Early introduction of cow's-milk-based infant formulas, in particular the ABBOS epitope of bovine serum albumin (BSA), has been implicated as an autoimmune trigger in the pathogenesis of insulin dependent diabetes mellitus (IDDM). A direct enzyme-linked immunosorbant assay (ELISA), using polyclonal anti-BSA antibodies, was developed to determine the BSA content of cow's milk and 15 infant formulas. Powdered high-whey (60%) formulas averaged 41 mg BSA/100 ml; 2% milk contained 52 mg BSA/100 ml; and the high-casein formulas averaged 13 mg/100 ml. Common methods for determining mineral absorption by the body are invasive and frequently utilize radioisotopes. In experiment one. rats were given a dose of radiolabeled ferrous sulfate. Relative absorption was estimated by changes in serum iron and by appearance of the radiotracer in the serum. There were no differences in relative absorption determined by the methods, although the low overall absorptions by the iron-replete rats may have decreased the sensitivity.

In experiments two and three. iron and magnesium supplements were given orally to 12 women age 19-25. Each subject received iron and magnesium supplements once each week for 5 weeks. …

With aging, there is a putative loss of taste and smell that may lead to decreased food enjoyment. We determined the relationships among age, detection, and recognition thresholds for taste and smell, and preference for flavored milk.

Ninety young (20-40 years) and 90 elderly (over 64 years) subjects evaluated chocolate mint-, lemon-, or strawberry-flavored milk. Detection and recognition thresholds were determined for sucrose and for the assigned flavor in milk systems. Sucrose was dissolved in milk, and flavors were dispersed in milk with flavor identification. Preference was determined using a 9-point hedonic scale to evaluate all combinations of five sucrose …

The fact that people are living longer has heightened awareness of the elderly and many of their special needs. Due to this trend, experts have begun to more closely investigate caloric and nutrient needs of the elderly as well as factors that may alter dietary intake. Forty-two older persons in Lincoln County, West Virginia agreed to participate in research designed to explore the relationship between dietary intake and food availability among rural, community-based elderly. Participants completed a 38 item telephone questionnaire which provided information on demographics, grocery shopping habits, and dietary intakes. Purple membrane (PM, λ" role="presentation">λmax" role="presentation">max 570 nm) of H. halobium on treatment with sulphuric acid changes its colour to blue (λ" role="presentation">λmax" role="presentation">max 608 nm). The purple chromophore can be regenerated from the blue chromophore by exogeneous addition of anions such as CI−" role="presentation">− and HPO42−" role="presentation">2−4. Chloride ion is found to be more effective than the dibasic phosphate ion in regenerating the purple chromophore. A new innovative product, stewsticks, made with beef, pork, spices, and dehydrated vegetables, was developed as a nutritious snack. Lactic or citric acid was added at pH 5.2 or 4.6 to both meatsticks and stewsticks. Meatsticks and stewsticks were prepared by mixing ingredients until a cohesive mass was obtained. This mixture was then extruded into sticks that were cooked to about 50% of original weight. Sticks were then cut to desired length, packaged, and stored. Then meatsticks (beef, pork, and spices) were compared to stewsticks for appearance, texture, flavor, and overall acceptability.

Sterile ceramic plates and the surface of beef steaks were inoculated with the pathogenic microorganisms Listeria monocytogenes, Campylobacter jejuni, Escherichia coli and Salmonella typhimurium. Samples were also inoculated with nonpathogenic microorganisms Clostridium sporogenes ATCC 7955, Pseudomonas aeruginosa, and Bacillus stearothermophilus. Concentrations of organisms in the pure culture used to inoculate the samples were selected within the range of 106 to 108 colony forming units/ml (CFU/ml). Samples were treated with ultra-high temperature (UHT), and· the surviving organisms were recovered and counted. Meat samples were exposed to 1100°C for 22 seconds.

