Re-Evaluating The Safety Of Erythritol: A Critical Review Of Emerging Evidence, Kaitlyn B. Kirchner

Erythritol, a commonly used non-nutritive sweetener, has gained popularity as a sugar alternative due to its low caloric value and minimal effect on blood glucose levels; however, emerging research has raised questions about its overall safety. This literature review critically evaluates current peer-reviewed evidence on the effects of erythritol on the cardiovascular and gastrointestinal systems. Findings indicate that erythritol is generally well tolerated in the gastrointestinal tract, with fewer adverse effects than other sugar alcohols due to its rapid absorption and limited fermentation, although symptoms may be dose-dependent and influenced by co-ingestion with other carbohydrates. The SUN Bucks program is an optional program through the United States Department of Agriculture that works in conjunction with the state of Pennsylvania in order to provide school-aged children families with supplemental funds to supply greater nutrition during the summer months. Low Energy Availability (LEA) can occur when an athlete’s energy intake is insufficient to meet the physiological demands of training as well as normal physiological functions. Female soccer players may be at an increased risk of developing LEA due to the high exercise energy expenditure paired with decreased energy intake. The purpose of this study is to assess the prevalence of LEA among Division III female soccer players. Inflammatory Bowel Disease (IBD) may increase the risk of malnutrition because of nausea, vomiting, diarrhea and restrictive eating. In addition, patients with IBD may experience food and nutrition insecurity. Therefore, we conducted an online survey to assess risk of malnutrition and food and nutrition insecurity among adult patients with IBD in outpatient and community settings. Patients were recruited between July and December 2025, aiming to reach adults in the Rocky Mountain Region diagnosed with IBD. Data collected included demographics, health-related factors, risk of nutrition insecurity, risk of food insecurity, and barriers and facilitators to dietary management of IBD.

How food is produced can influence both its nutritional quality and its impact on the environment. In recent years, regenerative (agroecological) farming practices have gained attention for their potential to improve soil health, biodiversity, and the nutritional value of foods. In dairy production, these practices often involve growing more diverse forage crops, reducing soil disturbance, and relying less on monoculture-grown feed rations. Probiotics are often taken to support gut health, but many beneficial bacteria do not survive transport through the digestive system to produce any effect. Acid whey has gained significant attention within the dairy industry due to its complex matrix and the processing challenges. This by-product contains lactose that can be isolated, hydrolyzed, and further processed to produce hydrolyzed syrup. To optimize lactose utilization, it is essential to fine-tune the kinetics of the β-galactosidase enzymes used for lactose hydrolysis. To analyze sugars in acid whey, and LC-MS-based chromatographic method was developed. Once the method was developed, the kinetics of β-galactosidase were optimized with respect to enzyme concentration, pH, and temperature. After harvesting the animal, pork muscle continues to undergo changes as it turns from muscle into meat. During this early period, the muscle uses up energy and produces acid, which lowers pH and can affect important quality traits such as color and how well the meat holds water. A key driver of these early changes is calcium, a natural mineral inside muscle cells that helps control contraction and energy use. Cheese ripening is a complex process that shapes the flavor, texture, and overall quality of cheese, yet many of the factors that control how these changes occur are still not fully understood. One factor that may play an important role is redox potential, which describes the balance between oxidation and reduction reactions happening inside the cheese. These reactions can influence both the activity of bacteria and the chemical processes that create flavor. However, meeting these elevated protein goals sustainably requires diversifying beyond standard sources like whey protein isolate. 3D printing offers an opportunity to present a variety of protein sources in a palatable, customized, and consumer-acceptable format. Type 2 diabetes mellitus (T2D) is one of the leading causes of morbidity and mortality in the United States, with approximately 25% of healthcare expenditures directed toward its management and associated metabolic complications. In response to the urgent need for novel therapeutic strategies, recent research has focused on bioactive compounds derived from dietary sources. Childhood and adolescent obesity remain a significant public health issue worldwide. This review summarizes research on the relationship among obesity, physical activity, and diet. This study aims to investigate the relationship between children's and adolescents' obesity, their physical activity levels, and diet. A scoping review was conducted by assessing 81 research journal articles from 2014 to 2023 from electronic databases such as Google Scholar and PubMed. The Makan Bergizi Gratis (MBG) program represents Indonesia's strategic effort to strengthen human capital by addressing malnutrition among school-aged. However, evidence suggests that school feeding alone is insufficient without structured nutrition education to promote sustained behavioral change. The present study examines opportunities and feasibility for embedding nutrition education within MBG implementation. Two-stage design was performed, including curriculum content reviews and qualitative case study design. A systematic curriculum content analysis was conducted across the school-based curriculum (KTSP) (2006), K-13 curriculum (2013 – 2017), and the Merdeka curriculum (2022 - present), using predefined nutrition competencies and behavioral domains as analytical frameworks. Attention-deficit/hyperactivity disorder (ADHD) and ADHD-like symptoms, such as difficulty concentrating, mental fatigue, and problems with executive functioning, are increasingly recognized in adults. Although medication is commonly used to manage ADHD, there is growing interest in whether nutrition may also play a role in supporting brain function and attention. Several nutrients involved in brain health including omega-3 fatty acids, vitamin B12, magnesium, iron, and choline  have been suggested as potential contributors to cognitive performance and attention. However, the research examining the connection between diet and ADHD symptoms is still limited and sometimes shows mixed results.

This systematic literature review addresses the research question: How does culture affect eating disorders? It examines the role of ethnicity and culture in shaping the prevalence, symptom presentation, and treatment of eating disorders across diverse populations. Although eating disorders have traditionally been studied in Western, predominantly White populations, growing evidence suggests that cultural norms, ethnic identity, globalization, and exposure to Western ideals significantly influence both the development and expression of disordered eating behaviors.
