The objective of this research was to systematically study the effect of processing conditions on the crystallization behavior and destabilization mechanisms of oil-in-water emulsions. The effect of crystallization temperature (T c) and homogenization conditions on both thermal behavior and destabilization mechanisms were analyzed. Results show that the crystallization of lipids present in the emulsions was inhibited when compared with bulk lipids as evidenced by a lower onset and peak temperature (T on and Tp, respectively) in differential scanning calorimetry crystallization exotherms. The smaller the droplet size in the emulsion, the more significant the inhibition (lower T on and T p). …

America's current food labeling scheme, as illustrated by the example of salt, is flawed when examined from the consumer and public health perspective. While the Food, Drug, and Cosmetic Act has sound scientific standards, those standards as currently applied to labels do not efficiently signal health information to consumers. Without better information on labels, consumers will continue to make poor choices at the grocery store. However, there are promising new ways to label. BACKGROUND: Epidemiological studies suggest that physical activity reduces the risk of colon cancer in humans. Results from animal studies, however, are inconclusive. The present study investigated the effects of voluntary exercise on intestinal tumor formation in two different animal models, Apc(Min/+) mice and azoxymethane (AOM)/dextran sulfate sodium (DSS)-treated mice. Additionally, the focus of accreditation for dietetics education is the quality and integrity of a program regardless of its instructional delivery method. Background: The present study examined the acute effects of a nutritional supplement intended to improve adenosine triphosphate (ATP) concentrations on vertical jump height, isometric strength of the leg extensors, leg extension endurance, and forearm flexion endurance.
Methods: Twenty-four healthy men (mean age ± SD = 23 ± 4 yrs, stature = 181 ± 7 cm, and body mass = 82 ± 12 kg) volunteered to complete a familiarization trial plus 2 randomly-ordered experimental trials separated by a 7-day washout period. Participants received either 6 (body mass < 91 kg) or 8 (body mass ≥ 91 kg) tablets of the treatment (TR; 625 mg of adenylpyrophosphoric acid and calcium pyruvate, 350.8 mg of cordyceps sinensis extract and yohimbine hydrochloride) or placebo (PL; 980 mg of microcrystalline cellulose) 1 hour prior to the following tests: countermovement vertical jump (CVJ), forearm flexion repetitions to exhaustion, isometric maximal voluntary contractions (MVCs) of the leg extensors, and a 50-repetition maximal concentric isokinetic leg extension endurance test.

Background: Ageing is associated with a significant reduction in skeletal muscle carnosine which has been linked with a reduction in the buffering capacity of muscle and in theory, may increase the rate of fatigue during exercise. Supplementing beta-alanine has been shown to significantly increase skeletal muscle carnosine. The purpose of this study, therefore, was to examine the effects of ninety days of beta-alanine supplementation on the physical working capacity at the fatigue threshold (PWCFT) in elderly men and women.

MyPyramid was used to evaluate the nutritional status of twelve lean and fourteen non-lean high school female athletes. Lean athletes are those who participate in sports where weight control is considered important for performance. Weights of athletes participating in non-lean sports are less likely to influence performance. In this study, all the lean sport athletes participated in track, and the non-lean athletes competed in softball. Subjects included twenty-five middle-class Caucasians and one Hispanic from two northern New Jersey high schools. All subjects and their parents gave their consent to participate. Nixtamalization is the process of steeping dried corn in hot water with calcium hydroxide (lime) with subsequent removal of all or most of the pericarp through washing. The resulting product is called nixtamal. Approximately 60% of corn tortillas in Mexico are produced from nixtamal, with the remainder prepared from nixtamalized corn flour. Nixtamal was fortified with micronutrient premix containing iron, zinc, folic acid, niacin, riboflavin, and thiamin. Premix composition followed a proposed Mexican regulation for corn flour fortification, adjusted for moisture. Color Me Healthy (CMH) is an interactive nutrition program designed for preschool aged children in child care settings. The current study examined if CMH increases the consumption of fruit and vegetables. Child care centers were randomly assigned to one of two conditions; children (n=165) in ten centers received CMH and children (n=98) in seven centers acted as controls. Consumption of fruit and vegetable snacks was assessed at baseline, one week post-intervention and 3 months post-intervention. Hierarchical linear modeling determined that group assignment was the only significant predictor of fruit and vegetable consumption. Children who were exposed to the CMH program …

Background—Stearoyl-CoA Desaturase 1 (SCD1) is a well-known enhancer of the metabolic syndrome. The purpose of the present study was to investigate the role of SCD1 in lipoprotein metabolism and atherosclerosis progression.
Methods and Results—Antisense oligonucleotides were used to inhibit SCD1 in a mouse model of hyperlipidemia and atherosclerosis (LDLr-/-Apob100/100). In agreement with previous reports, inhibition of SCD1 protected against diet-induced obesity, insulin resistance, and hepatic steatosis. However, unexpectedly SCD1 inhibition strongly promoted aortic atherosclerosis, which could not be reversed by dietary oleate. Background: Total body water (TBW) estimations have been used to estimate body composition, particularly fat-free mass, to aid in nutritional interventions, and to monitor hydration status. In the past, bioimpedance spectroscopy (BIS) devices have been used to estimate TBW. Previous investigations have examined the validity of the XiTRON 4000B (XiTRON Technologies) BIS device for estimating TBW. Recently, a new BIS device (Imp™ SFB7) has become available, claiming greater precision when estimating TBW. The purpose of this study was to determine if residents (n = 26) living in an Iowa long-term care facility had differences in food intake at their noon meal and body weight when served traditional tray meal service for 10 weeks compared to being served restaurant-style meal service for 10 weeks. The study also evaluated the facility’s raw food costs of the two meal service styles.
Mean meal intake scale scores improved when residents were served restaurant-style meal service (0.4±0.3) compared to traditional tray meal service. Residents did not show a significant percent weight (1.1%±3.7%) change or percent BMI (0.9%±3.7%) …

