This study aimed to assess the impact of various vinegar compositions used as pre-treatment for Pacific Yellowtail Emperor (PYE) fillets during the oven-drying process, with a focus on moisture content and optimal drying conditions. Two types of commercially available vinegar, Superior Vinegar and Datu Puti Vinegar, were compared, and different drying temperatures were evaluated. The investigation revealed that the drying temperature significantly influenced the moisture content of the dried PYE fillets. Among the tested temperatures (40°C, 60°C, and 80°C), the most favorable outcome in terms of moisture content was achieved when fillets were dried at 80°C for a duration of …

Abstract. Bioactive compounds from plant derived in food application become increasingly in demand due to natural and nutritionally safe products. Due to some issues concerning food safety on the excessive use of synthetic preservatives; the present study aims to investigate the natural alternatives to synthetic antimicrobial food additives. Tropical marine fish is a main raw material for surimi processing plants, including golden threadfin bream (Nemipterus virgatus Houttuyn, 1782) and swallowtail dwarf monocle bream (Parascolopsis eriomma Jordan & Richardson, 1909). After processing, more than 60% of fish are considered as byproducts (i.e., head, viscera, skin, bones, fins and scale), and tend to discard due to poor-utilization. Hence, this paper aims to evaluate macro- and micro-nutrients derived from golden threadfin bream (GTB) and swallowtail dwarf monocle bream (SDMB). The larval stage of the darkling beetle, Tenebrio molitor, often referred to as the yellow mealworm, has received significant attention as a promising source of high-quality protein for human consumption due to its exceptional nutritional profile. This study focused on assessing the antioxidant and antimicrobial activities of protein concentrates and hydrolysates obtained from mealworm specimens raised under distinct dietary conditions. One cohort of mealworms was sustained on food waste comprising rice bran, milled corn, and carrots (self-bred) (SM), while another group was exclusively provided with rice bran (commercially fed) (CM). This study investigates the release behaviour of Butterfly Pea (BP) anthocyanins from Sago starch micro-composite (SMC) films in the presence of food stimulants. To comprehensively describe the release profiles of BP from SMC, six well-established kinetic release models were employed which includes Korsmeyer-Peppas, zero-order, first-order, second-order, Higuchi, and Hixson-Crowell models. These models played a crucial role in examining how the release fraction changes over time, facilitating a comprehensive understanding of the release kinetics of BP anthocyanins. Traditional Bruneian delicacy which are often reserved for special occasions; called the kelupis Sulang made from glutinous rice, coconut milk, and the flesh of the Brunei Sulang fruit’s protein content were studied. The protein content of both kelupis and the sulang fruit were examined using both qualitative and protein concentration analyses. The analysis was performed using the Xanthoproteic test, Ninhydrin test, Sulphur Reduction test, and the Biuret test. Borneo hosts exceptional plant diversity, including numerous endemic species, but faces significant threats from rapid habitat loss driven by deforestation and land-use changes. This study aimed to analyze research trends and forecast future directions through a bibliometric analysis of Scopus data spanning from 1914 to 2023. The bibliometric analysis included publication outputs, citation patterns, thematic mapping, and keyword co-occurrence. We used VOSviewer to visualize bibliometric networks and the Bibliometrix package in R to perform advanced bibliometric analysis and interactive data exploration. This study investigates the effect of real-time data visualization on user performance and experience during treadmill running. Traditional treadmill displays usually present information in plain text, which may limit user engagement and motivation. To address this, the study introduced redesigned displays using data visualization techniques aligned with human perception, such as line graphs and progress bars, to make performance feedback more meaningful and easier to understand. DNA extraction for downstream molecular diagnostic applications can be an expensive, time-consuming process. We devised a method to quickly extract total bacterial DNA from environmental samples based on the sodium hydroxide lysis of cells with or without capture by magnetic beads for subsequent PCR or quantitative PCR. The final DNA extraction method using NaOH is extremely low-cost and can be completed in as little as 10 min at room temperature with dilution, or the DNA can be further purified using silica-coated paramagnetic beads. Soil organic carbon (SOC) is the largest carbon pool in terrestrial ecosystems and plays a crucial role in mitigating climate change and enhancing soil productivity. Microbial-derived carbon (MDC) is the main component of the persistent SOC pool. However, current formulas used to estimate the proportional contribution of MDC are plagued by uncertainties due to limited sample sizes and the neglect of bacterial group composition effects. Here, we compiled the comprehensive global dataset and employed machine learning approaches to refine our quantitative understanding of MDC contributions to total carbon storage. Shinnery oak (Quercus havardii) is a deciduous, low-growing shrubby tree that is a dominant plant in large areas of grassland in western Oklahoma, the Texas Panhandle, and eastern New Mexico. Acorns of the plant are important food items for many wildlife species, including scaled quail (Callipepla squamata), mourning doves (Zenaida macroura), and endangered lesser prairie-chickens (Tympanuchus pallidicinctus). We analyzed the energy content of acorns of shinnery oak obtained from the crops of scaled quail collected from plains-mesa sand-scrub in Lea and Eddy counties, New Mexico. An initial trial (European Nutrition in Glaucoma Management (ENIGMA)), which assessed macular pigment optical density (MPOD) as well as ocular structural, functional and perceptual parameters before and after the 18-month supplementation of glaucoma patients with macular pigment (MP) carotenoids (lutein, zeaxanthin, meso-zeaxanthin), confirmed supplementation significantly improved the clinical ocular health of participants. The mammalian facilitative glucose transporter (GLUT) family comprises 14 members that mediate the transport of hexoses across cell membranes. GLUT5 is the only member specific to fructose, and together with GLUT2, which transports fructose in addition to glucose, they make up the primary fructose transporters in humans.
