by young people between the ages of 10 and 24 to intimidate or cause harm to others, both online and offline—is a critical public health issue in the United States. Yet, successfully predicting future violent offenders is a complex and challenging task, as the question of why some youths resort to extreme violence while others refrain from it—despite facing similar risk factors—remains widely debated. The current study aimed to identify how manipulated sleep restriction affects dietary choices and physical activity (PA). Young adults were administered one week of well-rested sleep levels (WR: 8–9 h/night) and sleep-restriction (SR: 5–6 h/night) in their (naturalistic) at-home setting, using a randomized cross-over design. Participants made consequential bids for snacks/beverages following SR and WR in an auction task. Other primary outcome measures included daily self-reported dietary intake and actigraphy-measured PA. Web scraping, a technique for collecting publicly available online data, may facilitate collecting school meal data from large, national samples of school districts in a timely, cost-effective manner. We explore its potential by examining the variation in sodium content of 2 popular entrees served through the US Department of Agriculture’s National School Lunch Program—pizza and chicken nuggets. Daily school menu data were obtained from a national sample of school districts via web scraping. The presence of therapy dogs in schools has increased due to the growing body of research showing positive effects of assisted-animal interaction. This article presents an interdisciplinary collaboration to address the needs of older adults at risk of social isolation exacerbated by the COVID-19 pandemic. An intergenerational service-learning program developed by the Pennsylvania Department of Aging was offered to several universities across the state of Pennsylvania. The authors share their experience and lessons learned from pairing older adults with graduate students studying in the fields of Gerontology, Public Health, and Social Work.

Greenspaces provide several well-being (Dinnie et al., 2013) and psychosocial benefits (Addy et al., 2004). Community-engaged research affords community partners a voice in the project (Cushman et al., 2004). This study assessed Detroit community members’ perceived benefits of and suggestions for engaging with the community to support greenspaces. Through qualitative analysis, a three-step process for community-engaged planning was revealed. Findings highlight strategies that involve community members in this process to enhance community engagement and well-being.

Due to physical proximity constraints imposed by COVID-19, extreme electronic service learning (e-service-learning)—instruction and service offered completely online—allowed for the safe continuation of service-learning experiences. Using a combination of surveys and an autoethnographic approach, this study describes findings of an intergenerational extreme e-service-learning project from four perspectives: students, assisted living facility residents, community partner, and course instructor. Positive impacts were noted on personal, social, and learning contexts among each of the four perspectives.

We describe the structure, benefits, and challenges associated with a virtual cultural heritage exchange (VCHE) between undergraduate students in an applied anthropology class and a group of English language learners (ELL). Using qualitative data collection and analysis methods, the project aimed to teach anthropological methods and perspectives to the students while investigating three research questions: Will a VCHE (1) build social bonds and bridges, (2) improve English language acquisition, and (3) raise “heritage consciousness” (awareness and appreciation of, along with an associated sense of agency toward, cultural heritage) among participants? Purpose: The purpose of this explanatory mixed-method study was to identify and describe what exemplary California Community College mid-level leaders do to maintain their physical, emotional, intellectual, social, vocational, and spiritual health based on the six dimensions of Rosen’s healthy leader model.Methodology: This study employed a purposive sampling method to select 15 mid-level leaders from two California community college districts. Data collection involved two instruments: the Stay Grounded Survey, administered to all 15 participants, and semi-structured interviews conducted with a subset of five participants. This report outlines the background and initial development stage of The Wellbeing Program Guide (wellbeingguide.acer.org), a comprehensive national resource aimed at supporting schools in selecting and implementing wellbeing programs that meet diverse contexts and student needs. Wellbeing is considered in its broadest sense, to include evidence-based mental health, alcohol and other drug, and suicide prevention programs, along with social and emotional learning. Interactions with the legal system are a crucial factor in maintaining homelessness. Difficulties in addressing legal issues are barriers to accessing services and finding employment and housing. Across the United States, the homeless court is an emerging legal program that has been developed to break this cycle, but they appear to face numerous capacity and coordination problems. Few empirical and systematic investigations have been conducted on homeless court programs. Further, previous studies of homeless courts focus their process and outcome measures on the priorities of the legal system. This dissertation explores policy-relevant questions through three empirical studies on issues related to education, human capital formation, and consumer protection in developing countries. The first two chapters focus on education policies in India and examine their intended and unintended impacts on children’s schooling and labour-market outcomes. The third chapter evaluates a new approach to tackle consumer protection issues in digital finance in Uganda and Bangladesh. Across all three, this dissertation reflects an interest and understanding in advancing evidence-based policymaking in developing countries, be it in education or consumer protection.

Childhood adversity (CA) impacts a large proportion of US youth with far reaching consequences for development and subsequent health outcomes (McLaughlin et al., 2012). Given the widespread impact of CA, it is imperative to understand how these exposures impact development, as well as identify opportunities for intervention. McLaughlin and Sheridan (2016) proposed the Dimensional Model of Adversity of Psychopathology (DMAP), providing a framework for understanding the heterogeneity of outcomes related to exposure to CA. DMAP emphasizes that deprivation (i.e., lack of expected cognitive or social stimulation) and environmental threat (i.e., exposure to harm or the threat of harm) impacts youth …

The Intersection Of Rurality And Wellness: A Multi-Manuscript Investigation Into Rural Well-Being, Lucas Perez

Rural communities face unique mental health and wellness challenges, including geographic isolation, provider shortages, and stigma surrounding help-seeking. This dissertation explores rural wellness through three interrelated studies, utilizing both qualitative and quantitative methods to examine disparities, perceptions of rurality, and demographic influences on well-being. The first study utilized the Five Factor Wellness Inventory (5F-WEL) to compare wellness scores between rural and non-rural individuals. The second study employed Interpretative Phenomenological Analysis (IPA) to explore rural definitions of wellness, as well as barriers and strengths related to mental health. The third study examined how perceptions of rurality and demographic factors predict wellness …
