The purpose of this systematic review is to explore the effect of fish intake on cognitive decline. Previous studies on fish intake and cognitive decline have produced both supportive results and results that yield ineffectiveness. This review focuses primarily on omega 3 concentration from fish intake and its influence on mild cognitive impairment. Using several search engines, studies were selected by searching “fish intake and cognitive decline”. Inclusion criteria consisted of individuals diagnosed with MCI, intervention of fish intake, and omega 3 fatty acid concentration and cognitive function exams conducted at baseline and throughout the study. Adults with Early Onset Alzheimer's Disease (EOAD), is the less common form of the neurodegenerative disease of Alzheimer's Disease (AD), where EOAD is found in adults younger than 65 years old (Alzheimer's Association, 2024). Characterized by a decline of memory, cognitive decline, loss of ability to perform daily tasks involving mobility and communication, EOAD does not have one significant cause. A combination of risk factors are genetics and lifestyle factors such as heart disease, history of stroke, and high blood pressure are associated with increasing the risk of EOAD (National Institute of Aging, 2024).

Cholangiocarcinoma (CCA) is a highly heterogeneous and aggressive malignancy of the bile ducts, characterized by a poor prognosis and high mortality rate. It is involved in multiple critical processes including DNA synthesis, DNA methylation, protein synthesis and antioxidant defense mechanisms. Understanding The Impact Of Food Insecurity Among First-Generation College Students On The University Of Arkansas Campus, Madison Price, Jennie S. Popp Ph.D., Nathan Paul Kemper, Louise Michelle Hancox

The purpose of this study was to: 1) better understand food insecurity among first-generation college students and how it might differ from that of other college students, and 2) gather opinions from students that may serve as solutions to alleviate food insecurity. This study was conducted with a mixed-methods survey that included both open-ended and closed-ended questions. This survey had 670 responses. Nearly 10% of respondents stated that they were experiencing food insecurity. Almost 18% stated they were first-generation college students. A greater percentage of African American (P = 0.0022) and Hispanic Latino (P < 0.0001) students were first-generation compared to all other students, while a lower percentage (P < 0.0001) of Caucasian students were first-generation compared to other students. The results suggested that first-generation students were more likely to experience nine food insecurity impacts than non first-generation students. Further, both first-generation and non first-generation students indicated low levels of knowledge and/or use of existing resources on the University of Arkansas campus that can help address food insecurity needs. Finally, both first-generation and non first-generation respondents overwhelmingly favored food insecurity solutions centered around expanding access to campus food programs through lower costs and increased awareness of existing campus resources via improved advertising.

Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. This study quantitatively evaluated a decade-old stream restoration in Fayetteville, Arkansas, to assess its effectiveness in combating USS and achieving set restoration goals, and to gain insights for future restoration projects. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Metabolic dysfunction-associated steatotic liver disease (MASLD) currently affects one in three people worldwide; its prevalence is growing alongside other cardiometabolic disorders. Aberrations to redox and sphingolipid metabolism contribute to MASLD pathologic progression. Sphingosine-1-phosphate (S1P) is an active lipid, meaning that S1P participates in biochemical processes within the cell. S1P is generated by two distinct isoenzymes, sphingosine kinase (SphK)1 and SphK2. The localization of the SphK enzyme dictates S1P function. While cytosolic SphK1-generated S1P is well-characterized, nuclear and mitochondrial SphK2-generated S1P is less known. Moreover, SphK2 depletion effects on cellular redox processes and inflammation are not well-defined.

While the importance of nutrition in child growth is well established, growth trajectories exhibit substantial individual variability, influenced by sex and age, and often characterized by nonlinear patterns. This study aimed to examine protein consumption behaviors and the factors influencing protein intake among the pre-aging population, with a focus on egg white protein and the acceptance of egg white protein noodles. The study employed the Health Belief Model as a theoretical framework to explore health beliefs regarding protein consumption and its association with sarcopenia among pre-aging adults (45-59 years) in Bangkok, Thailand. The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is a nutrition assistance program in the U.S. WIC served 2.5 million eligible Hispanic women, infants, and children under the age of five in 2021, which is WIC's largest racial/ethnic group. However, limited research has been conducted to understand Hispanic WIC participants' perceptions of WIC breastfeeding recommendations and their breastfeeding decisions. For this qualitative study, we interviewed 18 of these pregnant and postpartum WIC participants on their experiences and decision-making processes related to breastfeeding. The global prevalence and incidence of those with chronic kidney disease (CKD) are unknown. Thirty-seven million adults are estimated to have CKD and need nutritional assessment, education, and management to prevent further kidney damage and mortality (Centers for Disease Control and Prevention, 2022; United States Renal Data System, 2022). Maintaining the nutritional requirements for CKD is listed as a global concern in the Kidney Disease Outcomes Quality Initiative (KDOQI) Clinical Practice Guideline for Nutrition in CKD 2020 (Ikizler et al., 2020). Approximately 500,000 people in the United States are affected by a burn injury and seek care every year. With medical innovation, however, the burn injury survival rate has increased to 97% in the United States. Apolipoprotein E4 allele (APOE4) carriers show early metabolic changes, heightening the genetic risk of late-onset Alzheimer's Disease (AD), characterized by amyloid-β and tau tangle plaques and neurodegeneration. Its development is influenced by age, environment, and genetics, with Mild Cognitive Impairment (MCI) often preceding AD, providing a crucial window for early intervention. The objectives of this study were to 1) formulate a novel energy bar containing significant macronutrients and calories per serving with favorable ratings from consumers; 2) analyze responses to a consumer preference survey and sensory evaluation of novel energy bars compared to a commercially available energy bar. For the first study, fourteen iterations of an energy bar were synthesized with differing protein sources (whey, soy, pea, hemp), and characteristic variations (nougat, chocolate truffle, peanut butter, double-date caramel). A shortbread base, date caramel, and chocolate coating were included in every bar. Sensory evaluations determined that the most liked variation overall was …

Vegetables are healthy foods with nutritional benefits; however, nearly one-third of the world's vegetables are lost each year, and some of the losses happen due to the imperfect shape of the vegetables. In this study, imperfect vegetables (i.e., broccoli and carrots) were upcycled into freeze-dried powders to improve their shelf-life before they were formed into food inks for 3D printing. The rheology of the food inks, color analysis of the uncooked and cooked designs, and texture analysis of the cooked designs were determined. The purpose of this narrative review is to synthesize the current literature on both eating/mealtime behaviors of children with ASD and visual support interventions in the same population. This narrative review aims to establish a rationale for the use of visual supports as a dietary behavior intervention for children with ASD.
Methods

Background: With increased prevalence and mortality of chronic kidney disease (CKD), treatment by renal replacement therapy using hemodialysis (HD) has increased in parallel. Emerging evidence suggests that gut microbiota play an important role in the progression of CKD; influential dietary factors have not been studied exhaustively to date.

Iron deficiency (ID) is well recognized as the most prevalent nutrient insufficiency and a leading cause of anemia. Women of reproductive age (WRA), females 15 to 49, are at an increased risk of ID and anemia. This is due to the heightened iron demands of this life stage, including puberty, menstruation, and pregnancy, which require iron intakes ranging from 15 to 27 mg/day. Poor health and nutrition increase the risk of ID and progression to anemia. Consequences of ID and anemia range from exhaustion and decreased cognitive function to an increased risk of mortality.