This study investigated the manufacturing procedures and texture attributes of direct acid set of an unripened, shelf-stable cheese variety produced by the combined technologies of ultrafiltration and ultra-high temperature processing. Product evaluation included physical and chemical properties such as gel strength, syneresis, pH, moisture, protein, and fat. Whole milk was concentrated by ultrafiltration to 30, 35, and 40% total solids. Preliminary studies were undertaken to investigate whether or not added iron (0, 35, 880 ppm of iron as ferrous fumarate) and fat type (corn oil, beef tallow, or menhaden oil) influenced the oxidation of the rat diet during storage. Iron level affected thiobarbituric acid (TBA) values only in the menhaden oil diets. Storage for 4 d did not affect TBA values of the diets. Neither food intake nor body weight of the rats was affected by the different diets, suggesting all diets were equally acceptable to rats.

Dietary habits are believed to be major determinants of risk of coronary heart disease (CHD). Studies of high and low risk populations have suggested several nutrients to be protective or hazardous against CHD. Most published work since 1984 on diet and CHD in the Adventist Health Study (AHS) population examined either foods or food groups. This study investigated ten nutrients as exposure variables and their relationship to CHD risk. A cohort of 23,616 nonsmoking, non-Hispanic white California Seventh-day Adventists was followed for six years beginning in 1976. People originating from the Indian sub-continent (South Asians) make up the largest ethnic minority group in Britain and suffer from higher rates of coronary heart disease (CIII)) and noninsulin- dependent diabetes mellitus (NIDDM) than the general population. The "classic" risk factors (other than diabetes and insulin resistance) do not explain these elevated rates. Oral creatine monohydrate supplementation has been suggested to be an effective nutritional supplement to increase body mass. Sixteen male college baseball players, participating in an off-season, high-intensity strength training program, underwent body composition tests via hydrostatic weighing, skinfolds, and bioelectrical impedance analysis once-a-week for a total of 5 weeks (Trials). Subclinical vitamin A deficiency was assessed in 65 Hispanic children attending four migrant Head Start programs in Utah. Subjects aged 2 to 6 years (median 3 years 10 months) were examined for evidence of vitamin A deficiency by conjunctival impression cytology. Biochemical indices for serum vitamin A, retinol-binding protein, zinc, and iron were performed.

Of eight children (12.5%) with subclinical vitamin A deficiency, one child had a marginal serum vitamin A of 11 μg/dl. Retinol-binding protein concentrations were significantly lower in two subjects with abnormal conjunctival impression cytology. Serum zinc, which when low can mimic signs of ocular vitamin …

Mozzarella cheese was made from milk fortified with iron so that the cheese contained 25 and 50 ppm iron. Iron was added to the milk in three ways: (1) complexed to casein (ferric-casein), (2) complexed to whey protein (ferric-whey protein), and (3) ferric chloride (FeCl3·6H20) added directly to milk. Cheese quality was determined by chemical, physical, and sensory characteristics and compared with a control cheese.

Most of the Cd applied through phosphatic fertilizers in sandy soils tends to stay in mobile forms (soluble or exchangeable) and hence the risk of it leaching to underground water or its uptake by plants is higher. A sequential extraction procedure was used to assess the efficacy of amending materials (soils containing inorganic or organic adsorption components) on the re-distribution of forms of Cd in a sandy soil. A glasshouse experiment "was conducted to investigate gypsum application and leaching on the amelioration of" an aluminium (Al) toxic subsoil for wheat growth. Treatments included different rates of gypsum application and amount of leaching prior to wheat being grown. Wheat shoot growth increased when gypsum was applied in both the presence and absence of leaching, but growth was higher with leaching. Gypsum application led to a decrease in toxic Al as a result of a higher ionic strength and activity of AlSO4+ion pairs in the soil solution, and increased Al leached from the soil. Our ability to predict toxic quantities of aluminium (Al) in acidic soils is limited by our understanding of the interactions between different solid forms of Al in solution and our lack of knowledge of which form control soluble Al. This review briefly considers each type of solid form of Al, particularly from a kinetic point of view and discusses models that have been developed to predict release of Al from individual forms. More comprehensive models (i.e. more than one source or sink of Al) are then discussed as well as the interactions between different solid sources of Al.