The purpose of the study was to establish whether nutrition education would increase high school student consumption of fruits and vegetables, increase knowledge and self-efficacy, and advance students through the stages of change. Additionally, factors that influence intake were studied.
Students (n=260) enrolled in Health and Nutrition & Wellness classes were randomly assigned to intervention or control by class. Intervention consisted of 1 ½ hours for five days of fruit and vegetable focused education. Students completed pre- and post-surveys.
Results showed that fruit and vegetable intake did not change in intervention classes but significantly decreased (p<0.0484) in control classes. Knowledge significantly increased (p<0.0151) in intervention classes. No changes in self-efficacy or stage of change were observed.

Background: Obesity is an epidemic and studies are needed to provide recommendations for more effective strategies to increase self-efficacy and long-term adoption of healthy nutritional habits in individuals who are obese.
Objective: To compare the use of personalized low-fat meal plans vs. non-personalized low-fat meal plans and body fat reduction in overweight and obese subjects 25 to 45 years of age.
Design: A 2-month comparative randomized block experimental study, in which subjects were randomly assigned to either Treatment 1 Group, receiving non-personalized low-fat meal plans, or Treatment 2 Group, receiving personalized low-fat meal plans with two 30-minute dietetic consultations.

Purpose: To compare selected food /nutrient consumption between families that educate their children at home with those that educate their children in the public school system.
Methods: The study sample included 112 children aged 7-11 years in Fayette Co Kentucky. The children were divided into groups according type of education. There were 65 home-schooled children and 47 children who attend public school. Subjects recorded their dietary intake for one week. The data were analyzed using Nutrition Data Software for Research (2006). Comparisons were made for the intake of selected nutrients using two tailed independent sample t-tests.

The National Electric Coil Company/Cooper Industries, Inc. plant in Harlan County, Kentucky was a mining support operation primarily engaged in the cleaning and repair of mining equipment from 1951 to 1987. Trichloroethylene (TCE) and degradation byproducts, polychlorinated biphenyls (PCBs), and vinyl chloride were released into the areas surrounding the plant periodically for decades. Routine water sampling of area wells by the Kentucky Department of Environmental Protection Division of Water revealed significant levels of TCE, PCBs, and vinyl chloride. The toxicology of these chemicals implicates various systems, including cardiovascular, dermal, endocrine, and neurological.

Literature shows that nutritional deficiency and feeding behaviors in neurodevelopmentally disabled children is secondary to an underdeveloped gastrointestinal tract. Fifty (50) parents with children with autism responded to a Nutritional Perception Assessment that they believe their children are at adequate nutritional status. They reported confidence in their nutritional knowledge, yet admitted to concern about the nutritional status of their children. The survey revealed that parents are not seeing a registered dietitian for their nutritional advice, leading to the question of soundness in nutritional information received. Background: Exercise and high-protein/reduced-carbohydrate and -fat diets have each been shown separately, or in combination with an energy-restricted diet to improve body composition and health in sedentary, overweight (BMI > 25) adults. The current study, instead, examined the physiological response to 10 weeks of combined aerobic and resistance exercise (EX) versus exercise + minimal nutrition intervention designed to alter the macronutrient profile, in the absence of energy restriction, using a commercially available high-protein/low-carbohydrate and low-fat, nutrient-dense food supplement (EXFS); versus control (CON).

The functional beverage Celsius®, has recently been shown, after acute and chronic (28 days) consumption, to increase resting metabolism and serum blood markers of lipolysis in healthy, college-aged men and women. The purpose of this study was to examine the combined effects of a 10-week exercise program while consuming Celsius® on body composition and cardiorespiratory fitness changes in sedentary men and women.

Demographic, socio-economic, attitudinal, dietary, health behavioural and anthropometric data were collected from 221 “disadvantaged” and 74 “advantaged” women aged 18-35 years across Dublin, according to the provisions of a novel socio-economic sampling frame. Internal and external validation techniques established the dietary assessment method of choice and identified “valid” dietary reporters (n=216, 153 disadvantaged, 63 advantaged) among this sample. Five qualitative focus groups (n=5-8 per group) were also conducted among disadvantaged women to examine their diet and health behaviour choices. Previous studies of recombinant full-length human apolipoprotein A-V (apoA-V) provided evidence of the presence of two independently folded structural domains. Computer-assisted sequence analysis and limited proteolysis studies identified an N-terminal fragment as a candidate for one of the domains. C-Terminal truncation variants in this size range, apoA-V(1-146) and apoA-V(1-169), were expressed in Escherichia coli and isolated. Unlike full-length apoA-V or apoA-V(1-169), apoA-V(1-146) was soluble in neutral-pH buffer in the absence of lipid. Sedimentation equilibrium analysis yielded a weight-average molecular weight of 18811, indicating apoA-V(1-146) exists as a monomer in solution. Quantitating fat and lean tissue in isolated body regions may be helpful or required in obesity and health-outcomes research. However, current methods of regional body composition measurement require specialized, expensive equipment such as that used in computed tomography or dual energy x-ray absorptiometry (DEXA). Simple body size or circumference measurement relationships to body composition have been developed but are limited to whole-body applications. We investigated relationships between body size measurements and regional body composition.
