A procedure was developed for the extraction of rennet from fresh frozen vells. Frozen vells were minced in a Model VCM-25 Hobart Vertical Cutter/Mixer. Dry sodium chloride was added until the salt concentration in the moisture of the tissue was 10%. Salted tissue was placed in galvanized steel cells and heated in a water bath to 49, 54, 57 and 60 C for 0, 15, 30, 45 and 60 minutes. The heated tissue was dried to about 4% moisture at ambient temperature with the aid of an electric fan. The dried salted tissue was extracted with a sodium chloride solution …

A specific method has been developed for the extraction and measurement of staphylococcal nuclease in cheese in which Staphylococcus aureus has grown. Ten grams of cheese sample were homogenized with ninety milliliters of pH ten buffer for three minutes. Ammonium sulfate fractionation was used and a forty to eighty percent fraction was collected and concentrated using ultrafilters. The nuclease activity was determined using a toluidine blue deoxyribonucleic acid agar slide method and a spectophotometric method. The DNA agar slide method was used to compare staphylococcal growth with nuclease production in cheese under varying conditions. When Staphylococcus aureus plate counts indicated …

The catalytic necessity of tyrosine residues in uridine diphospho- glucose pyrophosphorylase [E.C. 2.7.7.9] was investigated. Chemical modification of the pyrophosphorylase by N-acetylimidazole indicated that tyrosine residues were essential for activity. Approximately 23 of 112 tyrosines per molecule of 475,000 Daltons could be 0-acetylated. Solvent perturbation difference spectroscopy supported this number of exposed tyrosine side chains and in conjunction with chemical modification indicated that at least 11 to 12 tyrosyl residues per protein molecule are fully exposed. it her subst rate, uridine t riphosphate or uridine diphosphoglucose, afforded significant protection against inactivation by N-acetylimidazole.

The Technicon AutoAnalyzer II was evaluated for automatic quantitation of non-casein protein (NCP) in milk. The Lowry method for colorimetric measurement of proteins was adapted to the automated method and found to be accurate in the determination of non-casein protein in milk. The automated Lowry method obeyed Beer's law. Casein content was calculated by difference between total protein determined by infrared milk analysis (IRMA) and non-casein protein. In the analysis of twenty-five replicate milk samples, the standard deviation was 0.32 and the coefficient of variability was 0.90. Chlorophyll and solanine syntheses as influenced by cultivars, specific gravities, light intensities, and duration of exposure to light were studied in potato (Solanum tuberosum, L.) tubers. Chemicals, gamma radiation, clear polyethylene packaging in 15 per cent CO2, and storage at subatmospheric pressure were employed to control the formation of these two compounds. The toxicity of solanine to mice, the fungus Trichoderma viride, and cholinesterase inhibition patterns in rabbits and a dog were evaluated. The influence of the central nervous system stimulating drugs was investigated to find if they counteracted solanine toxicity.

Experiments comparing the responses of wheat and rape to nitrogenous fertilisers were planted at 26 sites from Geraldton to Esperance in 1971.
In spite of hail damage and poor emergence of rape at some sites, meaningful results were obtained in 18 cases.

Rape is a relatively new crop in Western Australia and this investigation was undertaken to produce visual symptoms of nutrient deficiencies so that they could be recorded and used for diagnosing deficiencies in the field. The appearance of mineral deficiency symptoms can vary considerably with growing conditions, so that symptoms produced in a glasshouse are only a guide to the probable symptoms in the field.

In order to determine the duration of the effect of glucose, fructose, sucrose, honey, starch, and orange juice on neutrophilic phagocytosis, 10 subjects underwent a complete series of carbohydrate tolerance tests. Blood samples were drawn at specific time periods following ingestion of 100 grams of each carbohydrate. Blood was then analyzed for glucose and phagocytic index (the mean number of bacteria engulfed per leukocyte); a red blood cell and white blood cell count and differential white cell count were done also on about 1/2 of the samples. Twelve university women students served as experimental subjects in a study of the serum lipids and urinary estrogens of healthy nonpregnant menstruating young women, who were living under their usual conditions.
The subjects maintained constant weight on their ordinary diets during the entire study period. Antecubital blood and 24-hour urine specimens were collected on certain days which represented different stages of the menstrual cycle. Quantitative analyses were made on serum total cholesterol, lipid phosphorus (phospholipids), triglycerides and total lipids. WHEAT quotas, poor wool prices and the availability of cheap grain on the farm have stimulated interest in grain finishing of cattle for out-of-season beef production. For many years, Animals turned off in the autumn-winter period have brought better prices than those sold in summer, at the end of the pasture flush.
Feeding grain supplements to cattle on dry pasture or stubble requires less capital than feedlotting and saves the cost of handling and processing roughage.

