It is well established that l,25(OH)2D3 is a major regulator of calcium homeostasis. The steroid exerts its effects on its target organs by two mechanisms, a slow mechanism mediated by nuclear vitamin D receptors (nVDR), and a rapid mechanism mediated by the l,25(OH)2D3 membrane-associated rapid response steroid binding protein (l,25D3-MARRS bp). X-ray diffraction technique is one of the best methods to study polymorphism of fats systems. The only information authors usually report is the interplanar distances calculated from the angles at which diffraction lines appear; these clearly determine the polymorphic form. However, in many other fields using crystallography, X-ray patterns are also used to determine crystal size from the broadening of the diffraction line at half the line of maximum intensity. The article discusses the moral aspects of vegetarianism. This will make vegetarians more compassionate and caring for animals and will result in better health and less finances. The virtue theory or the vegetarian justifying principle connotes that one should not support even symbolically bad practices to animals when good alternatives are readily available. Becoming a vegetarian is a way of attesting to the depth and sincerity of one's belief in the wrongness of how we treat animals and its consequence to humans. Comparison Of Hydrostatic Weighing And Plethysmography Techniques For The Development Of Skinfold Prediction Equations For Children, Tomoko Tozuka

Regression equations between skinfold (SKF) measurements and air displacement plethysmography (ADP) were determined 6 to 18 year old athletes (80 males / 34 females) using Pearson r correlation coefficients. Triceps and mid-calf SKF and percent body fat (%BF) by ADP were measured during an Athletic Ability Assessment at The HIT Center (Huntington, WV). A high relationship was found between SKF and %BF by ADP (males; r2 = .76, females; r2 = .74, all; r2 = .77). Data from the subjects were compared with similar correlations determined between SKF and %BF by hydrostatic weighing (HW) from another study …

Alice white wheat is a new cultivar of white wheat that has many desirable attributes for the baking industry. Its main appeal is the reduction in bittering compounds and pigments. White wheat is in demand in the booming Asian noodle market. The purpose of this study was to analyze rheological properties of white wheat flours using the Mixolab, a state of the art dough rheology instrument. Additional objectives included sensory testing of various reduced-sugar bread formulations and the determination of physico-chemical properties of flours and of bread made with them. Despite the steady improvement in the health status of Americans, Hispanics are a minority in the United States with greater prevalence of several infectious and chronic diseases and less health knowledge than the average citizen. Nearly half of the Hispanics living in this country die of preventable nutrition-related conditions, with heart disease and cancer being the leading causes. A cross-sectional study on fasting serum and 24-hour urine samples were used to determine whether biochemical markers of bone turnover, resorption and formation, differed in a group of 50 healthy premenopausal Caucasian women eating vegan, lactoovovegetarian(LOV) and omnivorous diets.
The women, ages 20-42, had participated in a study of bone mineral density(BMD). The three groups were comparable in mean age, BMI, calorie intake, calories spent in exercise, kcal/kg body weight, protein/day, protein/kg body weight and urinary creatinine.
Biomarkers included those of bone resorption—pyridinoline, deoxypyridinoline, and N-telopeptides, and of bone turnover—serum and urinary osteocalcin(OC), skeletal alkaline phosphatase, and propeptide-type-I-carboxyterminal-procollagen(PICP). In all …

Inasmuch as virtually all studies on mortality and reproduction in insects are conducted under conditions in which food availability is constant, little is known about the demographic response of insects to variable food environments. For example, it is not known if and to what extent the life expectancy of insects subjected to shortages of high-quality food will increase and/or whether this increase is associated with major decreases in lifetime reproduction.

Low-moisture part-skim Mozzarella cheeses were manufactured from 2% fat milk and aged for 21 d. Treatments included cheeses made with one of three different strains of Lactobacillus delbrueckii ssp. bulgaricus in combination with a single strain of Streptococcus thermophilus. A fourth, control treatment consisted of cheeses made with only S. thermophilus. Although total proteolytic ability of these strains, as indicated by the o-phthaldialdehyde analysis, was similar in each of the three strains of L. bulgaricus, these strains exhibited different proteolytic specificities toward the peptide, αs1-CN (f 1-23). Background: The frequent consumption of nuts is inversely associated with the incidence of cardiovascular disease. Nuts are known to decrease the risk of cardiovascular disease by reducing serum total and low-density lipoprotein (LDL) cholesterol. Markers of inflammation including C-reactive protein, E-selectin and interleukin-6 have been proposed to be newer risk factors for cardiovascular disease. However, the influence of nuts such as almonds on markers of inflammation and hemostasis that influence cardiovascular disease risk is not currently known.