This study investigates the assumption that dietary restriction leads to the development of binge eating in culimia nervosa (BN). Bulimic women reporting an onset of binge eating prior to dieting (n=20) were compared to women reporting an onset of dieting prior to binge eating, using similar age subjects. Results suggest that onset of binge eating prior to dieting in BN is associated with earlier onset of binge eating, higher BMI, and improved response to cognitive-behavioral treatments at 6 month follow-up. The hypothesis that antioxidant vitamins (ascorbate and tocopherols) along with urate protect blood plasma lipids from oxidation was tested. Dietary fat is also an important factor influencing plasma lipid peroxidation. The purpose of this study was to investigate the role of plasma antioxidants and dietary fat on low density lipoprotein (LDL) and plasma lipid oxidation. Few studies have examined the risk factors associated with reduced bone mass in Asians, but none specifically investigated Singaporean Chinese women. The subjects in this study were 16 premenopausal, 8 perimenopausal and 13 postmenopausal women who participated in a larger study which began in 1986. Bone density was measured in 1986 and 1992. Dietary and lifestyle data were collected for this study by personal interview. Association between dietary and lifestyle factors and bone density variables and change in bone density at the end of the 6 year period were assessed by univariate regression analyses.

Numerous scientific bodies have made the recommendation to increase consumption of whole-grain breads and cereals. This study used a telephone survey to assess the availability of whole-grain foods in a random selection of 109 military installations and 30 military hospitals. Surveyed installations represent over 70% of the active duty military population assigned in the continental United States.

Military food service specialists were asked questions regarding the availability of the following whole-grain products: bread, rolls, buns, flour, pancake mix, brown rice, and ready-to-eat cereals (RTE). Birth records show that San Bernardino County has the highest black infant mortality rate of the 16 counties in California with the largest proportion of African-Americans births. Although total infant deaths in San Bernardino County had fallen to 8.6 per 1,000 live births by 1992, the infant mortality rate among the black population of the county was close to two times higher at 16.8 per 1,000. This is the first study to address the high infant mortality rate among blacks in San Bernardino County. Factors which may affect the black infant mortality rate were examined.

This study used the 1987-88 USDA Nationwide Food Consumption Survey to investigate the contribution meat products make to intakes of nutrients at risk of inadequate or excessive consumption by women. The study is unique in that meat nutrients were extracted from mixed dishes, providing a more accurate picture of consumption. Cluster analysis was used to classify nonpregnant, nonlactating women 19 years and older based on their consumption patterns of total meat and individual meats (beef, poultry, processed meats, pork and seafoods) as percent of caloric intake.

Reverse osmosis (RO) and ultrafiltration (UF) retentates were ultra-high temperature (UHT) processed and compared for storage life at room temperature. Viscosity studies indicated that UHT-treated, RO retentate delayed age gelation longer than UF retentate at the same total solids level (26% TS). When compared at 6.4% protein level (2x RO vs 2.7x UF where x=ratio of the feed volume to concentrate volume), the storage life for both RO and UF retentates was about 6 to 8 months.

Pantothenate-p-nitroanilide has been synthesized for use as a substrate in a continuous spectrophotometric assay of pantetheinase activity monitoring absorbance at 410 nm. Pantothenate-p-nitroanilide is a crystalline compound with a molecular weight of 338.0 and a melting point of 146-149°C. Use of this substrate in the described assay is suitable for enzyme activity determination in high protein content media such as blood serum. Serum pantetheinase activity was determined for rats of varying pantothenate nutriture. Rats with mildly (but significantly, p < 0.05) lower serum pantothenate levels had significantly higher serum pantetheinase activities than the control group (6.24 nmol/min/ml ± 0.72 and 16. 16 nmol/min/ml ± 4. 14, respectively, p=0.0005).

Various concentrations of ferrous and ferric iron solutions were held at room temperature for 60 min before they were assayed for ferrous iron, which may be unstable due to oxidation. The ferrous and ferric solutions (in pH 2 HCl) were maintained as such for 60 min without the use of chelators. There was no significant oxidation of ferrous iron.