FEEDLOTS are small enclosures where all of the animal's feed is supplied from an outside source. Compared with grazing, feedlotting is an expensive method of beef production.
This article gives a guide to the requirements for establishment and management of a farm feedlot, especially the basic equipment and materials, the type of cattle most suited to feedlotting, rations and feeding techniques.
The author warns that skill and experience are needed to run a feedlot and describes feedlotting as an expensive method of beef raising when compared with grazing.

THE current surge of interest in feedlots stems from low coarse grain prices and comparatively low early summer baby beef prices. Cattle raisers sense the opportunity for higher prices by holding the cattle on the farm over summer and autumn, and grain producers see better returns from barley and oats fed to cattle than sold as grain.
This article examines the profitability of cattle feedlots and presents sample budgets for two typical situations—the farmer who produces his own cattle but buys grain, and the cereal grower who produces grain but buys in cattle for finishing in a feedlot.

PROFITABLE pig raising depends on the tumoff of efficiently grown animals. Breeders should be selected for growth rate, and proper care of the breeding sow will ensure that her litters are large and healthy.
A rapid increase in the number of breeding sows in Western Australia suggests that some relatively inexperienced breeders may have started raising pigs. This article sets out the best pig breeding methods as a guide to beginners and a reminder to more experienced pig raisers.

WHEAT quotas and low wool prices have caused many farmers to look to pigs to consume homegrown grain and to lift their incomes. However, with sow numbers at a record level, is it possible for a wheatbelt farmer to raise pigs profitably?
Because of his access to cheap grain, the wheatbelt farmer may be able to make a good profit on each pig sold. This could make pigmeat production a useful sideline on the farm, providing the farmer produces only lean pigs. There is no market for overfat pigs.

THE sale of milk rather than butterfat has increased greatly in the past few years and less than half the dairy farmers in Western Australia now own cream separators.
Feeding whole milk once a day can be successful for raising dairy calves, even in winter when calf rearing is most difficult.
A recent experiment at Wokalup Research Station showed that satisfactory weight gains can be achieved if liquid milk is fed only once a day from a very early age. Trial calves gained I lb a head a day over the 12 weeks of the experiment.

The fact that anemias constitute an important problem of public health has been realized only comparatively recently. When field surveys made in different countries before and after World War II had collected a great deal of information on dietary habits, food consumption levels, and nutritional status , it became more apparent that mild, moderate, and even severe anemic states existed in different communities. As was to be expected, anemia occurred more frequently in the malnourished people in the developing countries and the vulnerable groups of the population were the most affected (FAO/WHO Report, 1966).

The effects of controlled atmosphere storage vs conventional refrigerated storage on the metabolism of Moorpark and Large Early Montgamet apricot and Elberta peach fruits were studied. The controlled atmospheres studied were 0.0 percent CO2-5.0 percent O2; 2.5 percent CO2-5.0 percent O2; 5.0 percent CO2-2.5 percent O2; 7.5 percent CO2-5.0 percent O2; as compared to conventional refrigerated storage. Nitrogen percent was assumed to be the difference between the total CO2 and O2 content minus 100.

Two trials were conducted using 48 infant pigs of both sexes. Pigs were taken from the sow when three to seven days old and placed in wire-bottomed metal cages by pairs. Animals in the first trial received synthetic diets containing 100 or 1000 international units of ergocalciferol and 1000 or 4000 international units of retinyl acetate or four or sixteen milligrams of beta carotene per kilogram of feed. The Honey Sweet carrots were canned with Ethyienediamine tetracetic acid (CaNa2EDTA) and Sodium hexametaphosphate (Ha-HMP) at five different water hardness (0 , 20, 40, 80, 160 ppm of calcium and 20 of magnesium) , then stored at temperatures of 70 and 100 F. Evaluations were made at sixty-day i intervals for six months. Firmness and color degradation decreased significantly when water hardness or storage time increased. Under storage at 100 F and 0 hardness of water, the decrease of color and firmness was constantly accelerated.

The experiment involved 60 sheep on 12 one-acre plots of drought affected Gamenya wheat.