The effect of cooling rate (slow: 0.1°C/min; fast: 5.5°C/min) on the crystallization kinetics of blends of a highmelting milk fat fraction and sunflower oil (SFO) was investigated by pulsed NMR and DSC. For slow cooling rate, the majority of crystallization had already occurred by the time the set crystallization temperature had been reached. For fast cooling rate, crystallization started after the samples reached the selected crystallization temperature, and the solid fat content curves were hyperbolic. DSC scans showed that at slow cooling rates, molecular organization took place as the sample was being cooled to crystallization temperature and there was fractionation …

This study investigated the incidence of disordered eating and its relationship with acculturation, depression, and body dissatisfaction among Hispanic adolescent females. One hundred and five students enrolled at two midwestem high schools completed a Student Demographic Questionnaire, the Bidimensional Acculturation Scale for Hispanics (Marin & Gamba, 1996), the Beck Depression Inventory (Beck, Steer, & Brown, 1996), the Body Dissatisfaction Subscale of the Eating Disorder Inventory (Gamer, Olmstead, & Polivy, 1983), and the Eating Attitudes Test (Gamer, Olmstead, Bohr, & Garfinkel, 1982). The effect of cooling rate on the crystallization behavior of mixes of high-melting milk fat fraction (HMF) and sunflower oil (SFO) was studied by following nucleation with laser-polarized turbidimetry. The initial crystals were photographed, and their thermal and polymorphic behaviors, as well as chemical composition, were investigated by calorimetry, X-ray diffraction, and capillary gas chromatography. Activation energies of nucleation were calculated using the Fisher−Turnbull equation. Despite small differences in Mettler dropping points for different ratios of SFO to HMF, induction times were significantly different between samples and were shorter at a slow cooling rate for the same supercooling. The formation of composite films of double-stranded DNA and cationic lipid molecules (octadecylamine, ODA) and the hybridization of complementary single-stranded DNA molecules in such composite films are demonstrated. The immobilization of DNA is accomplished by simple immersion of a thermally evaporated ODA film in the DNA solution at close to physiological pH. The entrapment of the DNA molecules in the cationic lipid film is dominated by attractive electrostatic interaction between the negatively charged phosphate backbone of the DNA molecules and the protonated amine molecules in the thermally evaporated film and has been quantified using quartz crystal microgravimetry (QCM). This study investigated milk consumption in an elementary school and whether it could be affected by milk temperature and/or nutrition education. This study was of interest because of the increasing amount of nutritionally related diseases, and the effect that calcium intake could have in diminishing some of those diseases. It was also of interest because the younger generation is drinking less milk and more soda, therefore setting themselves up for nutritionally related diseases later in life.

The survey investigated factors that influenced high school student participation in the National School Lunch Program. The National School Lunch program provides nutritionally balanced meals based on the Dietary Guidelines for Americans, the Recommended Dietary Allowances, and the Food Guide Pyramid. This nutrition program contributes significantly to the nutrient needs of adolescents, however, participation rates are low and students do not receive the health benefits associated with this nutrition program when they do not participate.

The purpose of this study was to determine if health locus of control (LOC) is a reliable indicator of weight Joss maintenance. It was hypothesized that a high internal locus of control (ILOC) is a reliable indicator for weight loss maintenance in individuals, while external locus of control (ELOC) contributes to weight re-gain after weight loss.

This paper discusses the maternal and neonatal risk factors associated with multiple birth pregnancies. Nutrition implications associated with nutritional care of the high-risk infant and obstetric population are emphasized. Statistical information was gathered concerning the population growth of multiple births over the past twenty years. Literature to identify both maternal and neonatal risk factors associated with multiple gestation pregnancies was also reviewed. Studies conducted over the past twenty years have shown that there has been an increase (25%-50%) in the amount of twin births throughout the world. Androgen receptor (AR) gene CAG polymorphisms may be associated with body shape, and are associated with certain breast and prostate cancers. Lactococcus is an economically important group in lactic acid bacteria (LAB) that are often used in the dairy industry as starters for cheese production. Good starter strains should possess the ability to grow, ferment milk sugar, and produce desirable flavor compounds during cheese making. Therefore, it is essential to understand the physiology of these starters during cheese processing in order to obtain high-quality cheese products.
